I messed up my carrot cake jam

Could it be because it hasn’t been 24 hours you just need it to set? Don’t mess with the jars and check again tomorrow afternoon.

First Time Canning

I always recommend getting a Ball book. Their recipes are tested and safe in the combo of ingredients and are clear in how the recipes should be processed to be shelf stable. Also check out the recipes posted on the sites listed though this sub as they are also reliable and tested to be minimal risk of food spoilage if followed. Sites like the National Center for Food Preservation and Healthy Canning along with I think the Penn University extension site have great articles of the whys of how recipes are done and why some ingredients like dairy and starches can’t be canned in a home setting even if you can find the items in a store.

Unfortunately a large portion of recipes on places like Pinterest, YouTube, crunchy mommy homesteader blogs and FB can play fast and loose with safety and you wouldn’t know it because there is no oversight.

Good luck and have fun!

The headspace is a little concerning. You need 1/4 inch from the rim, but unless you already scooped some jam out it looks closer to 1 inch. This jeopardizes a proper seal and can lead to spoilage.

I’m also going to assume the jars you opened are in the fridge. I know that’s seems patronizing but there’s a reason we can’t have nice things around here.

Please say you put them in the fridge immediately after you filled them.

You cannot reuse jars from market goods for a shelf stable recipe. The seals are unsafe for a shelf. If it was just fridge pickles enjoy!

What recipes would you like to see safe canning instructions for?

This is amazing. What an incredible opportunity for this sub!

Will there be an archive set up for user recipes to be shared once testing of that recipe by NCFHP confirms it’s safe?

That is 27 year old maturity that teens would never have, to pick the battles that count.

Makes that Mykayla Skinner battle even more hilarious because it was so swift and decisive lol.

Jam Foam Tips

Stardustchaser
commented

Someone gave a tip a while ago about waiting a few minutes after the jam has been taken off the heat before filling jars, that it often helps with separation in jams and foaming and I agree. Letting it rest even for 4-5 minutes allows for the foam to be easier skimmed from the top (I just use a soup spoon to do it).

Montana is larger than the entire continent of Asia. And yet, with a population of just over 1 Million, it's completely full. This is because Montanans themselves are a huge, brawny people. Especially the womenfolk...Three words: Big Thigh Country. Butte, America [MT] was once considered the most polluted place on Earth. However, in the year 2056, with the help of benevolent aliens, a giant net was stretched over Butte to protect migrating wild birds from the toxic Berkeley Pit waters.

Teddy Roosevelt was pretty close. Also Polk within just a few months but he was a one and done presidency as he planned.

How is this NOT a Hatch Act or other election law violation?

Stardustchaser

Because giving information on changes to paying back Federal Direct Loans which is handled by the Department of Education as the Secretary of Education is absolutely in the purview of their job.

If it was Christopher Wray saying it sure it would not face scrutiny.

Why did Republicans run John McCain? It seems like he never had a chance of winning.

Stardustchaser
commented

He was the least-like Bush, who had become unpopular with the looming recession and the prolonged intervention into Afghanistan and Iraq under the “War of Terror” policy. He was therefore the most sellable to independents of the Republican candidates in the primaries of 2008. It was also the same voter behavior for more recent nominees- the “anyone but (eventual nominee)” was too thinly stretched across multiple candidates. This is how those three got the nom.
