Few people own physical gold. It's also easy to seize, hard to secure, can't easily be transacted with across distances. No way to audit the total supply of gold and the rate they dig it out of the ground isn't predictable. Paper gold has the same issues as fiat and the number of claims to gold exceed the supply by who knows how much at this point
