This time last week we were at The City of Glasgow College unearthing the next generation of young Scottish culinary talent in the first Knorr Professional Scottish Student Chef of the Year Competition. Challenged to prepare a two-course menu inspired by 'Modernised Comfort Food' and 'Irresistible Vegetables', we were amazed by the pure talent and creativity displayed by the finalists. A massive congratulations go to Jacintha Henderson from The City of Glasgow College as they take the crown with a main of Pan Roasted Chicken Breast, Stuffed Wing, Birria Tacos, Mole Elote Corn Ribs, Puree and Salsa Coriander finished with a lime dressing, and a Celeriac dessert - wowing the judges with their creative response to the brief! Big well done to our runner-ups Aimee Poland from Ayrshire College and Alannah Harrison from West College Scotland (Clydebank) - you did your colleges and mentors proud. Congratulations also go to Yingying Tang from Ayrshire College for winning Assistant Chef with their impressive display of skills and attention to detail. Our UK Culinary Competition final is always one of the most anticipated days on the calendar. This year we had 11 finalists from across the Company creating imaginative, innovative and delicious entries competing for 8 places at our annual Awards for Excellence. Whilst sadly we could only take 8 through, our judges commented that every competitor had at least one of their dishes that was outstanding so we thought it only right to show all 11 photos of their work. We really are immensely proud of you and we hope that you are all proud of your creations too. The kitchen is at the heart of every care home, but providing choice comes with an increased amount of food and waste. We're incredibly proud to have recently visited Sanctuary Care in Watlington to see the transformative steps they've taken to combat food waste in their business. We spoke to Mark Ord (Head of Hospitality) and Sheila O'Conner (Director of Operations) to hear how by mobilising their team they ensure they are planning effectively and fostering a culture of sustainability. They've taken tips from Guardians of Grub and evolved them to fit their processes - from reducing plate waste and streamlining their ordering, they've banded together and educated their Chefs to become warriors of waste.
