Varanasi also known as Benares , Banaras, or Kashi is an North Indian city on the banks of the Ganga in Uttar Pradesh, 320 kilometres (200 mi) south-east of the state capital, Lucknow. It is the holiest of the seven sacred cities (Sapta Puri) in Hinduism and Jainism, and played an important role in the development of Buddhism. Some Hindus believe that death at Varanasi brings salvation. It is one of the oldest continuously inhabited cities in the world. Varanasi is also known as the favourite city of the Hindu deity Lord Shiva . It has been mentioned in the Rigveda that this city in older times was known as Kashi .][not in citation given]
The Kashi Naresh (Maharaja of Kashi) is the chief cultural patron of Varanasi, and an essential part of all religious celebrations.The culture of Varanasi is closely associated with the Ganges. The city has been a cultural centre of North India for several thousand years, and has a history that is older than most of the major world religions. The Benares Gharana form of Hindustani classical music was developed in Varanasi, and many prominent Indian philosophers, poets, writers, and musicians live or have lived in Varanasi. Gautama Buddha gave his first sermon at Sarnath, located near Varanasi.
Varanasi is the spiritual capital of India. It is often referred to as "the holy city of India", "the religious capital of India", "the city of Shiva", and "the city of learning". Scholarly books have been written in the city, including the Ramcharitmanas of Tulsidas. Today, there is a temple in the city, the Tulsi Manas Mandir. The current temples and religious institutions in the city are dated to the 18th century.[9] One of the largest residential universities of Asia, the Banaras Hindu University (BHU), is located here.
Varanasi has been chosen as one of the heritage cities for HRIDAY - Heritage City Development and Augmentation Yojana scheme of Government of India.

Varanasi (Hindustani pronunciation: [ʋaːˈraːɳəsi] ( listen)), also known as Benares , Banaras (Banāras [bəˈnaːrəs] ( listen)), or Kashi (Kāśī [ˈkaːʃi] ( listen)), is an North Indian city on the banks of the Ganga in Uttar Pradesh, 320 kilometres (200 mi) south-east of the state capital, Lucknow. It is the holiest of the seven sacred cities (Sapta Puri) in Hinduism and Jainism, and played an important role in the development of Buddhism. Some Hindus believe that death at Varanasi brings salvation. It is one of the oldest continuously inhabited cities in the world. Varanasi is also known as the favourite city of the Hindu deity Lord Shiva . It has been mentioned in the Rigveda that this city in older times was known as Kashi .][not in citation given]
The Kashi Naresh (Maharaja of Kashi) is the chief cultural patron of Varanasi, and an essential part of all religious celebrations.The culture of Varanasi is closely associated with the Ganges. The city has been a cultural centre of North India for several thousand years, and has a history that is older than most of the major world religions. The Benares Gharana form of Hindustani classical music was developed in Varanasi, and many prominent Indian philosophers, poets, writers, and musicians live or have lived in Varanasi. Gautama Buddha gave his first sermon at Sarnath, located near Varanasi.
Varanasi is the spiritual capital of India. It is often referred to as "the holy city of India", "the religious capital of India", "the city of Shiva", and "the city of learning". Scholarly books have been written in the city, including the Ramcharitmanas of Tulsidas. Today, there is a temple in the city, the Tulsi Manas Mandir. The current temples and religious institutions in the city are dated to the 18th century.[9] One of the largest residential universities of Asia, the Banaras Hindu University (BHU), is located here.
Varanasi has been chosen as one of the heritage cities for HRIDAY - Heritage City Development and Augmentation Yojana scheme of Government of India.

