I’ve got an excess of lemons and a rare excuse to host dinner (in-laws are visiting from across the country.) I’m planning to serve lasagna as the main course with garlic bread and a light salad on the side. I have vanilla ice cream to go with whatever dessert I end up making but I’m not super sure what to make.
Cake seems to simple, lemon meringue is a bit outside my capabilities (don’t have a whisk, hand mixer or stand mixer.)

I make a pasta with penne, julienne carrots, fresh green beans, two tins of light tuna in oil (drained). Starting with onions and garlic, finishing with a whole lot of balsamic vinegar and crumbled feta cheese.
It's ugly and makes no sense. Everyone I've introduced to it loves it.
