I made this record using an old amazing (one of my favorite instrument actually) Steinway & Sons model O grand piano. (Steinway officially stopped production of the Model O in 1924, but I guess this one was built around 1925-1926 according to serial number)

"Metamorphosis", refers to and was inspired by the 1915 short story The Metamorphosis by Franz Kafka. While all pieces were written in 1988, some were written for a staging of Metamorphosis, while others were for a documentary film called The Thin Blue Line directed by Errol Morris.
"Metamorphosis One" is played in an episode of Battlestar Galactica by Kara "Starbuck" Thrace. Within the narrative, her father composed and performed the piece. It is also played in the series finale of Person of Interest, Return 0. "Metamorphosis Two" formed the basis of one of the main musical themes in the film The Hours. It is also the song that the American rock band Pearl Jam uses as their introduction music to concerts.
*I prepared this release to celebrate 4 million streams of this composition in my interpretation on Youtube (a bit late though, because the number of views has grown since then). After several unlucky attempts to make this recording on different instruments and in different studios I returned to the same living room and the same piano - Steinway & Sons model O made in 1926. I can not possibly explain this, but despite all the obvious technical obstacles that stand before you while recording in a regular room, with all the uncontrolled reflections, with the old piano in poor condition which makes you suffer a lot, with all the additional vibrations, rattling strings, hammers that require voicing, with a creaking chair - it turns out to be exactly how I perceive this music. So, one piano, 2 microphones, beloved Philip Glass, and my personal story with the place where this record session took place.

Accepted onto the early admissions programme of the University of Chicago, Philip Glass graduated aged just nineteen with a degree in Mathematics and Philosophy, practising the piano in his spare time. Subsequently studying at the Juilliard School, Glass’s name has since become synonymous with the minimalist style. His film compositions have earned him a Golden Globe as well as three Academy Award nominations.
This selection of pieces showcases Glass’s music for solo piano, with each of the works baring the hallmarks of minimalism. Among the pieces featured in the collection is Metamorphosis, a set of five variations that evolve over the course of the entire work to create a stirring final movement. Also present are extracts from the soundtrack of Stephen Daldry’s film The Hours, as well as ‘Truman Sleeps’ from The Truman Show (which earned Glass a Golden Globe award for ‘Best Original Score’). The collection ends with the ‘Trilogy’ Sonata, containing piano transcriptions of Glass’s three ‘portrait’ operas: Einstein on the Beach, Satyagraha and Akhnaten.
Dutch pianist and composer Jeroen Van Veen studied at the Utrecht Conservatory and has played with many orchestras throughout Europe and the USA, under renowned conductors such as Howard Williams, Peter Eötvös and Robert Craft. An accomplished recitalist, van Veen has also appeared at festivals including the Reder Piano Festival and the Festival der Kunsten (Bad Gleichenberg). His compositional style is closely related to minimalism, and contains elements of jazz, blues and pop music.

Koyaanisqatsi: Life out of balance é um documentário lançado em 1983 dirigido por Godfrey Reggio com música do compositor Philip Glass.
É o filme mais conhecido da trilogia Qatsi, que é composta com as seqüências Powaqqatsi (1988) e Naqoyqatsi(2002).
A trilha sonora deste documentário possui grande importância pois o desenrolar tem a velocidade e o tom ditados por ela. Não existem diálogos e também não são feitas narrações durante todo o documentário.
São apresentadas cenas em paisagens naturais e urbanas, muitas delas com a velocidade de exibição alterada. Algumas cenas são passadas mais rapidamente e outras mais lentamente que o normal, criando, com a trilha sonora, uma idéia diferente da passagem do tempo. Vários dos efeitos apresentados se tornaram clichês usados em outros filmes e programas de televisão.
A palavra koyaanisqatsi tem origem na língua Hopi e quer dizer "vida desequilibrada", ou "vida louca". O significado é revelado ao final do documentário antes da apresentação dos créditos. No final do documentário são cantadas três profecias do povo Hopi em sua própria língua, as quais também têm aqui suas traduções.

