The ferry across Lake Champlain would likely add several hours to your trip or require a route further north of the Adirondacks. I wouldn’t recommend it just to try to spot a “local legend” creature.

You don’t sound like you have a good grasp of what upstate NY, particularly the capital region, is like. I recommend searching r/upstate_new_york for similar “where should I move?” posts.
I absolutely LOVE Bitchin Donuts, but I think they do their customers a disservice by not having their food/non-donut menu shown on the big board above the counter. It’s just a small handheld menu on the counter. Even just a sign that says “food menu @ counter” would help.
Maybe I’m just dumb, but it took me several visits before I realized they served more than just donuts.
