I would understand if say each curry only had one meat option. For example a big thing of lamb vindaloo could begin cooking earlier that day and they can dish it out all evening. But at the restaurant I was at today there were multiple different curries each with the option of lamb, chicken, or beef. How is it that they can have any of these ready within 20 min, with such tender meat?
