GOLDEN MIELIEPAP

This version of mieliepap is so delicious it can almost be served as dessert for breakfast!

Ingredients

  • 1 tin coconut milk
  • 1 cup water
  • 1 teaspoon turmeric
  • 1 teaspoon fine ginger
  • 1 teaspoon cinnamon
  • 3 green cardamom pods
  • pinch of salt
  • 1 cup maize meal
  • flaked almonds (toasted), for serving

Method

  1. In your potjie on the fire, add the coconut milk, water, and all the spices and mix this well.
  2. Now add the maize meal and stir until it becomes thick and cooked. This will take about 20 minutes, remember to stir often and add a bit of water if you think it’s getting to dry or stiff.
  3. Once done, toast the flaked almonds in a pan and serve on top of your golden mieliepap
