I was in a hurry last week leaving with the family for vacation. I cured a tenderloin for Calabrian Pork following a weight based recipe. I wrapped it in a collagen sheet, followed by netting. My mistake was- in my rush to make sure it didn’t sit in cure longer than called for/wanted, I hung it in the fridge without weighing the final product. My question to the masses is- do I base my weight loss of the initial weight, do I weigh it now to make the calculation or another option? Knowing I should have taken my ADD meds earlier in the day. 🤦‍♂️
