Chef Peter Gilmore is no stranger to risk-taking when it comes to food. If you are lucky enough to have sampled his dishes at Quay, you'll have a pretty good idea of his perfectionist tendencies. From the now-famous Snow Egg to his Eight-Textured Chocolate Cake, his attention to detail in every bite is nothing short of exquisite. 

Now, as a "sister project" to his new book Organum , which focuses on nature-based cuisine inspired by passionate producers, Gilmore has created a new app that takes readers on a guided tour of eight of his signature dishes (including two previously unreleased recipes).

What's more, the self-titled app tells the story behind each culinary creation -- from the birthplace of the ingredients, their producers, to how each element of the dish is prepped, cooked and plated. 

Bonus factor? It's narrated by Gilmore himself. Yes, the recipes are for the brave (and the aspiring professional chefs among mortals), but it's as much a cartographic exploration of Gilmore's cooking world as an instruction manual. And for the less hands-on afficionados, there is always the Quay booking tool to turn to after the day's gourmet browsing is done.
