Eating healthy on a cheap budget

I love oatmeal and have it on a daily basis but I find my go to spices are starting to get old. These include cinnamon and nutmeg. I will also add fruits / nuts as well as chia seeds and hemp hearts. Looking for recommendations for other spices to add some variety.
I've gradually improved my ability to cook tofu properly. First I tested on myself. Then I served it to my 2 kids and they didn't hate it. Yes, an air fryer and/or cast iron skillet is the way to go.
Lately the cost of chicken is outrageous, and the kids have been begging for one of their favorites, chicken pot pie. Here is my attempt at making tofu taste like diced chicken.
Cost wise, this will stretch way further than chicken on its own. I eat the pot pie leftovers for days, and I only used half of the chicken broth. The other half will go into a soup or pasta dish. I'll report back on how this experiment turns out.

I just made this last night and loved it! I used golden zucchini, though green zucchini or yellow squash would work fine too. The sauce itself is only 5 core ingredients (not including cooking oil, salt, or water) and can serve it over your favorite noodles. Soba, mung bean, rice noodles, or udon would be great! You could also eat it over rice, too!
It can be eaten hot or cold as a noodle salad.
Deep skillet
Large pot for cooking the noodles
1 tablespoon neutral oil
1 yellow onion
1½ pounds golden zucchini (or green zucchini)
2 tablespoons sesame oil
3-4 Thai chili peppers minced
