Unless prices go up more and they're priced out of buying a home similar to what they had. A primary residence is an investment, but treating it solely as an investment ignores its other roles in people's live, like being their primary residence. Moving is an expense, renovations are an expense, you're losing anything custom you did for the previous home and will have to redo it again, you're potentially moving your children from one school to another and so on. The value of the home would have to be pretty large in the first place AND be in an area where rent is a savings over a mortgage AND prices/rates would have to come down in the near future.

Because you can't pay everyone enough for them to not need the residuals before the content is released and makes money. You already see this trade off with actors getting paid lump sums versus points off of whatever. If everyone chose a lump sum, most projects would never happen, so it's not an option.

For construction, the real estate development firm is fronting the money and then reaping all the rewards (and risk) after. For a baker, the product is consumable - it is eaten and must be made anew. There are plenty of industries where work is done once and then is a passive (or at least greatly reduced level of effort) stream of income, and where without that subsequent income, the initial burst is insufficient.
