Cranberry and Orange Muffins

A great Christmas snack or dessert...

Quick and easy to make, these Cranberry and Orange muffins make a great treat or dessert at Christmas.

Can be served hot with vanilla custard as a dessert.

Ingredients

½ cup dried cranberries

1 medium orange or Clementine peels and finely chopped

1 ½ cups white flour

1 cup wholemeal flour

½ cup white sugar

2 tsp baking powder

¼ tsp salt

½ tsp ground cloves (optional)

¼ c vegetable oil

2 eggs beaten

1 tsp vanilla essence

1 cup semi skim milk

12-24 dried cranberries for topping 

Nutritional Information

Method

In a bowl place the cranberries, flour, sugar, baking powder, salt and cloves.

In a separate bowl combine oil, eggs, vanilla and milk and mix into the dry ingredients.

Light stir until mixed. Mixture should resemble sticky porridge.

Spoon mixture into greased muffin tins or cups and top with remaining cranberries to decorate. Bake for 15 minutes until cooked at 180oC.
