Understanding Tofu, Tempeh and Seitan - as part of the expert series by GeoBeats. You may ask, what's the difference between tofu, seitan and tempah. You may ask the difference between Tofu, Seitan and tempeh. Tofu and Tempeh are both soy products. The difference is that tofu is a processed soy product. It is actually made from soy milk that has been curdled and pressed. Tempeh is made from whole soy beans that have been fermented with a type of mold, sounds icky, but it is actually, it is not bad for you. Think of it like blue cheese which is mold too. They do taste very different. Tofu has a softer texture. There are different types of tofu. The tofu that you get in your miso is a soft silken tofu, which is very different to this one. You can actually use this in firmer dishes, make a tofu ricotta from it, that kind of thing. It goes great with Asian food because it really does need to have strong flavors. Tempeh has a kind of sweet earthy taste to it. I think this works really well with Asian sauces as well and actually it makes great fake bacon and barbeque sauce. It is delicious as a barbeque dish. Seitan is completely different. It is made from the protein of wheat. Like for example, if I had 8 cups of flour and I kneaded it and then I washed away all the starch, I would be left with, about a quarter of it would end up being seitan. How to Make Tempeh
I n making tempeh I use 7 g of tempeh starter and 22 oz of dry roasted split soy beans. ( In this video I added to the tempeh some rice, corn, and bean mix.) 1. Bring to a boil the soybeans. 2. Let the soybeans simmer for 35 minutes on medium high heat. 3. Strain the soybeans. 4. Blow-dry the soybeans for about 10 minutes. 5. Add the tempeh starter and stir it into the soybeans. 6. Add soybeans to a 9x15 inch bowl. 7. Cover bowl with plastic wrap and poke about 12 holes into the plastic wrap. 8. Place bowl into the incubator. Soybeans should incubate for 36 hours at 88 degrees Fahrenheit. Some of the keys to making tempeh is to be sure the soybeans are net wet when placed into the incubator. This is why you should use a hair-dryer to dry them out a bit. You cannot add the tempeh starter to the soybeans if they are over 100 degrees as that can damage the culture. They soybeans should have cooled down enough after the use of the hair-dryer to add the tempeh starter. The soybeans should be about 1 to 1.5 inches thick n the pan. If it is too thick I will scoop some of the soybeans into a smaller container that will also be covered with plastic and placed in the incubator.

Spicy Tempeh & Jasmine Rice-Vegan Dinner Idea
My Blog: www.brownvegan.com My Twitter twitter.com 18 oz package of tempeh 4 cups vegetable broth 1 tsp sea salt 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika 1 tsp chili powder 1 tsp red pepper flakes ½ tsp cayenne 1 tsp dried thyme 1 tsp dried oregano Oil to fry tempeh Directions: Cut tempeh into small cubes. In a medium saucepan add the vegetable broth and tempeh cubes. Cover and cook for 25 minutes. Remove from heat and drain tempeh in a colander, allowing pieces to cool for about 15 minutes. In a small Ziploc bag or paper bag, combine all remaining ingredients. In a large skillet over medium heat, warm your oil and cook tempeh for about 3 minutes on each side. Immediately transfer to the bag of spices and shake until evenly coated. Serve with rice. For optimum flavor, allow finished tempeh to rest for at least two hours before eating. Jon braves the night time zombie apocalypse to grill up some tempeh veggie kabobs. Marinade 4 cups veggie broth Our recipe full.sc 1 tsp sea salt 1 tsp chili powder 1 tsp mesquite 2 tbsp mustard (dijon or spicy brown) 1 chipotle pepper (take out once done) 2 tbsp worcestershire sauce full.sc 2 tbsp agave nectar Bring to boil add your tempeh and simmer 20 mins remove from heat Add 1/2 lime (juice) 2 tbsp finely chopped fresh parsley Add handful chopped onion, green pepper, mushrooms, cherry tomatoes and set aside Cut zucchini and yellow squash into spears Add handful chopped onion and peppers tsp salt and dash of pepper tsp dried basil tsp dried thyme 1-2 tbsp olive oil Mix up in bowl Place in tinfoil Add 1 tsp Earth Balance buttery spread Grill 10 15 mins Cut brussel sprouts and small potatoes in half 1 tsp thyme 1 tsp rosemary 1 tsp sea salt Dash pepper 1 tbsp olive oil Toss together Add to tinfoil Add 1 tsp Earth Balance buttery spread Set on grill until potatoes are soft Asparagus Add 1 tsp sea salt Pinch pepper Coat in olive oil Grill for a few minutes while turning over halfway through Soak skewers in water Skew tempeh and other veggies Optional our seitan and Field Roast Sausages Our seitan full.sc Brush with BBQ sauce and grill Follow us: Twitter: twitter.com Facebook:: facebook.com Webpage: theveganzombie.com Instagram theveganzombie
