Anna bakes up the perfect tasty cookies and cream ice cream cake for birthdays. Click SHOW MORE for recipe ingredients and baking instructions.
Makes 1 (9-inch) ice cream cake that will serve 12 people.
INGREDIENTS for Cookies
1 cup (225 g) unsalted butter, at room temperature
1 cup (260 g) icing sugar, sifted
6 large egg yolks
2 cups (260 g) cake and pastry flour
½ cup (60 g) Dutch process cocoa powder
¼ cup (30 g) cornstarch
½ tsp (2.5 g) salt
1 lb(s) 4 oz (600 g) white fondant icing
Ingredients for Ice Cream
2 cups (500 mL) whipping cream
1 cup (250 mL) 2% milk
¾ cup (150 g) granulated sugar
1 pinch salt
Baking directions for cookies
1. For the cookies, beat the butter and icing sugar until smooth, then add the egg yolks all at once and beat until well combined. In a separate bowl, sift the flour, cocoa powder, cornstarch and salt. Add this to the butter mixture and stir until evenly combined. Shape the dough into a log about 2 inches in diameter, wrap and chill until ready to use.
2. Preheat the oven to 325 ºF (160 ºC) and line 4 baking trays with parchment paper.
3. On a lightly floured work surface, knead the first dough disc to soften it (so it won’t crack when rolling) divide it in half, and roll out to a circle just over 9-inches (23 cm) across and just under ¼-inch (6 mm) thick. Use the edge of a 9-inch fluted tart tin as a giant cookie cutter and press into the dough to cut it (or you can use a 9-inch/23 cm round cake pan to press and then cut out a circle). Use the bottom portion of the tart tin to slip under the large cookie and slide it onto the baking tray. Set aside the scraps and repeat with the other half of this piece of dough and then the other chilled disc, so that you have a total of 4 large cookies. Roll out the remaining scraps and cut into 4 circles about 4 ½ -inches (11.5 cm) across and place them on the baking trays. Bake the cookies (in batches, if needed) for about 14 minutes, until the surface of the cookie is evenly matte. Let the cookies cool completely on the trays.
4. To assemble the cookies, lightly dust a work surface with icing sugar, divide the fondant in half and roll out the first piece into a circle over 9-inches (23 cm) across. Use the same fluted tart tin to cut a piece of fondant the same size as the cookie. Brush the top of the fondant with water and lift it and place it on the bottom-side of a cookie. Brush the exposed side of the fondant with water and carefully adhere the second cookie on it, so that you now have a giant sandwich cookie. Repeat with the second piece of fondant and lastly rolling the remaining scraps to cut and assemble 2 smaller cookies (these will be used for the cookies-&-cream ice cream.
5. Prepare a 9-inch (23 cm) springform tin by lining the bottom and sides with plastic wrap, so that the plastic comes up and over the sides of the pan.
Cooking directions for Ice Cream
1. For the ice cream, whisk the cream, milk, sugar and salt until the sugar has fully dissolved. Pour this into an ice cream maker following manufacturer’s instructions. When the ice cream is almost done mixing, break up the 2 smaller cookies into it and let it mix in so that some pieces of cookie are still visible but some crumbs have worked in. Spoon the soft ice cream into the prepared pan and spread to level it. Cover the ice cream with the overhanging plastic wrap and freeze for at least 3 hours to set.
2. To assemble the cake, remove the ice cream from the springform pan and unwrap. Place the ice cream on one of the large cookie sandwiches and place the second cookie on top. If you are not serving the cake immediately, wrap the whole cake and place it back in the freezer.
3. To serve the cake, pull it from the freezer about 20 minutes before serving. Remove it from the pan, peel away the plastic and place on a platter to serve.

Recipe Ingredients:
Raspberry Coulis
- 1 cup fresh or thawed from frozen raspberries
- 3 Tbsp sugar
Souffles
- 2 fresh apricots, pitted and chopped
- ¼ cup chopped dried apricots
- ¼ cup apricot jam
- 1 Tbsp finely grated orange zest
- 3 Tbsp fresh orange juice
- 1 tsp vanilla extract
- 2 Tbsp (1 oz) orange liqueur
- 1 recipe Basic Vanilla Pastry Cream, chilled
- 4 large egg whites, room temprature
- ⅓ cup sugar
Basic Vanilla Pastry Cream
- 1 cup 2% milk
- ½ vanilla bean
- 1 ½ tsp vanilla bean paste
- 3 large egg yolks
- 3 Tbsp sugar
- 2 Tbsp cornstarch
- 2 Tbsp unsalted butter, cut into pieces
Baking Directions:
Raspberry Coulis
1. For the raspberry coulis, puree the raspberries with the sugar, strain and chill until ready to serve.
Souffles
1. For the soufflés, preheat the oven to 400 F. Grease six 8-ounce soufflé dishes and sprinkle the insides with sugar, tapping out any excess. Place the dishes onto a baking tray.
