This is a staple ingredient in any Thai kitchen, and now you can make it at home! How To Make Your Own Thai Chili Oil
Learn how to make this easy Thai Chili Oil Recipe at home! Trust me, you need this homemade chili oil on hand in your kitchen to use weekly, if not daily.

INGREDIENTS
1 cup dried chili flakes
3 cloves garlic minced
1/8 tsp black pepper
2 tsp salt
2 cups avocado oil or olive oil
INSTRUCTIONS
Add the red chili flakes, minced garlic, salt, and black pepper to a heat-proof bowl.
In a small pot set over low-medium heat, add the oil.
Heat the oil for just 2-3 minutes, making sure it doesn’t boil.
Carefully pour this hot oil into the bowl with your red chili flakes. Stir well while the chili flakes sizzle so as to prevent them from overcooking.
Allow this to cool to room temperature, then transfer into a mason jar or similar...

Hi everyone today's video is all about Thai chilli paste/jam otherwise known as Nam Phrik Pao in Thai. This is similar to chilli oil but carries more umami and a rich, soothing, comforting, spicy flavour. Chef Tou will be showing us how to make it and how to use it. This paste can be used to make amazing stir frys or can be used neat on your plate Thai style.

75g Dried Thai birds eye chilli ( you can leave these out and double up on the sweet chilli if you want it milder)
75g Dried large sweet Thai chilli
200g Shallots roughly cut
100g Dried shrimp
200g Garlic peeled

- 2 tbsp Lime Juice

- 2-3 Thai chilis
- 4 tbsp Fish Sauce
- 1/2 tsp Sugar
🔴 Nam Jim Seafood - Thai Seafood Dipping Sauce NO Fish Sauce Version
- 1 tbsp Palm Sugar
- 1/3 cup Warm Water
- 4 tbsp Lime Juice
- 2 tsp Salt
- 5 cloves Garlic
- 1 cup Coriander
- Chili as you like
*NOTE : You can either blend as shown in the video or pound with mortar & pestle

- Fish sauce 3 tbsp
- Tamarind juice 2 tbsp

- Ground toasted rice 1 tbsp**

📖 Menu Information :
〽️ Prik Nam Pla (Thai Chili Fish Sauce)
- Every Thai Street Food restaurant has this sauce on the table. This one is not a dipping sauce, it’s more like a table sauce which we use to enhance the flavors of the dish. Some areas in Thailand might call it Nampla Prik instead of Prik Nampla. Both are the same and straightforward meaning. Prik = Chilis and Nampla = Fish sauce in Thai. Like salt and pepper in the west, it’s always good to have this with Thai meals.
〽️ Nam Jim Seafood (Thai Spicy Seafood Dipping Sauce)
- Even though we call it a Seafood Dipping Sauce, as you can see in the video, I even dipped with grilled pork belly. It’s so good with the seafood from it’s spicy, sweet, salty and sour. But also good to go with ANYTHING even vegetables. The main character of this sauce is sharpness yet mellow. All the taste elements are so clear so you’ll have a perfect combo in one dip.
〽️ Nam Jim Jaew (Thai Spicy BBQ Dipping Sauce)
- Good with any BBQ you’re planning to have. Beef, pork, chicken, lamb, etc. Not for seafood in my opinion, it’s not as light and fresh. Comparing to wine I’d say this one is the red and seafood dipping sauce is the white. Special character of this sauce is ground toasted rice(check out the link above).

📖 Menu Information :
〽️ Prik Nam Pla (Thai Chili Fish Sauce)
- Every Thai Street Food restaurant has this sauce on the table. This one is not a dipping sauce, it’s more like a table sauce which we use to enhance the flavors of the dish. Some areas in Thailand might call it Nampla Prik instead of Prik Nampla. Both are the same and straightforward meaning. Prik = Chilis and Nampla = Fish sauce in Thai. Like salt and pepper in the west, it’s always good to have this with Thai meals.
〽️ Nam Jim Seafood (Thai Spicy Seafood Dipping Sauce)
- Even though we call it a Seafood Dipping Sauce, as you can see in the video, I even dipped with grilled pork belly. It’s so good with the seafood from it’s spicy, sweet, salty and sour. But also good to go with ANYTHING even vegetables. The main character of this sauce is sharpness yet mellow. All the taste elements are so clear so you’ll have a perfect combo in one dip.
〽️ Nam Jim Jaew (Thai Spicy BBQ Dipping Sauce)
- Good with any BBQ you’re planning to have. Beef, pork, chicken, lamb, etc. Not for seafood in my opinion, it’s not as light and fresh. Comparing to wine I’d say this one is the red and seafood dipping sauce is the white. Special character of this sauce is ground toasted rice(check out the link above).

Learn how to make this easy Thai Chili Oil Recipe at home! Trust me, you need this homemade chili oil on hand in your kitchen to use weekly, if not daily.

INGREDIENTS
1 cup dried chili flakes
3 cloves garlic minced
1/8 tsp black pepper
2 tsp salt
2 cups avocado oil or olive oil
INSTRUCTIONS
Add the red chili flakes, minced garlic, salt, and black pepper to a heat-proof bowl.
In a small pot set over low-medium heat, add the oil.
Heat the oil for just 2-3 minutes, making sure it doesn’t boil.
Carefully pour this hot oil into the bowl with your red chili flakes. Stir well while the chili flakes sizzle so as to prevent them from overcooking.
Allow this to cool to room temperature, then transfer into a mason jar or similar airtight container.
Keep in the fridge for up to 6 months and enjoy with any dish!
NOTES
Notes: If you want a more fragrant oil, add aromatics as noted in the article and let simmer 20-30 minutes before straining and pouring over the chili flakes. Other ingredients you can add: star anise, brown sugar, soy sauce, shallots or green onions, sesame seeds, etc.

Thai CHILLI Paste | HOW To Make IT And HOW To Use IT! Nam Phrik Pao
Hi everyone today's video is all about Thai chilli paste/jam otherwise known as Nam Phrik Pao in Thai. This is similar to chilli oil but carries more umami and a rich, soothing, comforting, spicy flavour. Chef Tou will be showing us how to make it and how to use it. This paste can be used to make amazing stir frys or can be used neat on your plate Thai style.
Enjoy.
Here's the recipe:
75g Dried Thai birds eye chilli ( you can leave these out and double up on the sweet chilli if you want it milder)
75g Dried large sweet Thai chilli
200g Shallots roughly cut
100g Dried shrimp
200g Garlic peeled
For the following ingredients use the base amounts first and then taste it to see if you need to adjust it.
4x Tbsp tamarind sauce (we ended up adding another two)
4x Tbsp fish sauce (we ended up adding another spoon)
1x Large heaped Tbsp shrimp paste
2x Large heaped Tbsp coconut sugar (we ended up adding another spoon), you can use palm sugar but you may need less as it's slightly sweeter.
A good quality oil
For the stir fry:
Handful of prawns
2x Tbsp of chilli paste
1x Tbsp of stir fry sauce
20g white onion
20g long beans
20g red and green peppers
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
