UDON!! A hot bowl of noddles in Tokyo always hits the spot on a cold day. Instead of ramen, let's go for UDON, which is both healthier (don't eat too much tempura!) and more fun to eat. In this episode, John travels from Tokyo to Kagawa Prefecture and the Sakuki region for handmade bowls of udon noodles and soup. Let's explore the kitchen, watch them cook and serve like pros -- and of course EAT, EAT and EAT!
What makes UDON better than RAMEN?
★ It's healthier. The soup is not as oily.
★ The noodles are thicker.
★ It's cheaper!
★ Tempura!! Pick your side dishes.
★ It tastes great cold (bukkake udon) perfect for summer.
★ Customize it any way you like in the self-serve style.
How to Make Udon (Sanuki Style):
INGREDIENTS
Wheat Flour / 500g
Salt / 15g
Water / 240cc or 1 cup
(makes 3-4 Servings)
- Mix and knead the dough.
- Make a ball and roll it out and fold it several time.
- Roll it to about a 4mm thickness.
- Cut into strips of the same thinckness. It will expand in water.
- Flour the noodles and add to boiling water then lower heat for 10-15 minutes. Stir the noodles.
- Add dashi (fish stock stock), ginger and negi -- and your favorite tempura! Chikuwa is the most popular.

Zentsuji in Kagawa Prefecture is the home to Japan's SQUARE WATERMELONS and I travel to Shikoku Island to the very spot where they've been producing them for decades.
In this Man vs. Nature battle, mankind seems to have won -- but at the expensive costs to produce square watermelons, a luxury fruit, does anyone actually want one?
Before going, I had many questions:
Why do Japanese Square Watermelons exist?
How are the grown?
Do you eat them?
What do they taste like?
How much do they cost?
I asked the son of the man who started it all, Yamashita-san.
He took over for his father and continues his legacy of growing the perfect square watermelon.
The story:
About 45 years ago in Japan, ice cream and beverages started to compete with watermelons in the summer, and Zentsuji's Yamashita-san, who didn't want to give up making watermelons, decided to make the square watermelon to compete with those new favorites. Unfortunately, the costs were too high so they changed strategy to make them for display purposes. Stores would gladly pay more for it while customers did not want to pay more to eat them.
Over the years, his son took over and he stuck with it – and now the SQUARE WATERMELON of ZENTSUJI is world famous!
I'll take you to the farm where you'll see the metal and glass box they're grown in.
The we go to the cooperative warehouse where local farmers process the watermelons for distribution around Japan and the rest of the world.
Facts about the Square Watermelon:
* They're only grown in Zentsuji where they are both trademarked and patented.
* Zentsuji produces about 200 annually.
* They cost between 10,000 and 20,000 yen in Tokyo but depending on the market forces, prices can rise to as high as 90,000 yen for one!
* How big are they? They're 18 x 18cm so they can fit on the shelf if a refrigerator.
* The harvest starts at the end of June and lasts to the middle of July.
How to get to Zentsuji:
There are a few daily flights to Takamatsu from Narita (Tokyo) with JETSTAR Airlines.
From Takamatsu Airport, take a bus to the JR Train Station then a local train to Zentsuji / 30 minutes.

Shipments of square watermelons have started from western Japan to markets across the country and overseas. They come from the town of Zentsuji in Kagawa prefecture. The fruits are 18 centimeters square and grown in plastic braces, which restrict their shape. But the watermelons are inedible because they are harvested unripe, but they are popular in Japan as gift items for decoration.

Zentsūji, Kagawa
Zentsūji (善通寺市, Zentsūji-shi) is a city located in Kagawa Prefecture, Japan. The city was founded on March 31, 1954.
As of June 1, 2011, the city has an estimated population of 34,114, with 13,079 households and a population density of 855.42 persons per km². The total area is 39.88& km².
The city is the place where Kūkai (also known as Kōbō Daishi) was born. The origin of the city name is Zentsū-ji Buddhist temple. The Zentsūji Temple, from which the town gets its name, is the 75th temple on the 88-temple Shikoku Pilgrimage. It is also one of the three temples on the tour, that Kūkai visited, the others being Tairyūji and Muroto Misaki, as Kūkai mentioned them by name in his writings.
Zentsūji is also home to Shikoku Gakuin University.
Farmers of the Zentsūji region found a way to grow cubic watermelons, by growing the fruits in glass boxes and letting them naturally assume the shape of the receptacle. The square shape is designed to make the melons easier to stack and store, but the square watermelons are often more than double the price of normal ones. Pyramid shaped watermelons have also been developed.

