Quick and easy to make, these are ideal to take as a snack

For endurance athletes, such as triathletes or endurance runners getting sufficient energy in a quick and easy manner is essential.  This energy bar is quick and easy to make and is ideal to take as a snack on a long bike ride if you are a triathlete or as a quick and simple post run recovery snack if you are a runner.  All the ingredients are from a natural source, maximising the micronutrient content of the bar.   Some of the ingredients have specific uses:

  •  Oats – They provide a great slow release source of carbohydrate, and contain beta glucan which has been shown to support the immune system of athletes.
  • Bananas – Provide a natural source of sugar, and are high in potassium.
  • Mixed seeds – Provide a simple source of “good fats”, these support the immune system and allow the body to function properly.
  • Peanut Butter – Peanuts provide a source of “good fats” and protein.  The protein within them is high in the amino acid leucine, which is a key nutrient for recovery and adaptation to training.

Ingredients

150g Oats
200g Mixed seeds
40g Whey Protein (Chocolate Flavour is good)
200g Peanut Butter
5-6 ripe Bananas
1 Tablespoon Ground Cinnamon
1 Tablespoon of Clear Honey
Desiccated Coconut

Nutritional Information

Nutrition per serving:
Energy – 210 kcal
Carbohydrate – 20g
Protein – 10 g
Fat – 10 g

Method

  • Pre Heat the Oven to 200°C and line a baking tray with greaseproof paper
  • Gently melt the peanut butter
  • Mash up the bananas
  • Mix all of the ingredients together, except the desiccated coconut
  • Spoon the mixture into a baking tray, and sprinkle the coconut over the top.
  • Place in the oven for 20 minutes

Dr Kevin Currell is Head of Performance Nutrition at the English Institute of Sport. Kevin has worked with the Great Britain Triathlon team for over six years, and was part of the support team which helped the athletes deliver the sports first Olympic medals at London 2012.

He also supported the GB Canoe Slalom team through to the London Olympics and works with the GB Short Track team. Prior to this he undertook a PhD at the University of Birmingham.
