Yellow capsicum
The yellow variety of capsicum has glossy golden skin and crisp flesh. It's much sweeter than green capsicum.
Is it good for me?
It’s rich in vitamin C and also supplies beta-carotene and dietary fibre.
Buying and storing
Look for firm, crisp-looking capsicum with skin that’s free from soft or wrinkled patches. Store in the crisper of your fridge for up to one week.
Preparation
Rinse under cool water, then cut in half lengthways. Remove the stem, seeds and membrane. Slice as desired.
Cooking tips
Slice and add to a stir-fry of lamb, red onion, broccolini and kecap manis. Stuff capsicum halves with couscous and feta. Bake until golden.
