Be overwhelmed with the smell and sights of spices in Asia's largest spice market.
I am standing at the biggest and the largest wholesale spices market in Asia, at Khari Baoli. This overcrowded and bustling street in Old Delhi has shops on both sides. There is a constant loading and unloading here, as the trolley pullers pull their consignments to and fro. The smell and the colors of the street adds to its charm and appeal. These shops sell a wide variety of spices, nuts and herbs.
Spices are used around the world to add flavor and aroma to different dishes. Some provide health benefits as well. Some of these were as valuable as gold in the past. Spices were one of the main reasons why British colonized India. Here is black pepper, primarily grown in South India. Black pepper is used in all cuisines around the world. Cardamom, not used in Western cooking, but is very common in India. It is also used in Ayurvedic medicine. Turmeric is widely used in India cooking. The yellow color that many curry has comes from this. It is believed to be anti-inflammatory and contains anti-oxidants.
Besides spices you can also find an assortment of pickles and chutneys on display. "Pickled jack-fruit, which I have never had before, and some cardamom for tea. I just really like it. It is an amazing atmosphere, it is completely different from South Delhi where I live. So when we have time we come up here just to walk around." Do not let the chaos mislead you, this is a very organized trading center. Even if you are not interested in buying any of the wares, we would still suggest you to come and visit the street. No other city outside of India has embraced Indian cuisine like London. From smaller takeaway places to the most upscale, there are literally hundreds of Indian restaurants in London. Brick Lane is the area most associated with Indian restaurants, but the best Indian food in London is found in other areas. We are at the Cafe Spice Namaste which is near the London Bridge and the Tower of London in the beautiful and historic area of the South Bank area of London. The restaurant caters for a range of people, from the business people and the couples at lunch hour to the families and the functions for a big slap-up meal in the evening.
"The food actually comes from all the regions of India, as many as we can get our hands on from time to time. And we also put a little bit of emphasis, occasionally, on the East. I think what the public needs to understand is there is a difference between spicy and hot. All food can be spicy, but it does not have to be hot. If the spice is cinnamon, cardammon, cloves, nutmeg, peppercorn, mace, those generally add heat to the food. They add spice and flavor. So, a chili is the one that provides the heat. What we are looking for her is the differentiation between spicy and hot. Spice is great, it is all about flavor.
My greatest inspiration comes from women who cook in the house, and you learn from them. And you have got to be very careful how you talk to them, because they do not like giving away their secrets. Leave the menu to us, which most of our regulars do now. They do not look at the menu, they just tell us to handle what we like for them. We try and run a balance between something that is not that heavy and something that is still full of all the flavors.
This is called chicken maharaja. It is a dressed up chicken stuffed with nuts and ready. Lunch time is mostly the office business people in the community around us. In fact - Chandni chowk has the best street food in India
If you ask a Delhiite - where you do you get the best street food of Delhi, answer without a second thought will be chandni chowk.
I have covered best food joints, largely street food in this video. Also find addresses with landmark, so you don’t face any difficulty in reaching there.

