How to fish deep southern FL rock quarries? How to fish deep southern FL rock quarries?

I am on one of the fairly large, reclaimed quarry lakes, now rimmed with houses, in SW Broward. I've been fishing for bass in Miami and Broward since I was a kid, but I'm not sure I have ever truly understood how to fish these lakes.

The lake in question only has a small bit of shallow water, followed by a very obvious dropoff. I think the most obvious way to fish this is to grab a kayak and simply work the dropoff with plastic worms. I have caught bass up to 2-3 pounds, basically doing that from shore.

It is a big lake, though, and there's a lot of water. Is there any chance of larger fish holding well offshore, or is all that water essentially dead? My guess is that it's at least 25 feet deep and may well be even deeper for all I know. It's not incredibly murky, but it is not all that clear, either, so it's hard to tell just by looking. I am guessing there must be some spots out there where the dragline long ago either created small depressions, or mounds. Is it a waste of time to even go looking out there? If not, how to fish deeper water like that?

I am planning to come down the first week of December, but am looking for information on where to go. My goal is to catch as many species as possible. I have good surf fishing gear and likely a kayak to bring down. I am also ideally looking at fishing for the many exotic freshwater species that exist in the canals/lakes, so near there if possible would be great. Thank you and tight lines!
