Quite possibly the best meal I’ve ever had and I say that as a discriminating foodie who has eaten at a number of fine dining establishments including Per Se. I am vegan and booked a reservation on May 12th with some apprehension as requesting vegan food can take a celebrated chef outside of their comfort zone. However the meal did not disappoint. Dish after dish was inventive, brilliant and presented as a high art form. The flavors were intriguing and complex. Only one dish,... a dish with a circular arrangement of carrots on a bed of greens, fell a little flat in my opinion. My only recommendation is that the service could be improved a little. The service was excellent but has a ways to go before it achieves the perfection of establishments like Per Se or Le Bernardin. The waiters could perhaps polish their presentation. Also there were a few very minor oversights. For example, my guest requested bread and they didn’t bring it so we had to ask a second time about 10 minutes later. Also, used plates were not cleared on one occasion and my guest had to request they be cleared. These are minor issues that are easily remedied. Overall the staff was enthusiastic, professional and their effort to exceed our expectations was evident. I would like to highlight our sommelier (I think she was a sommelier though I may be wrong). She was absolutely outstanding and in my opinion embodied the highest standards of fine dining. She was attentive to our wine levels, was highly knowledgeable, made well articulated recommendations and her presentation was flawless and polished. Overall my dining experience was exquisite and unforgettable. I can understand why this was selected as the number one restaurant in the world by The World’s 50 Best Restaurants in 2017.
