How can I make this aloo gobi better?

I made it for the first time. It was good but not great. It was a little bland and it just didn’t taste like restaurant aloo gobi. How can I level it up? I used cumin seeds, coriander powder, garam marsala, and turmeric. I added cauliflower and potato. I wanted to make it spicy but I was cooking for my mom and she can’t eat spicy food. I will add kashir chilli powder next time.

When making matar paneer, do you fry the paneer first or throw it in the sabzi without frying it?

Also, what is your fav mango? I live in europe and have ordered alphonso, badami and kesar mangos and like the kesar ones the best