Basic Vanilla Pastry Cream
1. 1. Heat the milk with the scraped seeds of the vanilla bean or the vanilla bean paste until just below a simmer.
2. 2. In a separate bowl, whisk the egg yolks, sugar and cornstarch. Ready a bowl with the butter, placing a strainer on top of it.
3. 3. Gradually whisk the hot milk into egg mixture and then return it all to the pot. Whisk this constantly (switching to a spatula now and again, to get into the corners) over medium heat until thickened and glossy, about 2 minutes. Pour this immediately through the strainer, whisking it through if needed, and stir in the butter. Place a piece of plastic wrap directly over the surface of the custard, cool to room temperature and then chill completely until ready to use.
4. The pastry cream will keep up to 4 days refrigerated.
5. Makes about 1 ½ cups.
Assembly
1. Combine the fresh apricots, dried apricots, jam, zest and orange juice in a small pot and simmer, stirring occasionally, until the apricots are tender. Puree until smooth and stir in the vanilla and orange liqueur. Whisk in the pastry cream and set aside.
2. Whip the egg whites on medium low speed and once foamy, increase the speed to medium high and slowly pour in the sugar, whipping until the whites hold a medium peak. Fold the whipped whites into the pastry cream in 2 additions and gently spoon this into the prepared dishes. Bake the soufflés for 25 minutes, until the tops are golden brown. Serve immediately with raspberry coulis on the side, to be poured into the centre after the first bite.
3. The pastry cream/apricot base can be prepared ahead of time and stored refrigerated, but can be brought to room temperature and have the whites folded in and baked right before serving.

Anna Olson
Anna Olson is a professionally trained pastry chef. She resides in Welland in the Niagara region of Ontario, Canada. She is the host of Bake with Anna Olson on Food Network Canada. She was previously the host of Food Network Canada's Fresh with Anna Olson,Sugar and Kitchen Equipped.
Biography
Olson was born Anna Tomcik in Atlanta, Georgia. Her parents, Donna and Andy Tomcik emigrated to Toronto where she grew up. Olson's grandparents came from Slovakia. Olson earned a degree in political studies and sociology from Queen’s University in Kingston. She also worked for a time in a bank in downtown Toronto. During her lunch breaks, Olson wandered the St. Lawrence Market searching for different ingredients and inspiration for her next dinner party. Olson then enrolled in the College of Culinary Arts at Johnson & Wales University in Denver, Colorado. Upon her graduation from the university, Olson traveled across the United States. She would eventually find her way to Niagara Falls. Olson was a pastry chef at Inn on the Twenty in Jordan, Ontario for seven years, where she met her husband, chef Michael Olson.

Ice cream
Ice cream (derived from earlier iced cream or cream ice) is a sweetened frozen food typically eaten as a snack or dessert. It is usually made from dairy products, such as milk and cream, and often combined with fruits or other ingredients and flavours. It is typically sweetened with sucrose, corn syrup, cane sugar, beet sugar, and/or other sweeteners. Typically, flavourings and colourings are added in addition to stabilizers. The mixture is stirred to incorporate air spaces and cooled below the freezing point of water to prevent detectable ice crystals from forming. The result is a smooth, semi-solid foam that is solid at very low temperatures (<35 °F / 2 °C). It becomes more malleable as its temperature increases.
The meaning of the phrase "ice cream" varies from one country to another. Phrases such as "frozen custard", "frozen yogurt", "sorbet", "gelato" and others are used to distinguish different varieties and styles. In some countries, such as the United States, the phrase "ice cream" applies only to a specific variety, and most governments regulate the commercial use of the various terms according to the relative quantities of the main ingredients, notably the amount of cream. Products that do not meet the criteria to be called ice cream are labelled "frozen dairy dessert" instead. In other countries, such as Italy and Argentina, one word is used for all variants. Analogues made from dairy alternatives, such as goat's or sheep's milk, or milk substitutes (e.g., soy milk or tofu), are available for those who are lactose intolerant, allergic to dairy protein, or vegan.

