How to roast capsicum
Add sweet roasted capsicum to pizzas and sandwiches, or try teaming it with other Mediterranean vegies in salads and side dishes. Here's how to roast a capsicum.

Step 1:
Preheat oven to 200°C. Place the capsicum on a baking tray. Roast, turning occasionally, until the skin is charred and blistered.
Step 2:
Transfer the capsicum to a sealable plastic bag. Set aside for 10 minutes. The steam helps to lift the skin.
Step 3:
Peel the skin and discard. Don’t rinse the flesh – it ruins the flavour. Remove the stem and seeds. Slice as desired.