A short film on the forgotten Baolis or step-wells of Old and New Delhi, India. Nizamuddin Baoli: Built in the 14th century by Hazrat Nizamuddin Auliya, this step well served as a water reservoir in olden days. Recently, after its 1st renovation in over 700 years it has become a popular hangout for the locals. Delhi houses numerous ancient structures including baolis or step-wells that are now a forgotten part of the city's urban sprawl. While Nizamuddin baoli still has some water in it the others have dried up or even vanished altogether. Those, which have survived the tides of time, are now waiting helplessly for restoration. The popularity of the Nizamuddin baoli is also because of its proximity to the dargah bearing the same name. Although it is illegal and unsafe, many residents have built their houses sticking to the walls of the baoli. With air conditioners jutting out of worn-out walls it becomes more dangerous for the boys to jump in the pool. Rajaon ki baoli: Another magnificent baoli in the capital is the Rajaon ki baoli situated near Adam Khan's tomb in Mehrauli. Daulat Khan built this three-storied marvel in 1516 during the Lodhi reign; which showcases the brilliance of the ancient Indian architecture and engineering. With 12 pillars standing at its borders the baoli is a spectacular structure. The masons earlier used it for some time, which gave it, its name -- Rajaon ki Baoli! What makes this baoli distinct is that its entire structure is subterranean. The outer structure is concealed and on approaching the entrance, only the top floor of the baoli is visible. Gradually, as one moves further, the lower levels come into view. Gandhak ki baoli: About one hundred meters south of the Adam Khan tomb lies another baoli in Mehrauli. It is Gandhak ki baoli, which owes its origin to Iltumish of the slave dynasty. The well gets its name from the sulphur: known as gandhak, in the water; which was known for its medicinal properties. Ranking as the largest in Delhi, the five-tiered Gandhak ki baoli is spread across expansively and has supplied water to the nearby areas for centuries. Also known as the diving well, it was earlier used by the locals for diving. What was the pride of ancient rulers is now in immediate need of revival and restoration. Indian archeologists have tried to restore the water through other means but it has not been a success till now. With its fading charm it is in danger of being forgotten completely like so many other monuments. Red fort Baoli: Further away, the baoli of the famous Red Fort or the Laal Qilla of Delhi is lesser known. The distinct structure of the baoli has steps going down from two sides, which converge at a pit attached to the well. Unlike other step wells this one is fenced-in and locked. In comparison to the others this baoli does not have many visitors, as not many people know of its existence. Perhaps it is because this baoli is locked throughout the year but the one day when it is open to all is the 15th of August - the independence day of India. Many say that it was built in the 14th century whereas the fort is a 17th century construction. The lonesome step well lies silently, witness to countless events of the past. Also, not many people know that the baoli was used as a prison. This is only evident when you visit the baoli as etched on stone are the names of the officers of the Indian National Army who were confined here in 1945 and 46 during the freedom movement. Agrasen ki baoli: In deep contrast to the silence of other baolis, Agrasen ki baoli lies amid business towers and a residential area. Although it is not certain but the credit for building this step-well goes to King Agrasen, which also gives the baoli its name. A 14th century construction, this baoli is lined on both sides with chambers and niches. The 104 steps of the well descend into the well's dried bottom, which has three levels. Being in the middle of a residential area, this baoli has more visitors in comparison to others. 60 meters wide and 15 meters long, this baoli is also in desperate need of renovation like the others. The ancient structures that are an integral part of our heritage need restoration and attention from us today. My dedication in life is to pass on the ancient history of the Holy Land. Following upon many years of travel around the world, which was highlighted by a very exciting emotional and soul-searching meeting with the Dalai Lama, I realized that I had a mission. To pass on the the history of the Holy Land, its religions, and in particular, the birth and development of Christianity. In order to fulfill this "calling" in the best way possible, I studied in depth, visited, and personally experienced each and every important site of the ancient Christians. I studied for and received my first bachelors degree in the ancient history of the Holy Land, and am presently completing my studies for my second degree.(Masters) Parralel to my studies, and in order to earn a living, I was employed for many years in advertising. What I learned there was how to attract the publics attention, generate and, increase interest, and assimilate information. All this I use as tools to describe, explain and deepen the interest in the sites that we visit. From my experience, I have learned that in this way, the Holy Land becomes more than just history, and that the large stones that we see scattered about in dissaray, join together one by one until they become - a Byzantine Church. This also happens when I lead a group of Pilgrims in the Steps of Jesus. We climb to the peak of Mount Precipice, "glide" over the land to the Sea of Galilee, land on the water and "see" the miracle which enfolds before us. This is a many faceted experience. Not only history which you will remember and cherish, but an experience which I hope will be inplanted in your hearts and minds, and will accompany you all the days of your life.