Varanasi, located in North India, is one of the most sacred religious cities in all of India. It's a holy place, located next to the Ganges River. Dying in Varanasi is considered sacred, yet at the same time it's a city where people come to celebrate life and to splash in the water of the Ganges.
In the Varanasi travel guide I'll go over some of the top things to do in Varanasi. Unlike other huge cities like Delhi (http://www.youtube.com/watch?v=huipm50W2bw), which boast an enormous amount of attractions to see and things to do, Varanasi is more about just being there. You don't have to rush from place to place seeing the sights, but it's all about hanging out either along the Ganges River or within the narrow Varanasi lanes and exploring, observing, and just watching. Spending the time just to sit and watch is one of the most rewarding things to do in Varanasi, India.
At the beginning of this video I first start the day at about 6:30 am with a leisure boat ride along the Ganges River. It's one of the most popular things to do, and for a good reason; Seeing the bank of the Ganges River from being in the river offers a truly magical glimpse into the life and death that takes place in the morning. Fog is especially common in the winter, and the day I went the fog was thick. Along with taking a boat in the Ganges River in Varanasi, another great way to explore is just on foot along the ghats. A ghat is a series of steps which lead down to the river. They offer a nice place to walk or a place to sit and watch. There are ghats throughout Varanasi. Dashashwamedh Ghat is the main one, but there are also two burning ghats where they burn bodies as well. One day while I was walking past the smaller of the two burning ghats in Varanasi, I was able to observe a funeral taking place where they sunk a body into the bottom of the Ganges River. Along with the rituals that went along with it, it was amazing to see.
If you're not along the river in Varanasi, the narrow ancient lanes are a great place to explore. You'll find all sorts of stores and shops selling cloth, spices, conveniences and some food stalls as well. Varanasi desserts are particularly famous, but also try round rotis and the local paan mouth chew. Within the lanes of Varanasi you'll also find Hindu shrines and temples like the sacred Kashi Vishwanath Temple. The line to enter the temple can be seriously long and the security is extremely tight in the area. One of the best ways to get around Varanasi, when you're on the main roads, is by taking a bicycle rickshaw. You'll be amazed at the places you can fit, but it's always a fun ride. Don't forget to stop on the side of the street to indulge is some delicious Varanasi street food while you're at it.
Finally, no trip to Varanasi is complete without mentioning the nightly aarti puja prayer ceremony, which is a ceremony dedicated to the gods of the Ganges River. This nightly ritual includes a line of holy brahmin who all perform rituals using fire, incense, and motion to bless the night. It's quite an event and something interested to witness.

In Part Three of my India travel video guide, I travel to Varanasi, one of the holiest cities in the Hindu religion. In this video I visit the famous ghats, or steps, which lead into the Ganges River, the holy river where visitors and locals come every day to wash themselves and perform religious ceremonies.
It is on the banks of the Ganges where thousands of bodies are burned every year. Having your body burned and its ashes spread here is considered to be one of the holiest places in the world to do so in the Hindu religion.
After exploring the riverfront, I stop by a local music shop to play tabla with a local sitar player. Though I was a drummer in a past life, the tabla are a completely different style of playing than I was used to -- you've been warned.
I finish up by taking a morning boat ride in the Ganges river. The colors you see on the river and on the buildings towering above are spectacular as the sun rises in the morning, and it was one of my most memorable experiences of the entire trip.

Traveling India: Varanasi. Known as India's Holy City, Varanasi is situated on the banks of the sacred Ganges river and is one of the oldest continuously inhabited cities in the world.
During our stay here, we certainly experienced ups and downs. There were serene mornings spent sipping masala chai and gazing into beautiful sunrises over the ganges... combined with intermittent moments of me on the edge of freaking out from the intense noise, traffic and overcrowding. As anywhere in India, beware of getting caught in crowded narrow pathways with men, young boys or bulls, where groping and goring can occur.
We found the best masala chai at the rooftop restaurant of Puja guest house, they also have the best 360 degree view of the ganges and city. However we found the rooms at Ganpati Guest House to be in better condition, though we still returned to Puja for masala chai and the views.
Niyati Cafe is an excellent pure vegetarian restaurant, Ravi Prakash is the chef and owner. He makes each dish fresh to order, the food is bursting with flavorful authentic Indian spices and at the best prices in town, Niyati Cafe is a winner.
Varanasi has some of the best street bazaar shopping. If visiting here, allow for plenty of time to enjoy browsing the unique items in the many local shops. Shopkeepers are eager to show you loads of scarves, saris, bangles, and more!

When you think India, if you think spicy food, snake charmers, dodging cows, the Taj Mahal, and total chaos- you’re thinking about Northern India. It's an adventure waiting to happen, and will leave you wondering why it only accounts for 1% of world tourism.

