For lots of masala use 2 ½ cups basmati rice, for standard Biryani 4 cups rice, I md chicken, 1/3rd cup oil, 3md onion, 1 garlic, 2 ginger, 1 ½ cup yogurt, 2tbs kewra water, 10-12 cloves, 3md cardamoms, 2 cinnamon, 1ts full whole black paper, 1ts full cumin seeds, 10-12 green cardamoms, ¼ ts food color, mint hand full, 6-8 green chilies, 4-5 Prunes, 1 ts salt, 1ts chili powder, 1ts coriander powder. Preparation Time: 15 minutes Cooking Time: 55 minutes Makes 6 servings Ingredients For The Rice 1 bayleaf (tejpatta) 25 mm (1") stick cinnamon (dalchini) 1 clove 1 cardamom (elaichi) 1 1/2 cups long grained rice ( basmati) , soaked and drained salt to taste For The Vegetable Gravy 1 1/2 cups boiled mixed vegetables (carrots , peas , cauliflower , french beans , potatoes) cut into cubes 1/4 cup paneer (cottage cheese) , cut into cubes 2 tbsp oil 1/2 tsp cumin seeds (jeera) 3/4 cup finely chopped onions 2 tsp ginger-green chilli paste 1/4 tsp turmeric powder (haldi) 2 tsp coriander (dhania) powder 1 tsp chilli powder 1/2 tsp garam masala 1 cup roughly chopped tomatoes salt to taste 1/4 cup milk a pinch of sugar Other Ingredients 1/4 cup curds (dahi) 1/4 cup finely chopped coriander (dhania) a few drops of edible saffron colour 2 tbsp ghee Method For the rice 1. Rice biryani combined with any kind of meat, most often chicken, beef, goat, or fish, is one of the most comforting dishes that exists on the plantet. Biryani is an amazing food, having origins in Middle Eastern Persia and eventually finding its way to the Indian subcontinent, Africa, and central Asia as well. Unlike pilaf (or pilau) rice where the meat and rice are cooked together, with biryani the rice and meat is cooked separately and then combined on a plate to be served. The rice is fragrantly cooked with meat stock, turmeric, and a host of other mouthwatering spices. In Thailand, biryani is especially known throughout the country as most commonly a Thai Muslim food dish. The most common varieties are khao mok gai (chicken biryani), khao mok neua (beef biryani) and khao mok pa (goat biryani). In Bangkok, though it's not as common as other cheap street dishes, biryani is not hard to find either - there are some great restaurants serving up the delicacy. In today's video I head over to Bangkok's Aeesa Rot Dee (อาอีซะฮ์ รสดี), a long standing Thai Muslim food restaurant that has been serving their khao mok recipe for many years and pleasing their happy customers. Preparation Time: 10 minutes Cooking Time: 10 minutes Makes 4 servings Ingredients For The Kabuli Chana Gravy 1/2 cup soaked and boiled kabuli chana (white chick peas) (chick peas) 1 tbsp oil 1 tsp finely chopped garlic (lehsun) 1/2 tsp finely chopped ginger (adrak) 1/2 tsp turmeric powder (haldi) 1 tsp chilli powder 3/4 cup finely chopped tomatoes 1 tsp finely chopped green chillies 1/4 cup whisked curds (dahi) 1/4 tsp sugar salt to taste For The Rice 3 cups cooked rice (chawal) 2 tbsp ghee 2 cardamoms 2 cloves (laung / lavang) 1 stick cinnamon (dalchini) 2 bayleaves (tejpatta) 1 tbsp finely chopped mint leaves (phudina) 3 tbsp finely chopped coriander (dhania) salt to taste Other Ingredients 2 tsp ghee 2 tbsp milk Method For the kabuli chana gravy 1. Heat the oil in a broad non-stick pan, add the garlic and ginger and sauté on a medium flame for 1 minute. 2. Add the turmeric powder, chilli powder, tomatoes, a little water (approx. 1tbsp) and green chillies and cook for 1 minute. 3.