Philip Glass
Philip Morris Glass (born January 31, 1937) is a classical American composer. He is considered one of the most influential music makers of the late 20th century. His music is also often controversially described as minimal music, along with the work of the other "major minimalists" La Monte Young, Terry Riley and Steve Reich.
Glass has distanced himself from the "minimalist" label, describing himself instead as a composer of "music with repetitive structures". Though his early mature music shares much with what is normally called "minimalist", he has since evolved stylistically. Currently, he describes himself as a "classicist", pointing out that he is trained in harmony and counterpoint and studied such composers as Franz Schubert, Johann Sebastian Bach, and Wolfgang Amadeus Mozart with Nadia Boulanger.
Glass has founded his namesake musical group, the Philip Glass Ensemble, with which he still performs on keyboards, and has written operas, musical theatre works, ten symphonies, eleven concertos, solo works, chamber music including seven string quartets and instrumental sonatas, and film scores. Three of his film scores have been nominated for Academy Awards.

Boston (horse)
Boston (1833–1850), was an outstanding chestnut Thoroughbred racehorse and a Leading sire in North America three times from 1851 to 1853. He started in about 45 races, winning 40 of these, including 15 in succession. Boston was later one of the initial inductees into the Hall of Fame.
Breeding
He was a chestnut stallion with a white blaze on his nose and he was foaled in Richmond, Virginia. Boston was bred by the Virginia attorney John Wickham (who had been Aaron Burr's counsel in his trial for treason). He was by the very good racehorse, Timoleon (by the great Sir Archy), his dam was Sister to Tuckahoe by Ball’s Florizel. Boston was inbred to Diomed in the third generation (3m x 3f). He was a half-brother to the Shylock mare who founded a successful family. They were from the number 40 family which traced back to the imported mare, Kitty Fisher.
As a two-year-old, Boston was lost by his breeder in a card game and was given to Wickham's friend Nathaniel Rives, of Richmond to repay his debt of $800. He was named after a popular card game and later given the nickname of "Old Whitenose". Boston had a wilful temperament and was difficult to train. Sent to the stable of John Belcher, and then to the trainer L. White, and then back to Belcher, White said, "The horse should either be castrated or shot—preferably the latter."

I made this record using an old amazing (one of my favorite instrument actually) Steinway & Sons model O grand piano. (Steinway officially stopped production of the Model O in 1924, but I guess this one was built around 1925-1926 according to serial number)

"Metamorphosis", refers to and was inspired by the 1915 short story The Metamorphosis by Franz Kafka. While all pieces were written in 1988, some were written for a staging of Metamorphosis, while others were for a documentary film called The Thin Blue Line directed by Errol Morris.
"Metamorphosis One" is played in an episode of Battlestar Galactica by Kara "Starbuck" Thrace. Within the narrative, her father composed and performed the piece. It is also played in the series finale of Person of Interest, Return 0. "Metamorphosis Two" formed the basis of one of the main musical themes in the film The Hours. It is also the song that the American rock band Pearl Jam uses as their introduction music to concerts.
*I prepared this release to celebrate 4 million streams of this composition in my interpretation on Youtube (a bit late though, because the number of views has grown since then). After several unlucky attempts to make this recording on different instruments and in different studios I returned to the same living room and the same piano - Steinway & Sons model O made in 1926. I can not possibly explain this, but despite all the obvious technical obstacles that stand before you while recording in a regular room, with all the uncontrolled reflections, with the old piano in poor condition which makes you suffer a lot, with all the additional vibrations, rattling strings, hammers that require voicing, with a creaking chair - it turns out to be exactly how I perceive this music. So, one piano, 2 microphones, beloved Philip Glass, and my personal story with the place where this record session took place.

