Almond Paste Uses?

Hey everyone. I work in a bakery and our old boss bought waaaay to much almond paste. Like, four 50# cases. We are trying to brainstorm the best way to sell it in a cookie/cake/pastry. Any amazing recipes you'd care to share? Thanks in advance everyone!

What can I do with 30 pears and over a pound of almond paste?

I'm looking for some ideas. Maybe a pear frangipane tart? I don't have a good recipe for that. I was gifted 15 pears from two different people. And I mistakenly have a ton of almond paste because I meant to buy marzipan but messed up. I am okay making very difficult dishes, really, I often make things like croissants for fun so nothing is off the table.

Can I make hazelnut paste the same way as almond paste?

I have a homemade almond paste recipe that's super duper easy and cheap: 1.5 cups almond flour, 1.5 cups confectioner's sugar, 2 tsp almond extract, 1 large egg white. I add this to cookies, breads, etc to give it an almond flavor.

Could I do the same thing but with hazelnut flour to make hazelnut paste? I guess I'd make it the same way one makes almond flour, by blanching the hazelnuts and grinding them in the food processor.

Where can I buy almond paste to make almond cake?

Hello foodies out there. Im trying to find almond paste before I resort to making my own or buying online (as there is a debate on different methods)

Im trying to make honey almond squares and honey almond cake and they both require almond paste. And some of the recipes im looking at need about 1.5 cups worth or over 8oz. I dont see them at my local walmart or Vons

Also if anyone can recommend a good recipe, im very open to it. I like them chewy squares. We had a pastry chef that used to make it for me all the time both as squares and madeleines, but when he retired he took his cookbook with him so we have no access to the recipe. Now Im heavily craving for them.
