under-extracted absolutely does not necessarily mean more acidic across the board btw~ as others have stated, the issue could be with the coffee you’re making in a french press rather than the grind or the time or whatever else.
french presses best highlight medium- to dark-roasts that have notes like chocolate, nuts, or caramel. if you’re brewing a light-roasted Ethiopian in a french press, for example, I can’t imagine it being too successful. it’s just not how to make a coffee like that shine. basic recipe for french press is course grind, five minutes, pour it out of the carafe so that it doesn’t continue to brew. tbh it’s hard to make it taste bad unless you’re just using the wrong coffee.