Welcome to Delhi. Say goodbye to your personal space. It’s crowded, it’s overwhelming, and definitely exhausting. One day here can feel like an entire week. The only way you’ll have any fun is to just put down the Purell and join the party.
Instead of going straight to Agra to see the Taj Mahal, first I head west to hang with some locals in Rajasthan. Here, the people are welcoming, the desert is sprawling, and the camels command the streets. And it turns out that the cows aren’t the only things Hindus hold sacred.
Karni Mata Rat Temple. Over 20,000 rats call this Hindu temple home, and Indians come here to pay their respects, as these rats are believed to be the reincarnations of ancestors. Shoes aren’t allowed inside, so plan ahead and bring two pairs of socks, and if you’re brave enough, it’s considered an honor to share a bowl of milk with the rats.
Most travelers who come to Jaisalmer opt for the camel safari across the Thar Desert, leading you to a good spot to view the sun setting over the Pakistani border, which happens to be heavily armed, so always keep your cool.
The food is awesome. It completely blew me away. I honestly don’t know much about Indian food, and half the time I didn’t know what I was ordering, but with the intense spices and pungent flavors, every meal seemed to be better than the next, from high end restaurants to local cafes. TripAdvisor and Lonely Planet usually hit the mark with their recommendations, and asking for whatever the chef recommends almost always rewarded me with a memorable meal.
Get on a bus and head north, and you’ll eventually reach Rishikesh- a city where you won’t find meat on any menu, and is overrun by hippie backpackers, weird yoga people, and unruly monkeys. It’s the gateway to the Himalayas.
Oh my God whatever you do.. don’t feed the monkeys. Rabies is a very serious risk in India, and medical treatment to prevent it is very long, and very painful.
After experiencing my share of incredible extremes here in India, my journey brings me to Varanasi, Hindu’s most holy city on the banks its most holy river, The Ganges. Varanasi is a city that was built on and still thrives on traditions. Traditions that may seem strange and shocking, at first, but spend enough time here and you’ll come to appreciate the power of this place.
For many people, Varanasi is their final resting place. Hindus believe that dying here will release you from the cycle of rebirth. For families that can afford it, elaborate cremation ceremonies are carried out in publi c view along the river, their ashes being released into the water. For the vast majority, however, bodies are weighted with stones and sunk to the bottom. Welcome to Delhi. Say goodbye to your personal space. It’s crowded, it’s overwhelming, and definitely exhausting. One day here can feel like an entire week. The only way you’ll have any fun is to just put down the Purell and join the party.
Instead of going straight to Agra to see the Taj Mahal, first I head west to hang with some locals in Rajasthan. Here, the people are welcoming, the desert is sprawling, and the camels command the streets. And it turns out that the cows aren’t the only things Hindus hold sacred.
Karni Mata Rat Temple. Over 20,000 rats call this Hindu temple home, and Indians come here to pay their respects, as these rats are believed to be the reincarnations of ancestors. Shoes aren’t allowed inside, so plan ahead and bring two pairs of socks, and if you’re brave enough, it’s considered an honor to share a bowl of milk with the rats.
Most travelers who come to Jaisalmer opt for the camel safari across the Thar Desert, leading you to a good spot to view the sun setting over the Pakistani border, which happens to be heavily armed, so always keep your cool.
The food is awesome. It completely blew me away. I honestly don’t know much about Indian food, and half the time I didn’t know what I was ordering, but with the intense spices and pungent flavors, every meal seemed to be better than the next, from high end restaurants to local cafes. TripAdvisor and Lonely Planet usually hit the mark with their recommendations, and asking for whatever the chef recommends almost always rewarded me with a memorable meal.
Get on a bus and head north, and you’ll eventually reach Rishikesh- a city where you won’t find meat on any menu, and is overrun by hippie backpackers, weird yoga people, and unruly monkeys. It’s the gateway to the Himalayas.
Oh my God whatever you do.. don’t feed the monkeys. Rabies is a very serious risk in India, and medical treatment to prevent it is very long, and very painful.
After experiencing my share of incredible extremes here in India, my journey brings me to Varanasi, Hindu’s most holy city on the banks its most holy river, The Ganges. Varanasi is a city that was built on and still thrives on traditions. Traditions that may seem strange and shocking, at first, but spend enough time here and you’ll come to appreciate the power of this place.
For many people, Varanasi is their final resting place. Hindus believe that dying here will release you from the cycle of rebirth. For families that can afford it, elaborate cremation ceremonies are carried out in publi c view along the river, their ashes being released into the water. For the vast majority, however, bodies are weighted with stones and sunk to the bottom. These traditions are in harmony with daily bathing rituals- a ritual that is said to remove sins and purify souls.

