Then clean under a cold tap and peel the blackened outer layer. In a dry pan roast the spices on a medium heat for 2 minutes. Bring 3 litres of water to boil and add the whole chicken, the daikon and the roasted onions and ginger. Place the roasted spices into a strainer and position carefully at the bottom of the pot. Lower the heat and simmer for 1 hour. Once an hour has passed remove all the ingredients from the pot and carefully remove the foam from the surface of the broth. Place the chicken to one side to cool. Add the fish sauce, salt and sugar to the broth and leave to simmer for a further 30 minutes. Soak the pho noodles in lukewarm water for 20 minutes. Drain and place into a pot of boiling water for 3 minutes. Drain well and leave to cool. Take a handful of noodles and place into a bowl, adding a small handful of bean sprouts. Tear the chicken into large chunks and place on top. Now pour the broth into the bowl laving a small amount of room for the herbs. Remove the top and bottom of the spring onions and slice very thinly lengthwise. Soak in cold water for 5 minutes until they curl up, then drain and place on top of the chicken. Sprinkle on a teaspoon of chopped spring onions, a couple of sliced chillies, 3 or 4 stems of sweet basil and a handful of dried shallots. Lastly squeeze 1/4 of lime into the broth to balance the flavours and serve with a hoisin and Sriracha dipping sauce. Phở ([fɤ˧˩˧] ( listen)) is a Vietnamese noodle soup, usually served with beef (phở bò) or chicken (phở gà). The soup includes noodles made from rice and is often served with Asian basil, mint leaves, lime, and bean sprouts that are added to the soup by the person who is dining. The dish is associated with the city of Hanoi, where the first phở restaurant opened in the 1920s.

Phở originated in the early 20th century in northern Vietnam. The specific place of origin appears to be southeast of Hanoi in Nam Dinh province, then a substantial textile market, where cooks sought to please both Vietnamese (with local rice noodles, of Oriental origin) and French tastes (cattle were beasts of burden before the French arrived, not usually a source of beef). It was first sold by vendors from large boxes, until the first phở restaurant opened in the 1920s in Hanoi.

The origin of the word was one subject of a seminar^[which?] on phở held in Hanoi in 2003. Some^[who?] believe the origin of the word to be Chinese fen (粉). In addition to rice noodles, many of the spices (such as star anise and cinnamon) are staples of Chinese cuisine.

Then clean under a cold tap and peel the blackened outer layer. In a dry pan roast the spices on a medium heat for 2 minutes. Bring 3 litres of water to boil and add the whole chicken, the daikon and the roasted onions and ginger. Place the roasted spices into a strainer and position carefully at the bottom of the pot. Lower the heat and simmer for 1 hour. Once an hour has passed remove all the ingredients from the pot and carefully remove the foam from the surface of the broth. Place the chicken to one side to cool. Add the fish sauce, salt and sugar to the broth and leave to simmer for a further 30 minutes. Soak the pho noodles in lukewarm water for 20 minutes. Drain and place into a pot of boiling water for 3 minutes. Drain well and leave to cool. Take a handful of noodles and place into a bowl, adding a small handful of bean sprouts. Tear the chicken into large chunks and place on top. Now pour the broth into the bowl laving a small amount of room for the herbs. Remove the top and bottom of the spring onions and slice very thinly lengthwise. Soak in cold water for 5 minutes until they curl up, then drain and place on top of the chicken. Sprinkle on a teaspoon of chopped spring onions, a couple of sliced chillies, 3 or 4 stems of sweet basil and a handful of dried shallots. Lastly squeeze 1/4 of lime into the broth to balance the flavours and serve with a hoisin and Sriracha dipping sauce. Then clean under a cold tap and peel the blackened outer layer. In a dry pan roast the spices on a medium heat for 2 minutes. Bring 3 litres of water to boil and add the whole chicken, the daikon and the roasted onions and ginger. Place the roasted spices into a strainer and position carefully at the bottom of the pot. Lower the heat and simmer for 1 hour. Once an hour has passed remove all the ingredients from the pot and carefully remove the foam from the surface of the broth. Place the chicken to one side to cool. Add the fish sauce, salt and sugar to the broth and leave to simmer for a further 30 minutes. Soak the pho noodles in lukewarm water for 20 minutes. Drain and place into a pot of boiling water for 3 minutes. Drain well and leave to cool. Take a handful of noodles and place into a bowl, adding a small handful of bean sprouts. Tear the chicken into large chunks and place on top. Now pour the broth into the bowl laving a small amount of room for the herbs. Remove the top and bottom of the spring onions and slice very thinly lengthwise. Soak in cold water for 5 minutes until they curl up, then drain and place on top of the chicken. Sprinkle on a teaspoon of chopped spring onions, a couple of sliced chillies, 3 or 4 stems of sweet basil and a handful of dried shallots. Lastly squeeze 1/4 of lime into the broth to balance the flavours and serve with a hoisin and Sriracha dipping sauce. Your food will be featured in my video someday ;) Ingredients (8 servings) For the broth: 1-3kg beef marrow/knuckle bones = 2-6 lb, the more the merrier ^^ 500g beef (outside flank, brisket or cross rib roast) 1 onion 1 tablespoon salt 1 tablespoon sugar For the PHO aroma: 2 piece ginger (size of your thumb), sliced 3 star anise 2 cinnamon sticks 2-3 black cardamons 1 medium onion ( or 3 shallots) Optional: 1 tsp cloves, 1 tsp corriander seeds (or 3 corriander roots) For the bowls: 1kg dried flat rice noodle "banh pho" (2lb dried or 4lb fresh noodle) 300g fresh beef, finely sliced Garnishes 1 medium yellow onion, sliced paper-thin, left to soak for 30 minutes in a bowl of cold water 4 spring onion, white part separated, green part chopped. Then clean under a cold tap and peel the blackened outer layer. In a dry pan roast the spices on a medium heat for 2 minutes. Bring 3 litres of water to boil and add the whole chicken, the daikon and the roasted onions and ginger. Place the roasted spices into a strainer and position carefully at the bottom of the pot. Lower the heat and simmer for 1 hour. Once an hour has passed remove all the ingredients from the pot and carefully remove the foam from the surface of the broth. Place the chicken to one side to cool. Add the fish sauce, salt and sugar to the broth and leave to simmer for a further 30 minutes. Soak the pho noodles in lukewarm water for 20 minutes. Drain and place into a pot of boiling water for 3 minutes. Drain well and leave to cool. Take a handful of noodles and place into a bowl, adding a small handful of bean sprouts. Tear the chicken into large chunks and place on top. Now pour the broth into the bowl laving a small amount of room for the herbs. Remove the top and bottom of the spring onions and slice very thinly lengthwise. Soak in cold water for 5 minutes until they curl up, then drain and place on top of the chicken. Sprinkle on a teaspoon of chopped spring onions, a couple of sliced chillies, 3 or 4 stems of sweet basil and a handful of dried shallots. Lastly squeeze 1/4 of lime into the broth to balance the flavours and serve with a hoisin and Sriracha dipping sauce.