It is an amazing atmosphere, it is completely different from South Delhi where I live. So when we have time we come up here just to walk around." Nizamuddin Baoli:
Built in the 14th century by Hazrat Nizamuddin Auliya, this step well served as a water reservoir in olden days. Recently, after its 1st renovation in over 700 years it has become a popular hangout for the locals. Delhi houses numerous ancient structures including baolis or step-wells that are now a forgotten part of the city's urban sprawl. While Nizamuddin baoli still has some water in it the others have dried up or even vanished altogether. Those, which have survived the tides of time, are now waiting helplessly for restoration.
The popularity of the Nizamuddin baoli is also because of its proximity to the dargah bearing the same name. Although it is illegal and unsafe, many residents have built their houses sticking to the walls of the baoli. With air conditioners jutting out of worn-out walls it becomes more dangerous for the boys to jump in the pool.
Rajaon ki baoli:
Another magnificent baoli in the capital is the Rajaon ki baoli situated near Adam Khan's tomb in Mehrauli. Daulat Khan built this three-storied marvel in 1516 during the Lodhi reign; which showcases the brilliance of the ancient Indian architecture and engineering. With 12 pillars standing at its borders the baoli is a spectacular structure. The masons earlier used it for some time, which gave it, its name -- Rajaon ki Baoli!
What makes this baoli distinct is that its entire structure is subterranean. The outer structure is concealed and on approaching the entrance, only the top floor of the baoli is visible. Gradually, as one moves further, the lower levels come into view.
Gandhak ki baoli:
About one hundred meters south of the Adam Khan tomb lies another baoli in Mehrauli. It is Gandhak ki baoli, which owes its origin to Iltumish of the slave dynasty. The well gets its name from the sulphur: known as gandhak, in the water; which was known for its medicinal properties. Ranking as the largest in Delhi, the five-tiered Gandhak ki baoli is spread across expansively and has supplied water to the nearby areas for centuries. Also known as the diving well, it was earlier used by the locals for diving.
What was the pride of ancient rulers is now in immediate need of revival and restoration. Indian archeologists have tried to restore the water through other means but it has not been a success till now. With its fading charm it is in danger of being forgotten completely like so many other monuments.
Red fort Baoli:
Further away, the baoli of the famous Red Fort or the Laal Qilla of Delhi is lesser known. The distinct structure of the baoli has steps going down from two sides, which converge at a pit attached to the well. Unlike other step wells this one is fenced-in and locked. In comparison to the others this baoli does not have many visitors, as not many people know of its existence. Perhaps it is because this baoli is locked throughout the year but the one day when it is open to all is the 15th of August - the independence day of India.
Many say that it was built in the 14th century whereas the fort is a 17th century construction. The lonesome step well lies silently, witness to countless events of the past. Also, not many people know that the baoli was used as a prison. This is only evident when you visit the baoli as etched on stone are the names of the officers of the Indian National Army who were confined here in 1945 and 46 during the freedom movement.
Agrasen ki baoli:
In deep contrast to the silence of other baolis, Agrasen ki baoli lies amid business towers and a residential area. Although it is not certain but the credit for building this step-well goes to King Agrasen, which also gives the baoli its name. A 14th century construction, this baoli is lined on both sides with chambers and niches. The 104 steps of the well descend into the well's dried bottom, which has three levels.
Being in the middle of a residential area, this baoli has more visitors in comparison to others. 60 meters wide and 15 meters long, this baoli is also in desperate need of renovation like the others.
The ancient structures that are an integral part of our heritage need restoration and attention from us today.

The overall appearance seems to be very chaotic but in reality it is very well managed if kept in consideration the fact that such a large amount of trading of small items are carried out daily.
The market has a good reputation for being the best in Delhi as far as quality and price of any item here is concerned. Though it is a wholesale market but still one can purchase small quantities of any items widely displayed on all the shops. Apart from being a cook's delight, the market also sells wide range of other items like household soaps, varieties of rice, nuts and sugar among the many items.

Parralel to my studies, and in order to earn a living, I was employed for many years in advertising. What I learned there was how to attract the publics attention, generate and, increase interest, and assimilate information. All this I use as tools to describe, explain and deepen the interest in the sites that we visit. From my experience, I have learned that in this way, the Holy Land becomes more than just history, and that the large stones that we see scattered about in dissaray, join together one by one until they become - a Byzantine Church. This also happens when I lead a group of Pilgrims in the Steps of Jesus. We climb to the peak of Mount Precipice, "glide" over the land to the Sea of Galilee, land on the water and "see" the miracle which enfolds before us. This is a many faceted experience. Not only history which you will remember and cherish, but an experience which I hope will be inplanted in your hearts and minds, and will accompany you all the days of your life.