Now I'm not the biggest sweets fan, in fact, most of the time I'd prefer to fill up on extra rice and curry then save room for dessert. But since Varanasi is a city that's gained a reputation for its high quality of rich Indian desserts, I decided I better have a sample before leaving.
After sampling the Varanasi Indian desserts I definitely wanted to head straight to the Kash Chaat Bhandar (http://migrationology.com/2013/08/indian-chaat-at-the-kashi-chaat-bhandar-in-varanasi/) to get something salty in my mouth!
There are many Indian desserts vendors throughout Varanasi, but right around the Main Ghat within the narrow lanes, you'll find plenty of suitable options. The sweets are very recognizable as they are always housed in clean and bright cabinets that nearly look like shrines themselves. Having no clue what to order, I simply stopped by and asked the vendor to choose me a mixed box. He pulled out a box and after a moment of thinking he filled it with six of his favorites. My box of Indian desserts included laddu, kalakand, lal peda, sandesh, and peda, all of these being quite famous North Indian sweets. They were all similar in color and texture, and appearance from the outside.
So I first began by sampling the laddu. The laddu was very nutty and a little sweet, and it really almost tasted like dry peanut butter. It was about the size of a ping pong ball and brownish in color. Next up was the lal peda, an Indian dessert that looked like a little bit of cookie dough in both appearance and texture. It was very creamy and not quite as sweet as the previous. Next was the kalakand (क़लाक़न्द), another fudge looking Indian sweet. The vendor said that it was very light, though I thought it was still a little rich. It was topped with cashew nuts to give it a nice fragrance and flavor. The sandesh was very similar to the other desserts. The peda was the final sweet, a very famous and popular Indian dessert to specifically eat in Varanasi. As I was eating the peda, a couple of cow came out of nowhere to nearly stampede us. It was definitely a rush as the cows came rushing through and nearly hit myself and my wife, but luckily we were spared and continued on sampling out box of sweets.
As I had suspected, the Indian desserts weren't my favorite as they were so incredibly rich and sweet. However, they were good and I do think one should sample them when in Varanasi!

Idli Sambar - Eating Steamed Rice Cakes on a Narrow Lane in Varanasi

Though it's originally a South Indian food (http://www.youtube.com/watch?v=AZY1bYzN0lM), idli sambar is now available all over India. Since I wasn't able to travel to south India this time, I decided to eat a dish called idli sambar while I was in Varanasi, India. The dish is popular especially as a breakfast food (this being because it's quite easy to digest and goes down well), but you'll be able to find it for a snack or light meal throughout the day as well. While in Varanasi, India, at a small lane side street stall was where I found some cheap and tasty idlis.
What is idli sambar? There are two different parts that make it up. The first is small little cakes which are made from rice flour and black lentil flour. The flour is made into a batter and allowed to ferment just slightly, similar to a dosa batter from south India. After that the batter is then steamed into little cakes using a special idli steamer. It sort of looks like white cornbread, and it has a similar airy texture. The next part is the sambar and chutney which is served as a side flavoring addition dish. The sambar sauce and chili sauces and dal is all ladles over the plain idli rice cakes to give them some wonderful flavor. This particular sambar was a sauce made from coconut, and it was excellent.
I enjoyed this plate of idli sambar at a small hole in the wall restaurant in Varanasi, India, known as Maa Laxmi Dosa Corner. The vendor specialized in making a variety of south Indian specialities including dosas, uttapams, and idlis. Located in a narrow walking street of the ancient city, he served most of his customers standing in the lane. However, he did have a tiny seating area where one could eat while seated - though I think it would have been a little on the cramped side.
If you want to eat at Maa Laxmi Dosa Corner when you're in Varanasi, first go to the Main Ghat. Facing the Ganges River, make a right into the narrow alleys just behind the small fresh market area. Navigate your way down the lane until you reach the stall, should only take about 5 - 10 minutes to get there. Enjoy his dosas and also be sure to eat a delicious plate of idli sambar.

