I would love it if you paid 20% more for your food, and I got paid a living wage by the owner. Then, like any other profession, I would just have to bring you your food without pretending I like you, or laugh at jokes I've heard too many times, put up with any sort of innuendos, or make you feel special in any way. Efficiency, and nothing more. Sucking up to AHs is the worst part of this profession.
Yes, I should expect to be paid by the person employing me, just as you should expect to pay the full cost of food+service. The tipping system just ensures that the service is of a higher quality and gives you some agency.

Where I live I tip out the house 6% of sales, am also taxed by the government based on my sales, and get a lower minimum wage. If you don't tip, it literally costs me money to serve you. On a hundred dollar bill, it will cost me about 8$ for the pleasure of serving you, so I hope you can understand the resentment I feel of you don't tip. It hurts me financially. You are also choosing not to pay for the service I provide which is insulting and demeaning, and as well you seem to think I don't deserve to make a living wage. Restaurants aren't always packed to the brim, there are slow times as well, so average that out.
I totally expect to be paid for my services. Here, it is the customer, not the restaurant owner, who does that. That's why the food prices are lower. I would trade tips for a living wage and benefits, but that's not how it works here. Not tipping is exploiting the system and the server suffers for it.

Not only do restaurant workers in Quebec have a lower minimum wage, they also get taxed directly based on their sales. My average paycheck for 70 hours is about $200 after taxes.
We also tip out other staff like the bartender. My tip out is 6% of sales. At 15%, that's over a third of my tips...the ones I'm taxed on.
Restaurant owners are the ones who truly profit from this system, and their lobby had a fair amount of influence with local politicians.
