can I use 10 foot drywall on a 121 inch ceiling?

My ceiling is 10'1'' x 13'1'' inches long. The ceiling joist are perpendicular to the 10'1'' direction. Could I use 10 foot drywall? What should I do about the extra inch I would be missing if I use 10 foot drywall? should I just leave a half inch gap on each side and fill with joint compound and then tape over that?

Leave the gap on the bottom, then just fill it with scraps to level it before installing the baseboard.

Put on floor, install crown moulding. Push to ceiling, install baseboard.