23-centimeter band
The 23 centimeter, 1200 MHz or 1.2 GHz band is a portion of the UHF (microwave) radio spectrum internationally allocated to amateur radio and amateur satellite use on a secondary basis. The amateur radio band is between 1240 MHz and 1300 MHz. The amateur satellite band is between 1260 MHz and 1270 MHz, and its use by satellite operations is only for up-links on a non-interference basis to other radio users (ITU footnote 5.282). The allocations are the same in all three ITU regions.
In the United Kingdom the band is between 1240 MHz and 1325 MHz.
Most modes of communication used in amateur radio can be found in the 23 cm band. Some of the more common modes include voice, data, EME (moonbounce), as well as ATV.

INGREDIENTS for Cookies 1 cup (225 g) unsalted butter, at room temperature 1 cup (260 g) icing sugar, sifted 6 large egg yolks 2 cups (260 g) cake and pastry flour ½ cup (60 g) Dutch process cocoa powder ¼ cup (30 g) cornstarch ½ tsp (2.5 g) salt 1 lb(s) 4 oz (600 g) white fondant icing Ingredients for Ice Cream 2 cups (500 mL) whipping cream 1 cup (250 mL) 2% milk ¾ cup (150 g) granulated sugar 1 pinch salt Baking directions for cookies 1. For the cookies, beat the butter and icing sugar until smooth, then add the egg yolks all at once and beat until well combined. In a separate bowl, sift the flour, cocoa powder, cornstarch and salt. Add this to the butter mixture and stir until evenly combined. Shape the dough into a log about 2 inches in diameter, wrap and chill until ready to use. 2. Preheat the oven to 325 ºF (160 ºC) and line 4 baking trays with parchment paper. 3. On a lightly floured work surface, knead the first dough disc to soften it (so it won’t crack when rolling) divide it in half, and roll out to a circle just over 9-inches (23 cm) across and just under ¼-inch (6 mm) thick. Use the edge of a 9-inch fluted tart tin as a giant cookie cutter and press into the dough to cut it (or you can use a 9-inch/23 cm round cake pan to press and then cut out a circle). Use the bottom portion of the tart tin to slip under the large cookie and slide it onto the baking tray. Set aside the scraps and repeat with the other half of this piece of dough and then the other chilled disc, so that you have a total of 4 large cookies. Roll out the remaining scraps and cut into 4 circles about 4 ½ -inches (11.5 cm) across and place them on the baking trays. Bake the cookies (in batches, if needed) for about 14 minutes, until the surface of the cookie is evenly matte. Let the cookies cool completely on the trays. 4. To assemble the cookies, lightly dust a work surface with icing sugar, divide the fondant in half and roll out the first piece into a circle over 9-inches (23 cm) across. Use the same fluted tart tin to cut a piece of fondant the same size as the cookie. Brush the top of the fondant with water and lift it and place it on the bottom-side of a cookie. Brush the exposed side of the fondant with water and carefully adhere the second cookie on it, so that you now have a giant sandwich cookie. Repeat with the second piece of fondant and lastly rolling the remaining scraps to cut and assemble 2 smaller cookies (these will be used for the cookies-&-cream ice cream. 5. Prepare a 9-inch (23 cm) springform tin by lining the bottom and sides with plastic wrap, so that the plastic comes up and over the sides of the pan. Cooking directions for Ice Cream 1. For the ice cream, whisk the cream, milk, sugar and salt until the sugar has fully dissolved. Pour this into an ice cream maker following manufacturer’s instructions. When the ice cream is almost done mixing, break up the 2 smaller cookies into it and let it mix in so that some pieces of cookie are still visible but some crumbs have worked in. Spoon the soft ice cream into the prepared pan and spread to level it. Cover the ice cream with the overhanging plastic wrap and freeze for at least 3 hours to set. 2. To assemble the cake, remove the ice cream from the springform pan and unwrap. Place the ice cream on one of the large cookie sandwiches and place the second cookie on top. If you are not serving the cake immediately, wrap the whole cake and place it back in the freezer. 