Survival game
I'm not talking about anything competitive or grindy, I'm talking about a normal scavenging for resources from the environment, and occasionally fighting off monsters or bandits.
Something along the lines of Tarkov and Day Z but I don't have to worry about a player hunting me down, preferably an FPS or at least something in real time, not turn based.
Edit: I'm thankful for all your suggestions but so far it's been pretty much the same, I only saw a few offer something different.
Here's a list of games that fall around what I am looking for, these could help give an idea of what I am thinking of.
Generation Zero, Desolate, Project Zomboid, Last of Us, Unturned, Day Z, Tarkov, Fallout, Metro, Stalker, Terminator: Resistance, Dead Island, Dead Rising, State of Decay.
These games all have something that I am trying to seek in a survival game, most notably scavenging for resources, not necessarily detailed but stuff like food and ammo, crafting is nice but not needed, also being able to settle down and stockpile resources is nice, not looking to build a major industrial complex, just want to take over a shack and make it homey.

So, this is not really my genre, but I enjoy watching streamers play survival games. I picked up Enshrouded (which feels like a not-quite-survival game, despite the Steam tag). Now I kind of want to play a "real" survival game (PC). Features I like/need in games:

Keyboard/mouse play and must be able to rebind all controls (this is a must have for me).

Good building system with depth and minimal jank.

Deep and meaningful crafting.

Resource grind is fine.

Interesting and varied environments.

Difficulty settings. I suck.

I lean to fantasy, but science fiction is fine too. Zombies are not my thing.

Release or "late early access" quality. I'm not interested in beta testing someone's game.

Edit: I'm looking for 1st/3rd person and PvE rather than PvP. Solo play is important, multiplayer is nice to have.

I'll probably never play some of these games (horror is really not my jam, for example), but this post turned into an exercise of rebuilding my Steam wish list and updating my to-be-played list.

Been playing for a couple days now, and while it seems kind of cool I don't really get why it's called a "survival game". Am I missing something here? I know that most "survival games" have a breakpoint where it stops being about raw survival, but Enshrouded doesn't seem to even have that breakpoint. It doesn't seem to have any hunger mechanics, any defying nature mechanics, etc... It just seems to be an RPG with crafting.

Im not sure if game requests are allowed but i looked at the rules and it didnt say anything about it.
Im looking for a third or first person survival game. Zombies would be cool but not a must. The one caviat is that it cant have pvp. I am terrible at pvp and i really want to avoid it. Also co-op is a no-go unless its optional and playing solo wont massively gimp me (like with that world war z game)
Anyone know any games like this? Ive already tried State of Decay 1 and 2. They come close but no dice.

With Ashlands on PTS, I figured a quick refresh for new and old Vikings might be helpful. Here’s a few tips from a fellow adventurer on your road (or boat ride) to Valhalla. (Obligatory “forgive my formatting, I’m on mobile”)
-keep your rested bonus up. You can’t swing an axe at your enemy, if you’re tired from running
-stay fed. Figure out if you need the health or the stamina to keep your belly filled
-pack what you need. Iron Gate isn’t adding more inventory slots, so it’s up to you to figure it out
-sailing is a must. Some of you may believe it’s boring…it is, but you obviously haven’t been loaded down with iron and been attacked by twin serpents.
-boring doesn’t have to be unproductive. Yes… the monotony of sailing is more common than the excitement. Bring a fishing rod. Cast it within 5m of the boat, 1 speed forward, close to shore= auto hook. Or just relax and enjoy the ride!
-infrastructure is your friend. “The swamp is needs to be nerfed!”… no, it doesn’t. You need to be more methodical. Use a hoe to raise the land above the water. Make roads.