Among the pieces featured in the collection is Metamorphosis, a set of five variations that evolve over the course of the entire work to create a stirring final movement. Also present are extracts from the soundtrack of Stephen Daldry’s film The Hours, as well as ‘Truman Sleeps’ from The Truman Show (which earned Glass a Golden Globe award for ‘Best Original Score’). The collection ends with the ‘Trilogy’ Sonata, containing piano transcriptions of Glass’s three ‘portrait’ operas: Einstein on the Beach, Satyagraha and Akhnaten.
Dutch pianist and composer Jeroen Van Veen studied at the Utrecht Conservatory and has played with many orchestras throughout Europe and the USA, under renowned conductors such as Howard Williams, Peter Eötvös and Robert Craft. An accomplished recitalist, van Veen has also appeared at festivals including the Reder Piano Festival and the Festival der Kunsten (Bad Gleichenberg). His compositional style is closely related to minimalism, and contains elements of jazz, blues and pop music.

Koyaanisqatsi: Life out of balance é um documentário lançado em 1983 dirigido por Godfrey Reggio com música do compositor Philip Glass.
É o filme mais conhecido da trilogia Qatsi, que é composta com as seqüências Powaqqatsi (1988) e Naqoyqatsi(2002).
A trilha sonora deste documentário possui grande importância pois o desenrolar tem a velocidade e o tom ditados por ela. Não existem diálogos e também não são feitas narrações durante todo o documentário.
São apresentadas cenas em paisagens naturais e urbanas, muitas delas com a velocidade de exibição alterada. Algumas cenas são passadas mais rapidamente e outras mais lentamente que o normal, criando, com a trilha sonora, uma idéia diferente da passagem do tempo. We love the Boston shaker. We reach for it when our recipe calls for muddling an ingredient, or when we want a quick no-nonsense chilling device. Let's talk about how to shake a cocktail.
You probably have an idea of how, you know, just going back and forth and you're just chilling the ice. There actually is some techniques that are a good idea to master.
I've already built my cocktail in here. Now, this is a two piece tin. You can use the three piece ones, which are sort of self-explanatory.
I like these better because the ice really can travel and can chill the drink properly, chill it faster and then give it that really great, frothy texture that you want. Which is ideal for optimal deliciousness.
So, I've already built my drink in the small part of the tin. If I build it in the big part it might overflow when I combine them. So, small tin.
And now, we want to form that seal. Okay? So when you lift it up like that it stays together.
You'll notice that I have one part flush and then, so then there's the maximum distance here. Remember that.
So, I have two cocktails built here. And just to show off I'm going to shake them both.
Alright. So, if you're shaking two you want to hold them with two fingers on each side so that if you feel them separating you'll notice and you can, sort of, stop.
You should never be afraid of them separating on you if you form a tight enough seal. And if you're holding them properly, if it starts to break, you'll know before you make a mess.
If you're shaking one cocktail you can hold it together with both hands. But that's not what we're doing. We're going to go big today.
So, I'm going to be alone with my shakers while I rock this out.
Do you need to have a catchy rhythm when you're shaking? No. Should you? Yes.
Okay. You hear that? That's the seal already starting to break. Okay.
So, now we're going to break the seal. I'm not going to hit it on the part that's flush and I'm not going to try to break it on the largest distance. I'm going to go right in between. That sort of half way point.
With the palm of your hand. When you hear it start to hiss like that you know you already broke the seal. And then, just sort of jimmy it off.
It takes some practice to really get a feel for it. I've done this probably a thousand times. So, I really know how to do it.
But, don't feel bad if you're just like doing it a million times and can't get it. You'll figure it out. Just don't get frustrated. Don't get mad at the shaker. The shaker is your friend.
Okay. Now we're going to strain this cocktail. Pretty much any time you're shaking something you're going to strain it.
Even if it's going to be on the rocks, you don't really want to pour it out from the shaker because all that ice is going to be broken. It's going to melt really fast. You want to pour that over fresh ice.
In this case we have an up glass. So, we're going to take our Hawthorne Strainer. It's called that for over 100 years. People aren't exactly sure why. They think it was because this guy Hawthorne invented it in the late 19th century. I'm pretty sure they're right but we'll probably never know.
And I'm going to fine strain this. As you'll see, this is a daiquiri here, there aren't any ice chips on top. It just gives it a silkier texture.

