Chile (/ˈtʃɪli/;Spanish: [ˈtʃile]), officially the Republic of Chile (Spanish: República de Chile ), is a South American country occupying a long, narrow strip of land between the Andes to the east and the Pacific Ocean to the west. It borders Peru to the north, Bolivia to the northeast, Argentina to the east, and the Drake Passage in the far south. Chilean territory includes the Pacific islands of Juan Fernández, Salas y Gómez, Desventuradas, and Easter Island in Oceania. Chile also claims about 1,250,000 square kilometres (480,000 sq mi) of Antarctica, although all claims are suspended under the Antarctic Treaty.
The arid Atacama Desert in northern Chile contains great mineral wealth, principally copper. The relatively small central area dominates in terms of population and agricultural resources, and is the cultural and political center from which Chile expanded in the late 19th century when it incorporated its northern and southern regions. Southern Chile is rich in forests and grazing lands, and features a string of volcanoes and lakes. The southern coast is a labyrinth of fjords, inlets, canals, twisting peninsulas, and islands.

One of the classic Chilean snack food dishes worth trying when visiting Santiago is something called Chorrillana. This dish, which is worth sharing with a friend of two, is basically a mountain of french fries with sliced beef, fried egg and fried onion on top. We've now had it enough times to realize no two restaurants make it the same. We've seen fried egg versus scrambled egg, tenderloin versus sliced sausage and several different ways of preparing the onion. On October 24th, the Chile Tourist Board flew Charles Uzzell Edwards aka Pure Evil to Valparaíso for a special opportunity to paint a piece of mural art, with local artist ValaClave which was documented by photojournalist for The Times, David Bebber. Pure Evil has created his “Poema de Amor a Valparaíso” in a famous tourist area of Valparaíso, the Atkinson promenade on Concepcion Hill. The region has welcomed him following his wish to visit Valparaíso as part of his own personal history as well as his admiration for art in the area.
For lunch we visited one of our favorite restaurants in San Pedro de Atacama, Chile to try eating Chilean Empanadas (Empanadas Chilenas). We're certainly no strangers to eating empanadas. In fact, they were served during our wedding and I've learned how to make them at Audrey's parents house. However, it was our first time to try Chilean empanadas. Compared to Argentinian empanadas they're massive and shaped more like an envelope as opposed to a half moon. We ended up ordering two massive ones (Empanadas de Pino: Beef empanadas with black olives, onions, eggs and raisins - Empanadas de Tomate, Queso y Albahaca: Cheese empanadas with tomato and basil). Crossing from La Paz, Bolivia to Arica, Chile was a nightmare in terms of Immigration. It took us over 5.5 hours to get processed and by the time we finally arrived in Arica we were beyond exhausted.