Khari biscuits
An evergreen accompaniment for chai , the Khari Biscuit or Puff Pastry Biscuit is something that many people think to be a speciality that only bakeries can produce. Here we show you how to start from scratch and make wonderfully crisp and flaky Khari Biscuits right at home. The gluten, vinegar and a liberal dose of margarine are essential ingredients to get the right texture, so make sure you do not omit any of them while preparing the recipe. Besides tea you can enjoy Khari Biscuits with a spread of one of your favourite Jams or Dips/Sauces .
Preparation Time: 15 minutes.
Cooking Time: Nil.
Makes 16 khari biscuits.
Baking Temperature: 180°C (360°F) 160°C (320°F).
Baking Time: 1 hour.
2 cups plain flour (maida)
1 tsp salt
1½ tsp vinegar
1½ tsp gluten
¾ cup Lily puff margarine
Plain flour (maida) for dusting and rolling
1. Combine the plain flour, salt, vinegar and gluten in a deep bowl, mix well and knead into a stiff dough using approx. 1 cup of ice cold water. Make sure you knead the dough, while stretching it for 10 to 15 minutes on a clean dry surface till it is smooth and glossy.
2. Dust a clean, flat surface with a little plain flour, place the dough on it and roll it using a thick rolling pin into a 300 mm. × 150 mm. (12” x 6”) rectangle
3. Put dollops of the margarine evenly on two-third portion of the rectangle while leaving little space at its circumference.
4. Fold the portion with no margarine side till 2/3 rd of the rectangle and then fold the margarine portion over it so that both the sides overlap each other perfectly.
5. Press and seal the two open sides using your fingertips.
6. Again dust the flat surface with a little plain flour, place the dough on it and again roll it lightly using a thick rolling pin into a 300 mm. × 150 mm. (12” x 6”) rectangle.
7. Again fold one side of the rectangle till the centre, then fold the other side overlapping the first side. Make sure the edges are also overlapping each other perfectly.
8. Repeat steps 6 and 7 one more time.
9. Dust the flat surface once again with a little plain flour, place the dough on it and roll it using a thick rolling pin into a 300 mm. × 150 mm. (12” x 6”) rectangle.
10. Now bring both the sides together in the centre but do not overlap them but seal them and press it lightly.
11. Overlap the two folded sides over each other to form a book.
12. Wrap it with cling wrap and refrigerate for 10 to 15 minutes.
13. Remove the cling wrap, dust the flat surface once again with a little plain flour and roll it using a thick rolling pin into a 250 mm. × 150 mm. (10” x 6”) rectangle.
14. Trim and even all the sides lightly using a sharp knife.
15. Cut lengthwise into 1" thickness to get 8 equal pieces using a sharp knife, while dusting the knife with plain flour at regular intervals.
16. Now cut each piece into halve horizontally to get 16 pieces in all.
17. Place all the pieces on a baking tray at regular intervals and bake in a pre-heated oven at 180°C (360°F) for 25 minutes.
18. Lower the temperature to 160°C (320°F) and bake again for 25 minutes.
19. Cool slightly and serve warm or store it in an air tight container. Use as required.

3. Put dollops of the margarine evenly on two-third portion of the rectangle while leaving little space at its circumference.
4. Fold the portion with no margarine side till 2/3 rd of the rectangle and then fold the margarine portion over it so that both the sides overlap each other perfectly.
5. Press and seal the two open sides using your fingertips.
6. Again dust the flat surface with a little plain flour, place the dough on it and again roll it lightly using a thick rolling pin into a 300 mm. × 150 mm. (12” x 6”) rectangle.
7. Again fold one side of the rectangle till the centre, then fold the other side overlapping the first side. Make sure the edges are also overlapping each other perfectly.
8. Repeat steps 6 and 7 one more time.
9. Dust the flat surface once again with a little plain flour, place the dough on it and roll it using a thick rolling pin into a 300 mm. × 150 mm. (12” x 6”) rectangle.
10. Now bring both the sides together in the centre but do not overlap them but seal them and press it lightly.
11. Overlap the two folded sides over each other to form a book.
12. Wrap it with cling wrap and refrigerate for 10 to 15 minutes.
13. Remove the cling wrap, dust the flat surface once again with a little plain flour and roll it using a thick rolling pin into a 250 mm. × 150 mm. (10” x 6”) rectangle.
14. Trim and even all the sides lightly using a sharp knife.
15. Cut lengthwise into 1" thickness to get 8 equal pieces using a sharp knife, while dusting the knife with plain flour at regular intervals.
16. Now cut each piece into halve horizontally to get 16 pieces in all.
17. Place all the pieces on a baking tray at regular intervals and bake in a pre-heated oven at 180°C (360°F) for 25 minutes.
18. Lower the temperature to 160°C (320°F) and bake again for 25 minutes.
19. Cool slightly and serve warm or store it in an air tight container. Use as required.

"Love Yourself" is an anti-bullying song that I wrote for my daughter, Nia, after she was bullied at school. I quickly resolved the issue, but I saw how the bullying had a negative affect on my daughter. As a result, I decided to create a song about the importance of self-love: an anthem with positive affirmations that children could recite daily, reminding themselves that they are beautiful, worthy, priceless, and brilliant.
I wanted to include special needs children in the video after speaking with my friend, Alicia Coleman, whose daughter "Ava," is autistic. I learned that special needs children are frequently targeted and bullied. So I invited children with various disabilities including Hearing Impairments, Autism, Down Syndrome, Dyslexia, PTSD and ADHD and to appear in the video along with their siblings.
I hope this song and video empowers children who have been abused, bullied, and belittled, to build up their confidence, embrace who they are, and love themselves unconditionally.

This slideshow features several plus-size women who have been emotionally and physically abused because of their weight. I wanted to dedicate this slideshow to the women who have survived abuse. Ladies, never settle for a relationship in which your mate is disrespecting you because of your body size or shape. True love doesn't come with a weight limit.
