How should I seal out water on Butcher block Counter Tops?

I'm putting in a wet bar and using butcher block counter tops. There will be a small sink installed. I'm not planning to use it to prepare food directly on it so I'm not sure I need a food safe stain or oil. It is birch and I want it to be a darker walnut type of color. So I am thinking a dark colored wood stain and top it with a couple of coats of polyurethane. Then seal the sink with clear silicone. Would this be sufficient to prevent water damage or rot?
