In a Hurry

I was in a hurry last week leaving with the family for vacation. I cured a tenderloin for Calabrian Pork following a weight based recipe. I wrapped it in a collagen sheet, followed by netting. My mistake was- in my rush to make sure it didn’t sit in cure longer than called for/wanted, I hung it in the fridge without weighing the final product. My question to the masses is- do I base my weight loss of the initial weight, do I weigh it now to make the calculation or another option? Knowing I should have taken my ADD meds earlier in the day. 🤦‍♂️

Umai bag vs Collagen Sheet vs Beef Bung for Coppa?

I just threw my first 4 coppas in the fridge to start their cure and will soon be taking them out to hang them in the curing chamber I made at 14C/75-85% humidity.

My question is whether I should wrap or not wrap the coppas before casing.

I have umai bags and netting on hand and was planning on using the bags like you'd use a collagen sheet (cut the seam, wrap tight, prick with needle) instead of going out and buying beef Bung or collagen casings.

My question is would this work? Would hanging without a casing work better? Or should I just go and spend the money on some proper beef Bung or collagen?

Also, I plan to innoculate with mold 600