3. To serve the cake, pull it from the freezer about 20 minutes before serving. Remove it from the pan, peel away the plastic and place on a platter to serve. Recipe Ingredients: Raspberry Coulis - 1 cup fresh or thawed from frozen raspberries - 3 Tbsp sugar Souffles - 2 fresh apricots, pitted and chopped - ¼ cup chopped dried apricots - ¼ cup apricot jam - 1 Tbsp finely grated orange zest - 3 Tbsp fresh orange juice - 1 tsp vanilla extract - 2 Tbsp (1 oz) orange liqueur - 1 recipe Basic Vanilla Pastry Cream, chilled - 4 large egg whites, room temprature - ⅓ cup sugar Basic Vanilla Pastry Cream - 1 cup 2% milk - ½ vanilla bean - 1 ½ tsp vanilla bean paste - 3 large egg yolks - 3 Tbsp sugar - 2 Tbsp cornstarch - 2 Tbsp unsalted butter, cut into pieces Baking Directions: Raspberry Coulis 1. For the raspberry coulis, puree the raspberries with the sugar, strain and chill until ready to serve. Souffles 1. For the soufflés, preheat the oven to 400 F. Grease six 8-ounce soufflé dishes and sprinkle the insides with sugar, tapping out any excess. Place the dishes onto a baking tray. Basic Vanilla Pastry Cream 1. 1. Heat the milk with the scraped seeds of the vanilla bean or the vanilla bean paste until just below a simmer. 2. 2. In a separate bowl, whisk the egg yolks, sugar and cornstarch. Ready a bowl with the butter, placing a strainer on top of it. 3. 3. Gradually whisk the hot milk into egg mixture and then return it all to the pot. Whisk this constantly (switching to a spatula now and again, to get into the corners) over medium heat until thickened and glossy, about 2 minutes. Pour this immediately through the strainer, whisking it through if needed, and stir in the butter. Place a piece of plastic wrap directly over the surface of the custard, cool to room temperature and then chill completely until ready to use. 4. The pastry cream will keep up to 4 days refrigerated. 5. Makes about 1 ½ cups. Assembly 1. Combine the fresh apricots, dried apricots, jam, zest and orange juice in a small pot and simmer, stirring occasionally, until the apricots are tender. Puree until smooth and stir in the vanilla and orange liqueur. Whisk in the pastry cream and set aside. 2. Whip the egg whites on medium low speed and once foamy, increase the speed to medium high and slowly pour in the sugar, whipping until the whites hold a medium peak. Fold the whipped whites into the pastry cream in 2 additions and gently spoon this into the prepared dishes. Bake the soufflés for 25 minutes, until the tops are golden brown. Serve immediately with raspberry coulis on the side, to be poured into the centre after the first bite. 3. The pastry cream/apricot base can be prepared ahead of time and stored refrigerated, but can be brought to room temperature and have the whites folded in and baked right before serving. Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes. Anna bakes up the perfect tasty cookies and cream ice cream cake for birthdays. Click SHOW MORE for recipe ingredients and baking instructions.
Makes 1 (9-inch) ice cream cake that will serve 12 people.
INGREDIENTS for Cookies
1 cup (225 g) unsalted butter, at room temperature
1 cup (260 g) icing sugar, sifted
6 large egg yolks
2 cups (260 g) cake and pastry flour
½ cup (60 g) Dutch process cocoa powder
¼ cup (30 g) cornstarch
½ tsp (2.5 g) salt
1 lb(s) 4 oz (600 g) white fondant icing
Ingredients for Ice Cream
2 cups (500 mL) whipping cream
1 cup (250 mL) 2% milk
¾ cup (150 g) granulated sugar
1 pinch salt
Baking directions for cookies
1. For the cookies, beat the butter and icing sugar until smooth, then add the egg yolks all at once and beat until well combined. In a separate bowl, sift the flour, cocoa powder, cornstarch and salt. Add this to the butter mixture and stir until evenly combined. Shape the dough into a log about 2 inches in diameter, wrap and chill until ready to use.
2. Preheat the oven to 325 ºF (160 ºC) and line 4 baking trays with parchment paper.
3. On a lightly floured work surface, knead the first dough disc to soften it (so it won’t crack when rolling) divide it in half, and roll out to a circle just over 9-inches (23 cm) across and just under ¼-inch (6 mm) thick. Use the edge of a 9-inch fluted tart tin as a giant cookie cutter and press into the dough to cut it (or you can use a 9-inch/23 cm round cake pan to press and then cut out a circle). Use the bottom portion of the tart tin to slip under the large cookie and slide it onto the baking tray. Set aside the scraps and repeat with the other half of this piece of dough and then the other chilled disc, so that you have a total of 4 large cookies. Roll out the remaining scraps and cut into 4 circles about 4 ½ -inches (11.5 cm) across and place them on the baking trays. Bake the cookies (in batches, if needed) for about 14 minutes, until the surface of the cookie is evenly matte. Let the cookies cool completely on the trays.