Kagawa Prefecture
Kagawa Prefecture (香川県, Kagawa-ken) is a prefecture of Japan located on Shikoku island. The capital is Takamatsu.
History
Kagawa was formerly known as Sanuki Province.
For a brief period between August 1876 and December 1888, Kagawa was made a part of Ehime Prefecture.
Battle of Yashima
Located in Kagawa's capital city, Takamatsu, the mountain of Yashima was the battlefield for one of the best-known struggles between the Heike and the Genji clans.
Geography
Kagawa comprises the northeast corner of Shikoku, bordering Ehime Prefecture on the west and Tokushima Prefecture on the south, with a coastline on the Seto Inland Sea facing Okayama Prefecture and the Kansai. The Sanuki Mountains run along the southern border.
Kagawa is currently the smallest prefecture, by area, in Japan. Osaka Prefecture held that title until Kansai International Airport was reclaimed from the ocean in the early 1990s, pushing its land area slightly above Kagawa's. Kagawa is a relatively narrow prefecture located between the mountains of Shikoku and the sea.

They're 18 x 18cm so they can fit on the shelf if a refrigerator. * The harvest starts at the end of June and lasts to the middle of July. How to Make Udon (Sanuki Style):
INGREDIENTS
Wheat Flour / 500g
Salt / 15g
Water / 240cc or 1 cup
(makes 3-4 Servings)
- Mix and knead the dough.
- Make a ball and roll it out and fold it several time.
- Roll it to about a 4mm thickness.
- Cut into strips of the same thinckness. It will expand in water.

UDON!! A hot bowl of noddles in Tokyo always hits the spot on a cold day. Instead of ramen, let's go for UDON, which is both healthier (don't eat too much tempura!) and more fun to eat. In this episode, John travels from Tokyo to Kagawa Prefecture and the Sakuki region for handmade bowls of udon noodles and soup. Let's explore the kitchen, watch them cook and serve like pros -- and of course EAT, EAT and EAT!
What makes UDON better than RAMEN?
★ It's healthier. The soup is not as oily.
★ The noodles are thicker.
★ It's cheaper!
★ Tempura!! Pick your side dishes.
★ It tastes great cold (bukkake udon) perfect for summer.
★ Customize it any way you like in the self-serve style.
How to Make Udon (Sanuki Style):
INGREDIENTS
Wheat Flour / 500g
Salt / 15g
Water / 240cc or 1 cup
(makes 3-4 Servings)
- Mix and knead the dough.
- Make a ball and roll it out and fold it several time.
- Roll it to about a 4mm thickness.
- Cut into strips of the same thinckness. It will expand in water.

Zentsuji in Kagawa Prefecture is the home to Japan's SQUARE WATERMELONS and I travel to Shikoku Island to the very spot where they've been producing them for decades.
In this Man vs. Nature battle, mankind seems to have won -- but at the expensive costs to produce square watermelons, a luxury fruit, does anyone actually want one?
Before going, I had many questions:
Why do Japanese Square Watermelons exist?
How are the grown?
Do you eat them?
What do they taste like?
How much do they cost?
I asked the son of the man who started it all, Yamashita-san.
He took over for his father and continues his legacy of growing the perfect square watermelon.
The story:
About 45 years ago in Japan, ice cream and beverages started to compete with watermelons in the summer, and Zentsuji's Yamashita-san, who didn't want to give up making watermelons, decided to make the square watermelon to compete with those new favorites. Unfortunately, the costs were too high so they changed strategy to make them for display purposes. Stores would gladly pay more for it while customers did not want to pay more to eat them.
Over the years, his son took over and he stuck with it – and now the SQUARE WATERMELON of ZENTSUJI is world famous!
I'll take you to the farm where you'll see the metal and glass box they're grown in.
The we go to the cooperative warehouse where local farmers process the watermelons for distribution around Japan and the rest of the world.
Facts about the Square Watermelon:
* They're only grown in Zentsuji where they are both trademarked and patented.
* Zentsuji produces about 200 annually.
* They cost between 10,000 and 20,000 yen in Tokyo but depending on the market forces, prices can rise to as high as 90,000 yen for one!
* How big are they? They're 18 x 18cm so they can fit on the shelf if a refrigerator.
* The harvest starts at the end of June and lasts to the middle of July.
How to get to Zentsuji:
There are a few daily flights to Takamatsu from Narita (Tokyo) with JETSTAR Airlines.
From Takamatsu Airport, take a bus to the JR Train Station then a local train to Zentsuji / 30 minutes.