In Part One of my India travel video guide, I begin my travels in India with Calcutta (Kolkata). India had long been on my bucket list of countries to travel to in the world, and in April, 2013, I finally made it there, starting with Calcutta, with no better reason than the fact was I knew so little about that part of the country.
Calcutta was once the capital of the British Empire in India, and today it's home to over 14 million people, which means the city itself is a crowded, dense, loud, but endlessly fascinating place to explore. In this video I explore the alleyways and grand buildings that make up B.B.D. Bagh, the area where the city was founded.
After checking out a parade (a very common occurrence I was to later learn) and grabbing a roadside cup of chai, I stop at the home of famed poet and writer Rabindranath Tagore, the first Indian to win the Nobel Prize, and whose home is a great place to learn about Calcutta's cultural history.

In Part Two of my India travel video guide, I travel to Bodhgaya, one of the most sacred places in all of the Buddhist religion. It was at this location 2,500 years ago that a young Prince Siddhartha sat under a fig tree, meditated and found enlightenment, thus becoming the Buddha.
I start off by visiting the many temples that have been built by various Buddhists from around the world, including temples dedicated to Buddhists living in China, Japan, Tibet and Nepal. I then visit the Tergar Monastery, one of the largest Buddhist complexes in the region, which is a short walk from the main road.
I then head to the sacred Mahabodhi Temple complex in the center of town. At sunset it is a scenic, peaceful time to explore the grounds, which include a large monument built at the Bodhi Tree itself, as well as a sprawling garden area where people come from around the world to meditate.

In Part Three of my India travel video guide, I travel to Varanasi, one of the holiest cities in the Hindu religion. In this video I visit the famous ghats, or steps, which lead into the Ganges River, the holy river where visitors and locals come every day to wash themselves and perform religious ceremonies.
It is on the banks of the Ganges where thousands of bodies are burned every year. Having your body burned and its ashes spread here is considered to be one of the holiest places in the world to do so in the Hindu religion.
After exploring the riverfront, I stop by a local music shop to play tabla with a local sitar player. Though I was a drummer in a past life, the tabla are a completely different style of playing than I was used to -- you've been warned.
I finish up by taking a morning boat ride in the Ganges river. The colors you see on the river and on the buildings towering above are spectacular as the sun rises in the morning, and it was one of my most memorable experiences of the entire trip.

In part four of my video travel guide series to India, I travel to Darjeeling, the famed hill station known for its views and famous tea plantations. The city itself is nestled in the Himalaya mountains between Nepal and Northeast India, and is a popular place for people to stay before heading into the mountains for a trek.
In this video I visit Observatory Hill, home to the temple where it is thought Darjeeling got its name. Today there are several shrines there, thousands of prayer flags decorating the trees, and even a temple cave.
I then head to Happy Valley Tea Estate, one of the only tea plantations actually located in town, where I explore the grounds and sit down for afternoon tea with a local picker. Despite what I always assumed to be an acute sense of smell, I had difficulty picking out the better tea leaves amongst the options, but I gave it a try anyway.

In Part Five (my last) of my India travel video guide, I trek into the Himalayas along the famed Singalila Ridge, a picturesque trail that winds its way between Nepal and India, and through multiple small Himalayan villages. The highlight is the morning sunrise over the third highest mountain in the world, Mount Kanchenjunga, as well the views of Mount Everest in the far distance.

Malaiyo is a popular winter sweet dessert in Varanasi, India. Check out my website for more food http://migrationology.com/
I arrived to Varanasi, India, in the winter, in early February, and when I was walking around on the streets I noticed a huge pan of something yellow that almost looked like soap suds. There wasn't just a single street food vendor selling this stuff, there were many many of them and they always attracted quite a few customers who would stop on the side of the road, grab a quick dish, chow it down furiously and then continue on their way. So one day while I was in Varanasi, I decided it was time to try it for myself. During this video, I had no clue what it was or what it included, I was just curious to sample it and see what it all included. So I found a vendor with a fresh supply and he informed me that it was called malaiyo.
Malaiyo is a seasonal famous Varanasi dessert, it's available throughout the state of Uttar Pradesh but normally only in the winter. It's a milk dairy based dessert, almost like a pudding that's been fluffed with air. I ordered a clay bold full of malaiyo, which cost just 10 Rupees, and I was all ready to dig in. It was extremely light and fluffly, really the texture was about like thick soap suds. It was like eating sweet egg bubbles. Along with the creamy foam, the malaiyo was seasoned nicely with lots of sugar and I could really detect a lot of cardamon, a spice that's commonly added to desserts in India. Finally, each dish was sprinkled with a few pistachios to make it complete.
Overall, I really enjoyed my first taste of Indian malaiyo. It's not something I would eat everyday, but I sure loved it. It was extremely light, offered zero filling for the stomach but just tasted good and was a nice sweet treat while walking through the chaotic streets of Varanasi, India.

