In this video, Chef Davy Devaux explains the truth about fake wasabi and why japanese restaurants and groceries have mostly 0% wasabi in products labeled wasabi! He also shows what real wasabi rhizomes look like and how to prepare it as a condiment for use in japanese food like sushi using a traditional japanese sharkskin grater. Then Chef Devaux explains how long you can keep fresh wasabi in the fridge for, including some tips and tricks on what to do if you have too much.

Most of the time, the wasabi you get in a restaurant or buy in a store is fake. It’s actually horseradish that’s colored green. Why? Well, wasabi is a notoriously difficult plant to grow. In fact, it’s considered the most difficult plant in the world to farm commercially. Yet for the past century, the Daio Wasabi Farm in Hokata, Japan, has been growing it successfully with natural spring water from nearby mountains.

99% of the Japanese restaurants or restaurants serving sushi (including ours) will never serve you real wasabi. Why? Because it's very expensive and most of us don't even know that it exists.
Wasabi plants are found along shaded mountainous terrain where running water is. Nowadays, there are places that grow wasabi that are outside Japan; youtube wasabi plant to watch some great videos.
To enjoy fresh wasabi, look for a shark skin grater or if not, a micro grater will also work. Shave the outside of the skin to reveal the stem, and then with a circular motion, apply some pressure until a paste forms. This is your fresh ground wasabi that's potent for about 20 minutes. If you've never had it, and more than likely you haven't, you'll need to search deep and wide for an authentic Japanese restaurant that will serve this to you. But be forewarned: once you go real wasabi, you won't go back to the powdered one that's mostly all horseradish powder that just needs water to form the paste we're all familiar with.

Wasabi
Wasabi (わさび（山葵）, earlier 和佐比; Eutrema japonicum/"Wasabia japonica") is a plant of the Brassicaceae family, which includes cabbages, horseradish, and mustard. It is also called Japanese horseradish, although horseradish is a different plant (which is generally used as a substitute for wasabi, due to the scarcity of the wasabi plant). Its stem is used as a condiment and has an extremely strong pungency more akin to hot mustard than the capsaicin in a chili pepper, producing vapours that stimulate the nasal passages more than the tongue. The plant grows naturally along stream beds in mountain river valleys in Japan. The two main cultivars in the marketplace are E. japonicum 'Daruma' and 'Mazuma', but there are many others. The origin of Wasabi cuisine has been clarified from the oldest historical records, It takes its rise in Nara prefecture.
Uses
Wasabi is generally sold either as a stem, which must be very finely grated before use, as dried powder in large quantities, or as a ready-to-use paste in tubes similar to travel toothpaste tubes. Because it grows mostly submerged, it is a common misconception to refer to the part used for wasabi as a root or sometimes even a rhizome: it is in fact the stem of the plant, with the characteristic leaf scar where old leaves fell off or were collected.

Daio Wasabi Farm
The Daiō Wasabi Farm (大王わさび農場, Daiō Wasabi Nōjō) is a wasabi farm established in 1915 and located in Azumino, Nagano Prefecture near the center of Honshū, the main island of Japan. It is a popular tourist spot due to its beautiful watermills and for the river that runs through it.
A restaurant offers wasabi-flavoured ice cream and other wasabi-themed products.
Outside Japan, the site is best known for its appearance in the 1990 film Dreams by world famous director Akira Kurosawa in the segment called "Village of the Watermills".
Daiō is one of Japan's largest farms—and its largest wasabi farm—covering 15 hectares.

