Caramel (
/ˈkærəmɛl/ or /ˈkɑrməl/ ) is a beige to dark-brown confectionery product made by heating any of a variety of sugars. It is used as a flavoring in puddings and desserts, as a filling in bonbons, and as a topping for ice cream, custard and coffee.
The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic color and flavor.
A variety of candies, confections, and desserts are made with caramel: caramel apples, pralines, nougats, brittles, crème caramel, and crème brûlée.
Most linguists trace the origin of the word to Medieval Latin cannamellis (sugar cane) or to Latin callamellus (little reed, referring to sugar cane).
Caramel candy is a soft, dense, chewy candy made by boiling a mixture of milk or cream, sugar(s), butter, and vanilla flavoring. The sugar(s) are heated separately to reach 170 °C (340 °F), caramelizing them before the other ingredients are added. Alternatively, all ingredients may be cooked together; in this procedure, the mixture is not heated above the firm ball stage (120 °C (250 °F)), so there is caramelization of the milk but not of the sugars. This type of candy is often called "milk caramel" or "cream caramel".

Crème Caramel - an elegant and absolutely delicious dessert known all over the world. What not to love to soft caramel on top, vanilla flavor and creamy consistency. Best part is that Creme Caramel can be made in advance which makes it perfect for gatherings or parties. Ingredients: Makes 4-6 servings For the topping 1/2 cup + 2 tbsp (120 g) sugar 2 tbsp (30 ml) water For the custard 3 eggs 2 cups (500 ml) milk 1/4 cup (50 g) sugar 1 vanilla bean 1/2 tsp corn starch (optional) Directions 1. Heat the oven to 325°F/160°C. 2. Heat the sugar and water in a saucepan until the liquid turns golden brown. Immediately, pour the caramel into a 7 inch (18 cm) cake pan coating the sides too. 3. Pour the milk into the same saucepan. Add the vanilla bean seeds and the pod into the milk. Heat the milk but do not bring to boil, then set aside to infuse for few minutes. 4. In a separate bowl beat the eggs with the sugar. Add the corn starch. Pour the milk over the egg mixture. 5. Pour the custard carefully over the prepared pan and place the pan in a larger pan. Pour hot water into the bottom pan to come half-way up the sides. Bake until golden for about 45 minutes to an hour. 6. Cool completely. Then cover and refrigerate for at least a couple of hours. To serve turn out onto a plate. Crème Caramel - an elegant and absolutely delicious dessert known all over the world. What not to love to soft caramel on top, vanilla flavor and creamy consistency. Best part is that Creme Caramel can be made in advance which makes it perfect for gatherings or parties.
Ingredients:
Makes 4-6 servings
For the topping
1/2 cup + 2 tbsp (120 g) sugar
2 tbsp (30 ml) water
For the custard
3 eggs
2 cups (500 ml) milk
1/4 cup (50 g) sugar
1 vanilla bean
1/2 tsp corn starch (optional)
Directions
1. Heat the oven to 325°F/160°C.
2. Heat the sugar and water in a saucepan until the liquid turns golden brown. Immediately, pour the caramel into a 7 inch (18 cm) cake pan coating the sides too.
3. Pour the milk into the same saucepan. Add the vanilla bean seeds and the pod into the milk. Heat the milk but do not bring to boil, then set aside to infuse for few minutes.
4. In a separate bowl beat the eggs with the sugar. Add the corn starch. Pour the milk over the egg mixture.
5. Pour the custard carefully over the prepared pan and place the pan in a larger pan. Pour hot water into the bottom pan to come half-way up the sides. Bake until golden for about 45 minutes to an hour.
6. Cool completely. Then cover and refrigerate for at least a couple of hours. To serve turn out onto a plate.

Chewy Salted Caramel

1 cup whipping cream
¼ cup salted butter
¼ tsp salt
¼ cup water
¼ cup light corn syrup
1½ cups sugar
1 tsp vanilla extract
1 tbsp liqueur (optional)
Salt for garnish (Fleur de sel, coarse sea salt or pink Himalayan salt all work well)
Start by lining a small baking dish (8x8) with parchment paper, being sure to leave excess on all sides.
Lightly oil parchment paper to prevent the caramel from sticking.
In a small saucepan, heat the cream, butter and salt just until the butter has melted.
Turn off heat and set aside.
In a large saucepan, gently stir together the water, corn syrup and sugar.
Try to avoid getting any sugar crystals on the sides of the pan while stirring. If you do get sugar crystals on the sides of the pan, brush them down with a damp pastry brush.
Place the candy thermometer in saucepan. It is critical to use a candy thermometer when making caramel as you're working with very specific temperatures. They're widely available and fairly inexpensive.
Heat your saucepan to medium-high. Once the sauce pan is on the heat, do NOT stir the mixture.
After a minute or so, you'll start to see bubbles form around the edges and then push into the centre.
When your candy thermometer reaches 300˚F, turn off the heat and CAREFULLY whisk in the cream mixture. The mixture will bubble and rise so use extreme caution while whisking.
Once the mixture is combined, turn the heat on to medium. Do NOT stir.
Your caramel is ready when the thermometer reads between 245˚F and 250˚F.
Turn off the heat and quickly stir in your vanilla extract and liqueur (if you choose). Be sure not to scrape the bottom of the pan because burned bits may have formed and will end up in your finished product.
Pour the mixture into your prepared pan and tap it on the counter a few times to release any air bubbles.
Allow the caramel to set for 20-30 minutes before topping with salt.
Allow the caramel to set for at least 2 hours before cutting it into to pieces.
Wrap caramel bites individually with wax paper and store in the refrigerator for up to one week.

This chocolate salted caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals. Chocolaty, rich and buttery, a perfect treat for any occasion.
Ingredients:
Makes about 6-8 servings
Almond Chocolate Sweet Pastry
1 1/4 cups (160g) flour
1/4 cup (30g) ground almonds
1/4 cup (30g) unsweetened cocoa powder
1/4 cup (50g) sugar
1/4 tsp salt
1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes
1 tsp vanilla extract
1 egg
1-2 tbsp ice water
Caramel
1 1/2 cups (300 g) sugar
1/2 cup (100g) water
1/2 cup (120 g) heavy cream
5 tbsp (70 g) unsalted butter
1 tsp salt
Chocolate Ganache
1/2 cup (120 g) heavy cream
4 oz (120g) bittersweet chocolate, chopped
Garnish
sea salt crystals
Directions
1. Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt.
2. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight.
3. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking.
4. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights.
5. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan.
6. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.
7. Remove the pan from the heat and add the cream. It will bubble a little bit.
8. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth.
9. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours.
10. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth.
11. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve.