While Varanasi, India, is extremely famous for being one of the holiest most sacred cities in all of India, it's also a pretty amazing city if you're looking to eat. Along the Ganges river you'll find a few snacks and random street food vendors, but to get the best food you either have to explore the narrow lanes in the ancient city or even walk around on the busy streets of the city. Within the lanes you'll find delicious Varanasi sweet shop vendors, things like pav bhaji and potato cutlets among other tasty things.
Right along the main road that lead to the Main Ghat is a Varanasi street food vendor that serves nothing more than fried green peas (known as mutter in Hindi). He serves so many green peas that even his hands look as though they've permanently turned to a green tinge. Everyday in the afternoon the vendor rolls up his street food cart and begins to serve his prized delicious peas. After frying them until they are cooked, yet still a little on the crunchy side, he scoops them into a handful of fresh leaves shaped into a bowl, seasons them with some masala spices, salt, chili, and a squeeze of lime juice and then it's all ready to be served. While this simple combination is easy to make may not even sound too good, I'm here to tell you that it was wonderful. Standing in the middle of that incredibly loud street while nibbling on my fried mutter peas that were extremely well spiced and tasty was a wonderful Varanasi street food experience.

Varanasi is an Indian city on the banks of the Ganga in Uttar Pradesh, 320 kilometres (200 mi) southeast of the state capital, Lucknow. It is the holiest of the seven sacred cities (Sapta Puri) in Hinduism, Ravidassia religion and Jainism, and played an important role in the development of Buddhism. Some Hindus believe that death at Varanasi brings salvation.[4] It is one of the oldest continuously inhabited cities in the world. Varanasi is also known as the favourite city of the Hindu deity Lord Shiva as it has been mentioned in the Rigveda that this city at older times was known as Kashi or "Shiv ki Nagri".
The temples and religious institutions in the city now are dated to the 18th century.
The Kashi Naresh (Maharaja of Kashi) is the chief cultural patron of Varanasi, and an essential part of all religious celebrations. The culture of Varanasi is closely associated with the Ganges. The city has been a cultural center of North India for several thousand years, and has a history that is older than most of the major world religions. The Benares Gharana form of Hindustani classical music was developed in Varanasi, and many prominent Indian philosophers, poets, writers, and musicians live or have lived in Varanasi. Gautama Buddha gave his first sermon at Sarnath located near Varanasi.
Varanasi is the spiritual capital of India. Scholarly books have been written in the city, including the Ramcharitmanas of Tulsidas. Today there is a temple of his namesake in the city, the Tulsi Manas Mandir. One of the largest residential universities of Asia the Banaras Hindu University is located here. Varanasi is often referred to as "the holy city of India", "the religious capital of India", "the city of shiva", and "the city of learning".