Zentsuji in Kagawa Prefecture is the home to Japan's SQUARE WATERMELONS and I travel to Shikoku Island to the very spot where they've been producing them for decades.
In this Man vs. Nature battle, mankind seems to have won -- but at the expensive costs to produce square watermelons, a luxury fruit, does anyone actually want one?
Before going, I had many questions:
Why do Japanese Square Watermelons exist?
How are the grown?
Do you eat them?
What do they taste like?
How much do they cost?
I asked the son of the man who started it all, Yamashita-san.
He took over for his father and continues his legacy of growing the perfect square watermelon.
The story:
About 45 years ago in Japan, ice cream and beverages started to compete with watermelons in the summer, and Zentsuji's Yamashita-san, who didn't want to give up making watermelons, decided to make the square watermelon to compete with those new favorites. Unfortunately, the costs were too high so they changed strategy to make them for display purposes. Stores would gladly pay more for it while customers did not want to pay more to eat them.
Over the years, his son took over and he stuck with it – and now the SQUARE WATERMELON of ZENTSUJI is world famous!
I'll take you to the farm where you'll see the metal and glass box they're grown in.
The we go to the cooperative warehouse where local farmers process the watermelons for distribution around Japan and the rest of the world.
Facts about the Square Watermelon:
* They're only grown in Zentsuji where they are both trademarked and patented.
* Zentsuji produces about 200 annually.
* They cost between 10,000 and 20,000 yen in Tokyo but depending on the market forces, prices can rise to as high as 90,000 yen for one!
* How big are they? They're 18 x 18cm so they can fit on the shelf if a refrigerator.
* The harvest starts at the end of June and lasts to the middle of July.
How to get to Zentsuji:
There are a few daily flights to Takamatsu from Narita (Tokyo) with JETSTAR Airlines.
From Takamatsu Airport, take a bus to the JR Train Station then a local train to Zentsuji / 30 minutes.

In this episode, John travels from Tokyo to Kagawa Prefecture and the Sakuki region for handmade bowls of udon noodles and soup. Let's explore the kitchen, watch them cook and serve like pros -- and of course EAT, EAT and EAT!
What makes UDON better than RAMEN?
★ It's healthier. The soup is not as oily.
★ The noodles are thicker.
★ It's cheaper!
★ Tempura!! Pick your side dishes.
★ It tastes great cold (bukkake udon) perfect for summer.
★ Customize it any way you like in the self-serve style.
How to Make Udon (Sanuki Style):
INGREDIENTS
Wheat Flour / 500g
Salt / 15g
Water / 240cc or 1 cup
(makes 3-4 Servings)
- Mix and knead the dough.
- Make a ball and roll it out and fold it several time.
- Roll it to about a 4mm thickness.
- Cut into strips of the same thinckness. It will expand in water.
- Flour the noodles and add to boiling water then lower heat for 10-15 minutes. Stir the noodles.
- Add dashi (fish stock stock), ginger and negi -- and your favorite tempura! Chikuwa is the most popular.

Driving in Shikoku Part2
I went to Cape Ashizuri. The cape is a part of the Ashizuri-Uwakai National Park (足摺宇和海国立公園 Ashizuri-Uwakai -kokuritsukōen), and the cliffs here featuring a sparkling white lighthouse are a popular sightseeing point. The small town of Ashizuri lies just north of the cape, at the intersection of two highways. The cape is only a few kilometers away and easily reached on foot along a seaside walking path.

The small town of Ashizuri lies just north of the cape, at the intersection of two highways. The cape is only a few kilometers away and easily reached on foot along a seaside walking path.
