Last week’s episode of "Chopped" was titled “Chopped Champions: Battle 3, Chefs in Control.” Four chefs were given the opportunity to compete in this challenge for the $50,000 grand prize and title of a “Chopped Champion.” As sixteen previous winners compete in the five-week challenge, one will emerge victorious. The judges for this episode are: Geoffrey Zakarian, Chris Santos and guest judge and also a “Chopped” winner, Christian Petroni with the host, as always Ted Allen.
The chefs competing in this episode are: Roro Morales, Deborah Caplan, Mo Major and Raffaele Ronca all previous winners.
The 20-minute Appetizer round the mystery baskets contained: Chicken Livers, Cinnamon Whiskey, Edamame and Grape Licorice. Roro made Asian-Inspired Liver with Miso Whiskey Caramel using miso paste, lemongrass and ginger. Deborah made Crispy Livers with Edamame Purée and Grape Whiskey Sauce using grain mustard, chile de árbol and panko. Raffaele made Crostone Toscano with Liver Pate and Edamame Aioli using onions, balsamic vinegar and goat cheese. Mo made Grape-Glazed Fried Chicken Livers with Edamame Puree using flour, jalapenos and smoked paprika. The chef eliminated in this round was Raffaele whose dish was least favored among the judges.
The 30-minute Entree round mystery basket contained: Duck Breasts, Harissa, Pear Frangipane Tart and Orange Sherbet. Roro made Duck À L’Orange with Dirty Rice and Pear Compote using pancetta, vegetable stock and orange. Deborah made Seared Duck Breast with Sherbet-Glazed Apples & Pears using demi-glace, shallots and spinach. Mo made Jerk Duck Breast with Orange Sherbet and Harissa Sauce using soy sauce, brown sugar and allspice. The chef “Chopped” was Mo whose dish had the most technical errors.
The 30-minute Dessert round mystery basket included: Bison Jerky, Sour Cream, Freeze-Dried Blueberries and Egg Waffles. Deborah made Apple-Blueberry Crumble with Sour Cream Ice Cream using Greek yogurt, green apples and brown sugar. Roro made Panna Cotta with Blueberry Compote and Bison Brittle using vinegar, heavy cream and gelatin sheets. The winner who will go to the finale and hopes to become the next “Chopped Champion” and winner of $5,000 was Deborah on this episode of “Chopped.”