Varanasi has an own culture of fine art and literature. Renowned Indian writers have lived in the city: Kabir, Ravidas and Tulsidas, who wrote much of his Ram Charit Manas here, Kulluka Bhatt, who wrote the best known commentary of Manusmṛti here in the 15th century,[96] and Bharatendu Harishchandra. Later writers have included Jaishankar Prasad, Acharya Shukla, Munshi Premchand, Jagannath Prasad Ratnakar, Devaki Nandan Khatri, Hazari Prasad Dwivedi, Tegh Ali, Kshetresa Chandra Chattopadhyaya, Vagish Shastri, Baldev Upadhyaya, Sudama Pandey (Dhoomil) and Vidya Niwas Mishra. Several newspapers and journals are or were published in Varanasi such as Varanasi Chandroday and its successor Kashivartaprakashika, initially a fortnightly, which later became a weekly journal, first published on 1 June 1851.
The main newspaper is Aj, a Hindi-language nationalist newspaper first published in 1920.[98] The newspaper was the bulwark of the Indian National Congress and today is still a major newspaper of Hindi northern India.[98]
Art lovers and historians like Rai Krishnadasa, his son Anand Krishna, musicians Omkarnath Thakur, Ravi Shankar, Bismillah Khan, Girija Devi, Siddheshwari Devi, Lalmani Misra and his son Gopal Shankar Misra,Thakur Rajbhan Singh, N. Varanasi is an Indian city on the banks of the Ganga in Uttar Pradesh, 320 kilometres (200 mi) southeast of the state capital, Lucknow. It is the holiest of the seven sacred cities (Sapta Puri) in Hinduism, Ravidassia religion and Jainism, and played an important role in the development of Buddhism. Varanasi has an own culture of fine art and literature. Renowned Indian writers have lived in the city: Kabir, Ravidas and Tulsidas, who wrote much of his Ram Charit Manas here, Kulluka Bhatt, who wrote the best known commentary of Manusmṛti here in the 15th century,[96] and Bharatendu Harishchandra. Indian street food chaat can be compared to little snacks or a small meal. In this video I sample some delicious things at the Kashi Chaat Bhandar in Varanasi, India.
First of all what exactly is Indian chaat? Well it's normally a snack or can also be a small meal. Usually chaat is savoury rather than sweet overall, but in reality it's normally such a mixture of different flavors that combine salty, sweet, sour, and everything else in one little dish. Chaat is often an Indian street food, but at the same time you'll find a variety of chaats from high end restaurants to street side stalls, such as the Kashi Chaat Bhandar in Varanasi.
So after hearing great things about the Kashi Chaat Bhandar in Varanasi, India, there was no way that I could pass up the opportunity to visit it when I was there. They only begin to open up in the late afternoon at around 4 pm, so it's a very popular local spot for an afternoon Indian street food snack. When I showed up, I honestly had no clue what to order, I had previously eaten quite a few different chaats in Kolkata and in other parts of India, but I wanted to eat the specialty - and each chaat stall has its own recipe - and each region of India has its famous version of Indian street food chaat.
So not knowing what to order, I just asked the owner to give me whatever he thought was the best. The first Indian chaat he handed me was known just as the Kashi speciality chaat. It was a mixture of mostly chickpeas, lots of masala spices, probably a generous portion of clarified butter known as ghee, lime juice, and many other secret ingredients. It tasted like refried beans on steroids - the flavor was insanely good - but it was really rich. I would have enjoyed it even more had it been accompanied by a plate of rice or a chapati to cut the richness. Nevertheless it was stunning. The next Indian street food snack I was handed was dahi puri. I had eaten pani puri, which are little hollow chips filled with tamarind water before, but had never eaten the puris filled with yoghurt. This North Indian street food snack consisted of the little hollow chips filled with all sorts of marvelous spices and then stuffed with thick creamy yoghurt, herbs, and more spices. It was basically a shot of flavorful yoghurt and I really loved it. Finally, to complete my afternoon chaat adventure in Varanasi, he handed me palak chaat. Palak mean spinach, but there was only a little bit of spinach in this dish, and mainly it consisted of crunchy chips that were smothered in thick yoghurt, lots of spices, and garnished with cilantro. Each of these Indian street food chaat provided an explosion of flavor and there were so many different diverse ingredients included in each to make them all give you a unique mouthful of excitement.
Finally, because the vendor was so nice, he handed me a gulab jamun, which is a very famous Indian dessert, and he gave it to me free of charge! Gulap jamun is a curd milk ball that's been soaked in sweet syrup. It's intensely sweet, but wow is it fantastic.