Let's talk about how to shake a cocktail.
You probably have an idea of how, you know, just going back and forth and you're just chilling the ice. There actually is some techniques that are a good idea to master.
I've already built my cocktail in here. Now, this is a two piece tin. You can use the three piece ones, which are sort of self-explanatory.
I like these better because the ice really can travel and can chill the drink properly, chill it faster and then give it that really great, frothy texture that you want. Which is ideal for optimal deliciousness.
So, I've already built my drink in the small part of the tin. If I build it in the big part it might overflow when I combine them. So, small tin.
And now, we want to form that seal. Okay? So when you lift it up like that it stays together.
You'll notice that I have one part flush and then, so then there's the maximum distance here. Remember that.
So, I have two cocktails built here. And just to show off I'm going to shake them both.
Alright. So, if you're shaking two you want to hold them with two fingers on each side so that if you feel them separating you'll notice and you can, sort of, stop.
You should never be afraid of them separating on you if you form a tight enough seal. And if you're holding them properly, if it starts to break, you'll know before you make a mess.
If you're shaking one cocktail you can hold it together with both hands. But that's not what we're doing. We're going to go big today.
So, I'm going to be alone with my shakers while I rock this out.
Do you need to have a catchy rhythm when you're shaking? No. Should you? Yes.
Okay. You hear that? That's the seal already starting to break. Okay.
So, now we're going to break the seal. I'm not going to hit it on the part that's flush and I'm not going to try to break it on the largest distance. I'm going to go right in between. That sort of half way point.
With the palm of your hand. When you hear it start to hiss like that you know you already broke the seal. And then, just sort of jimmy it off.
It takes some practice to really get a feel for it. I've done this probably a thousand times. So, I really know how to do it.
But, don't feel bad if you're just like doing it a million times and can't get it. You'll figure it out. Just don't get frustrated. Don't get mad at the shaker. The shaker is your friend.
Okay. Now we're going to strain this cocktail. Pretty much any time you're shaking something you're going to strain it.
Even if it's going to be on the rocks, you don't really want to pour it out from the shaker because all that ice is going to be broken. It's going to melt really fast. You want to pour that over fresh ice.
In this case we have an up glass. So, we're going to take our Hawthorne Strainer. It's called that for over 100 years. People aren't exactly sure why. They think it was because this guy Hawthorne invented it in the late 19th century. I'm pretty sure they're right but we'll probably never know.
And I'm going to fine strain this. As you'll see, this is a daiquiri here, there aren't any ice chips on top. It just gives it a silkier texture.
And, there you have it. That is how you shake and how you strain a cocktail.

You don't have to use a professional Boston Shaker like we do, any Boston Shaker will work for this tutorial. However, you will find a Boston Shaker creates a great seal and is easier to pull apart than a standard 3 piece cobbler shaker.

The Boston shaker can be harder to buy on some websites because they don't tell you which parts you get and which you need to buy separately. There is also a slight educational curve when it comes to cocktail shaking with a boston shaker which is easy to get over but intimidating tools are always a barrier to entry.
Pick the shaker that makes you feel best and upgrade as you see fit to whatever you find more advanced and fun.

