Noodle Making in Shanxi, China 山西刀削面和晋中面食文化
Central Shanxi is the noodle capital of China. Marco Polo visited this area two times on his legendary trip to China and stole the noodle-making secret to Italy and Europe where people at that time could make only bread out of flour. Introduction of noodle to Europe not only added more tastes to Italian's dining tables but also helped them to resolve the problem of conserving wheat-made food. Most of noodle-making tricks invented in Shanxi have now spread to other provinces of China. Gradually some of them, for example "la mian" (拉面) or hand-pulled noodle, even lost their originated-in-Shanxi labels as they gain popularity in new places. Yet the knife-sliced noodle is still primarily only found in Shanxi. A lot of people love eating knife-sliced noodle(刀削面) but only Shanxi guys know how to make it. By training and practicing, anybody can become an expert of hand-pulled noodle or "La-Mian"(拉面). However unless you have at least one or two real genetic genes of Shanxi from your grandpa or grandma, nobody can make a bowl of knife-sliced noodles look and taste like "Dao Xue Mian"刀削面. This is one of a few remaining precious culture birthmark of our Shanxi people, the proud descendants of ancient Jin Kindom(晋国) and San Jin Culture(三晋文化). 山西人的面食文化

[Longfei Yang, Praying Mantis Kung Fu Master] "The history of the Praying Mantis style can be verified by many historical records which all say that it started with a Chinese man called Wang Lang. Wang Lang saw some Praying Mantis's while he was in a competition. He had lost in a competition of martial arts and then saw a Praying Mantis fighting a cicada. Using the movements of the Praying Mantis he created the Praying Mantis style Kung Fu. Later on, the Praying Mantis was spread over the country through Shaolin Temples. In Chinese history, there was a General in Yuanguo Temple in Shanxi Province. When he went back to his hometown in Henan Province after his retirement, he found that a little Shaolin monk called Xiaolong was learning the Praying Mantis from the General's son. The little monk was very interested in this Mantis. The General was very unhappy that his son is teaching the Mantis to an outsider. In ancient China, families are usually conservative on this. Monk Xiaolong was very smart. He asked to become a disciple to learn the Praying Mantis. The abbot in the temple also helped him to convince the General to teach him. Thus ...

News of a woman from northern China forced to have a late term abortion has sparked outraged. Feng Jianmei is from Ankang in Shanxi Province. Local family planning officials said she had violated the Chinese regime's one-child policy when she fell pregnant with a second child. On June 2nd Feng was forced to end her pregnancy at more than seven months, rights groups reported. Graphic pictures of Feng in hospital after the forced abortion caused uproar. [Chinese Netizen]: "I think this is just too cruel and inhumane. The government needs to change. The right to give birth is the most fundamental right. This birth planning policy must be removed." Local officials have since denied forcing Feng to abort, claiming she had agreed to the procedure. Feng had earlier been unable to pay a fine of 40000 Yuan, or around 6300 US dollars, for her second pregnancy. Chinese rights lawyer Li Tiantian says Feng's case is just one of many abuses that happen under China's one-child policy. [Li Tiantian, Chinese Rights Lawyer]: "I previously heard about induced births at 8 or 9 months, and family planning officials end up drowning the live babies. From a legal standpoint this is murder. This is what the government does." Rights groups have long condemned the brutal practices of China's family planning authorities.