Indian round roti, known as baati chokha, are a popular street food to eat in Varanasi and other parts of North India.
What exactly is a baati chokha? Well to be honest with you, when I stopped by this street food vendor I had absolutely no idea what they were - and that's exactly the reason why I felt compelled to stop and try some. Though the vendor's mouth was packed full of paan mouth chew, I could make out him telling me that they were round rotis. So imagine a roti, which is similar to a tortilla, or just a blob of dough, rounded up into a small ball about the size of a golf ball and grilled. Within the ball were a mix of spices called garam masala. And if that doesn't already sound tasty enough, it was served with an outstanding green chili sauce, a slice of green chili, and a wedge of red onion.
To eat a baati chokha (round roti), you simply tell the vendor how many of the little guys you want and he will place them right off the grill onto your plate. From there he added a scoop of unknown sauce which happened to be delicious, and the extra few condiments. I was actually surprised at just how good these little roti balls were - partly it was the garam masala sauce and partly it was the delicious sauce. Anyway, I really enjoyed these baati chokha's so much that I ended up eating a few of them, amazed at the flavors from such a simple filling treat.
This little Indian street food vendor in Varanasi is located right along the main burning ghat funeral lane. Though I didn't know at first, as soon as I ordered and started to eat, a funeral procession came marching down the lane as I ate. It was quite an exciting and unique street food snack to be eating while funerals marched past every few minutes.
If you visit North India, you should by all means try to sample some round roti baati chokha. They are filling and delicious, and I think they make a fabulous snack or even would be a wonderful breakfast.

(Hindi: किशन महाराज) (September 3, 1923 -- May 4, 2008) was an Indian tabla player who belonged to the Benares gharana of Hindustani classical music.
Early life and background:
Kishan Maharaj was born in Kabir Chaura, Benaras into a family of professional musicians [1]. He was initially trained in classical music by his father,Hari Maharaj. After his father's death, his training was taken over by his uncle, Kanthe Maharaj, a disciple of Baldeo Sahai of the Benares gharana.
Musical career::
Kishan Maharaj, by the time he was eleven, he began performing in concerts. Within a few years, Kishan Maharaj was sharing the stage with stalwarts like Faiyaz Khan, Omkarnath Thakur, Bade Ghulam Ali Khan, Bhimsen Joshi, Vasant Rai, Ravi Shankar, Ali Akbar Khan, Vilayat Khan,and many others.
Maharaj had the ability to play cross-rhythms and produce complex calculations, particularly in tihai patterns. Known as an excellent accompanist, Maharaj was extremely versatile and capable of playing with any accompaniment, be it with the Sitar, Sarod, Dhrupad, Dhamar or even dance.
Maharaj gave a number of solo concerts during his career and also gave `Sangat` to some great dancers like Sri Shambhu Maharaj, Sitara Devi, Natraj Gopi Krishna, and Birju Maharaj.
Among all his compositions, his "Tala Vadya Kacheri" with the Mridangam Vidwan, "Palghat Raghu" stood out. Maharaj extensively toured and participated in several prestigious events across the world, including the Edinburgh festival and the Commonwealth Arts festival in the United Kingdom in 1965.
Maharaj won the Padma Shri in 1973 and the Padma Vibhushan in 2002.[3] For many years, he was married to Savita Devi, daughter of Siddheshwari Devi.
Death and legacy
Kishan Maharaj died on May 4, 2008 at Khajuri near Varanasi at the age of 84.[4]
Maharaj's disciples include Pandit Nandan Mehta, Sukhvinder Singh Namdhari, Kumar Bose, Vineet Vyas (Toronto), Sandeep Das and Balkrishna Iyer, Shubh Maharaj, Pandit Pooran Maharaj (son), Anand "Maharaj" Lahiri, Arvind Kumar "Azad".

Synopsis: banaras is a tale of an unhappy housewife who is beguiled away from the path of domestic virtue into becoming a courtesan. She then reforms herself and atones by serving as the manager of an orphanage for the young daughters of courtesans, the seva-sadan of the Hindi title.
The setting is in the orthodox Hindu religious city of Varanasi, around the turn of the 20th century. The British Raj had introduced Local self-government in India to municipalities, in some cities. The main protagonist is a Brahmin lady named Suman who is married into a loveless union, because of her family's social and financial obligations. She leaves this marriage to become a courtesan, in the "kothas" of the city. In a twist to the tale, the local municipal corporation, a feature of the then-modernising India, orders these to be relocated outside the city, for social morality. Suman finds her social position is causing problems to her sister's marriage. She then joins to serve a home for widows, and teach them religion. When this becomes untenable — as also a stay with her sister who is married to a former admirer — Suman finally joins as a teacher, in a home that houses the children of former courtesans. The home is named Seva Sadan (the house of service), from which the title of the novel seems to be derived.