99% of the Japanese restaurants or restaurants serving sushi (including ours) will never serve you real wasabi. Why? Because it's very expensive and most of us don't even know that it exists. Wasabi plants are found along shaded mountainous terrain where running water is. Nowadays, there are places that grow wasabi that are outside Japan; youtube wasabi plant to watch some great videos. To enjoy fresh wasabi, look for a shark skin grater or if not, a micro grater will also work. Shave the outside of the skin to reveal the stem, and then with a circular motion, apply some pressure until a paste forms. This is your fresh ground wasabi that's potent for about 20 minutes. If you've never had it, and more than likely you haven't, you'll need to search deep and wide for an authentic Japanese restaurant that will serve this to you. But be forewarned: once you go real wasabi, you won't go back to the powdered one that's mostly all horseradish powder that just needs water to form the paste we're all familiar with. Let's travel to a valley in the Japanese alps in Nagano to get some organically grown wasabi from the farm! Just how is wasabi grown? Daio Wasabi Farm is one of Japan's largest and is a great place to find out – and try wasabi cuisine! There are few produce directly associated with Japan. Wasabi is one of the most widely known and the flavor is found more and more in snacks because of it's spicy kick. It's also used in sushi, mixed in the soy sauce. There is a big different between the processed wasabi found in some restaurants and the fresh kind which is traditionally ground on a shark skin grater and collected. The color and smell. The texture and taste. Why does fresh wasabi cost so much? It takes between 12 to 18 month to grow one and there is no telling what size it will be when pulled from the ground. The wasabi needs to be in the shade and have constant fresh water. The minerals from the melted snows of the Japanese alps surrounding Daio Wasabi Farm are perfect to make the worlds most delicious wasabi. What else can you do at the wasabi farm? You can hike around the beautiful area and also grab a bite to eat in the food plaza. 99% of the Japanese restaurants or restaurants serving sushi (including ours) will never serve you real wasabi. Why? Because it's very expensive and most of us don't even know that it exists. Wasabi plants are found along shaded mountainous terrain where running water is. Nowadays, there are places that grow wasabi that are outside Japan; youtube wasabi plant to watch some great videos. To enjoy fresh wasabi, look for a shark skin grater or if not, a micro grater will also work. Shave the outside of the skin to reveal the stem, and then with a circular motion, apply some pressure until a paste forms. This is your fresh ground wasabi that's potent for about 20 minutes. 99% of the Japanese restaurants or restaurants serving sushi (including ours) will never serve you real wasabi. Why? Because it's very expensive and most of us don't even know that it exists.
Wasabi plants are found along shaded mountainous terrain where running water is. Nowadays, there are places that grow wasabi that are outside Japan; youtube wasabi plant to watch some great videos.
To enjoy fresh wasabi, look for a shark skin grater or if not, a micro grater will also work. Shave the outside of the skin to reveal the stem, and then with a circular motion, apply some pressure until a paste forms. This is your fresh ground wasabi that's potent for about 20 minutes. If you've never had it, and more than likely you haven't, you'll need to search deep and wide for an authentic Japanese restaurant that will serve this to you. But be forewarned: once you go real wasabi, you won't go back to the powdered one that's mostly all horseradish powder that just needs water to form the paste we're all familiar with.
Master Sushi Chef Hiroyuki Terada has been using Kikuichi brand knives for over 20 years, in particular Model WGS21-08-0 which has an 8" blade and has a double sided beveled edge. Let's travel to a valley in the Japanese alps in Nagano to get some organically grown wasabi from the farm! Just how is wasabi grown?
Daio Wasabi Farm is one of Japan's largest and is a great place to find out – and try wasabi cuisine!
There are few produce directly associated with Japan.
Wasabi is one of the most widely known and the flavor is found more and more in snacks because of it's spicy kick.
It's also used in sushi, mixed in the soy sauce.
There is a big different between the processed wasabi found in some restaurants and the fresh kind which is traditionally ground on a shark skin grater and collected. The color and smell. The texture and taste.
Why does fresh wasabi cost so much?
It takes between 12 to 18 month to grow one and there is no telling what size it will be when pulled from the ground.

Let's travel to a valley in the Japanese alps in Nagano to get some organically grown wasabi from the farm! Just how is wasabi grown?
Daio Wasabi Farm is one of Japan's largest and is a great place to find out – and try wasabi cuisine!
There are few produce directly associated with Japan.
Wasabi is one of the most widely known and the flavor is found more and more in snacks because of it's spicy kick.
It's also used in sushi, mixed in the soy sauce.
There is a big different between the processed wasabi found in some restaurants and the fresh kind which is traditionally ground on a shark skin grater and collected. The color and smell. The texture and taste.
Why does fresh wasabi cost so much?
It takes between 12 to 18 month to grow one and there is no telling what size it will be when pulled from the ground.
