Jared Ingersoll is relocating his Barrel and Beast pop-up from Pyrmont to the basement bar at Foveaux restaurant in Surry Hills, in a move that continues to rewrite the traditional restaurant business model.
Ingersoll's nomadic restaurant - which incorporates whole-animal cooking and chef collaboration - will hunker down at Foveaux for winter.
"I have to stay a couple of evolutions ahead. We're already looking at the next site," Ingersoll says.
After running traditional bricks and mortar restaurants, including Danks Street Depot and Cotton Duck, the chef is sold on the idea of shirking long-term commitment.
"There are always going to be traditional restaurants, but the Barrel and Beast idea isn't one that needs to stay still. I want it to keep evolving. It gives it flexibility, plus it's a lot of fun," he says.
Ingersoll will open on July 9 at award-winning Foveaux, a restaurant that has faced financial pressures recently and will relaunch with a new design in coming months.
By spring, Barrel and Beast will be gone. A northside location is Ingersoll's tip for its next incarnation.