4. To assemble the cookies, lightly dust a work surface with icing sugar, divide the fondant in half and roll out the first piece into a circle over 9-inches (23 cm) across. Use the same fluted tart tin to cut a piece of fondant the same size as the cookie. Brush the top of the fondant with water and lift it and place it on the bottom-side of a cookie. Brush the exposed side of the fondant with water and carefully adhere the second cookie on it, so that you now have a giant sandwich cookie. Repeat with the second piece of fondant and lastly rolling the remaining scraps to cut and assemble 2 smaller cookies (these will be used for the cookies-&-cream ice cream.
5. Prepare a 9-inch (23 cm) springform tin by lining the bottom and sides with plastic wrap, so that the plastic comes up and over the sides of the pan.
Cooking directions for Ice Cream
1. For the ice cream, whisk the cream, milk, sugar and salt until the sugar has fully dissolved. Pour this into an ice cream maker following manufacturer’s instructions. When the ice cream is almost done mixing, break up the 2 smaller cookies into it and let it mix in so that some pieces of cookie are still visible but some crumbs have worked in. Spoon the soft ice cream into the prepared pan and spread to level it. Cover the ice cream with the overhanging plastic wrap and freeze for at least 3 hours to set.
2. To assemble the cake, remove the ice cream from the springform pan and unwrap. Place the ice cream on one of the large cookie sandwiches and place the second cookie on top. If you are not serving the cake immediately, wrap the whole cake and place it back in the freezer.
3. To serve the cake, pull it from the freezer about 20 minutes before serving. Remove it from the pan, peel away the plastic and place on a platter to serve.

Recipe Ingredients:
Raspberry Coulis
- 1 cup fresh or thawed from frozen raspberries
- 3 Tbsp sugar
Souffles
- 2 fresh apricots, pitted and chopped
- ¼ cup chopped dried apricots
- ¼ cup apricot jam
- 1 Tbsp finely grated orange zest
- 3 Tbsp fresh orange juice
- 1 tsp vanilla extract
- 2 Tbsp (1 oz) orange liqueur
- 1 recipe Basic Vanilla Pastry Cream, chilled
- 4 large egg whites, room temprature
- ⅓ cup sugar
Basic Vanilla Pastry Cream
- 1 cup 2% milk
- ½ vanilla bean
- 1 ½ tsp vanilla bean paste
- 3 large egg yolks
- 3 Tbsp sugar
- 2 Tbsp cornstarch
- 2 Tbsp unsalted butter, cut into pieces
Baking Directions:
Raspberry Coulis
1. For the raspberry coulis, puree the raspberries with the sugar, strain and chill until ready to serve.
Souffles
1. For the soufflés, preheat the oven to 400 F. Grease six 8-ounce soufflé dishes and sprinkle the insides with sugar, tapping out any excess. Place the dishes onto a baking tray.
Basic Vanilla Pastry Cream
1. 1. Heat the milk with the scraped seeds of the vanilla bean or the vanilla bean paste until just below a simmer.
2. 2. In a separate bowl, whisk the egg yolks, sugar and cornstarch. Ready a bowl with the butter, placing a strainer on top of it.
3. 3. Gradually whisk the hot milk into egg mixture and then return it all to the pot. Whisk this constantly (switching to a spatula now and again, to get into the corners) over medium heat until thickened and glossy, about 2 minutes. Pour this immediately through the strainer, whisking it through if needed, and stir in the butter. Place a piece of plastic wrap directly over the surface of the custard, cool to room temperature and then chill completely until ready to use.
4. The pastry cream will keep up to 4 days refrigerated.
5. Makes about 1 ½ cups.
Assembly
1. Combine the fresh apricots, dried apricots, jam, zest and orange juice in a small pot and simmer, stirring occasionally, until the apricots are tender. Puree until smooth and stir in the vanilla and orange liqueur. Whisk in the pastry cream and set aside.
2. Whip the egg whites on medium low speed and once foamy, increase the speed to medium high and slowly pour in the sugar, whipping until the whites hold a medium peak. Fold the whipped whites into the pastry cream in 2 additions and gently spoon this into the prepared dishes. Bake the soufflés for 25 minutes, until the tops are golden brown. Serve immediately with raspberry coulis on the side, to be poured into the centre after the first bite.
3. The pastry cream/apricot base can be prepared ahead of time and stored refrigerated, but can be brought to room temperature and have the whites folded in and baked right before serving.

The day I visited Neotsai Grill Teriyaki, the students from Marina High School were just getting out of school for the day. There was a line at this new little spot, and I joined the students waiting for bowls. The menu is simple. Just bowls filled with teriyaki chicken. spicy chicken, grilled orange chicken, teriyaki or spicy white fish, and sesame tofu. Each bowl comes with white rice, purple rice, or veggies.