A long time before the Boston tin cocktail shaker as we know it today was even invented, the original cocktail shaker had already been invented in South America. It is believed that this early cocktail shaker could be from 7000 BC. However, it wasn’t until the mid-19th century that the cocktail shaker we think of today, became a main stay behind many a bar. Up until this point, the favoured method of making mixed drinks or cocktails was by tossing the liquid back and forth between two glasses – supposedly the shaker was developed when some smart cookie came up with the idea of putting the two glasses together!
The New York Times credits George Foster with the first description of the modern shaker, written in 1848: “With his shirt sleeves rolled up, and his face in a fiery glow [he] seems to be pulling long ribbons of julep out of a tin cup.”
As with all things, many different people got hold of this new cocktail shaker – applying their own tweaks and changes – the result was 3 cocktail shakers that would stand the test of time, evolving from the original concept: the French, the Boston and the cobbler shaker.
The concept of the modern shaker was developed in the United states, this would later be called the Boston and would dominate American bars and cocktail establishments, whereas in Britain we were using the French shaker, later coined the Parisian. The earlier forms of the Boston shaker were simply a tin cup used in combination with a glass or another tin to mix drinks. Even as other forms of shaker such as the French and the Cobbler were noticed, the Boston held its own and maintained its popularity. It wasn’t until the late 20th century that we actually hear this tin and glass combination being referred to as the Boston cocktail shaker.
The evolution of the shaker continued with smaller tweaks and improvements. While early versions were made of tin, sometimes nickel-plated, or sterling silver (for high society), the final significant change came about with the invention of stainless steel. Our own Boston tin cocktail shaker’s are all stainless steel, and with the invention of this new compound came strong and stylish cocktail tins – but also meant they were durable and almost entirely rust proof.
Thanks to the ingenuity behind the Boston tin cocktail shaker, the French, and the Cobbler we can be thankful for the quality of mixed drinks we have today. A long time before the Boston tin cocktail shaker as we know it today was even invented, the original cocktail shaker had already been invented in South America. It is believed that this early cocktail shaker could be from 7000 BC. However, it wasn’t until the mid-19th century that the cocktail shaker we think of today, became a main stay behind many a bar. Up until this point, the favoured method of making mixed drinks or cocktails was by tossing the liquid back and forth between two glasses – supposedly the shaker was developed when some smart cookie came up with the idea of putting the two glasses together!
The New York Times credits George Foster with the first description of the modern shaker, written in 1848: “With his shirt sleeves rolled up, and his face in a fiery glow [he] seems to be pulling long ribbons of julep out of a tin cup.”
As with all things, many different people got hold of this new cocktail shaker – applying their own tweaks and changes – the result was 3 cocktail shakers that would stand the test of time, evolving from the original concept: the French, the Boston and the cobbler shaker.
The concept of the modern shaker was developed in the United states, this would later be called the Boston and would dominate American bars and cocktail establishments, whereas in Britain we were using the French shaker, later coined the Parisian. The earlier forms of the Boston shaker were simply a tin cup used in combination with a glass or another tin to mix drinks. Even as other forms of shaker such as the French and the Cobbler were noticed, the Boston held its own and maintained its popularity. It wasn’t until the late 20th century that we actually hear this tin and glass combination being referred to as the Boston cocktail shaker.
The evolution of the shaker continued with smaller tweaks and improvements. While early versions were made of tin, sometimes nickel-plated, or sterling silver (for high society), the final significant change came about with the invention of stainless steel. Our own Boston tin cocktail shaker’s are all stainless steel, and with the invention of this new compound came strong and stylish cocktail tins – but also meant they were durable and almost entirely rust proof.
Thanks to the ingenuity behind the Boston tin cocktail shaker, the French, and the Cobbler we can be thankful for the quality of mixed drinks we have today. We love the Boston shaker. We reach for it when our recipe calls for muddling an ingredient, or when we want a quick no-nonsense chilling device. You'll need to become adept at "cracking" the shaker (opening it just enough in the horizontal position to allow the cocktail to flow out around the ice) or use a julep or Hawthorne strainer to hold back the ice and other non-liquid ingredients as you fill your cocktail glass. The Boston shaker consists of a thick-walled "pint" glass and a slightly larger diametered stainless steel "tin" which tops the glass. Your ingredients (and ice) are placed into the glass; the glass gets snugly topped with the tin; and the joined pieces are inverted and shaken. After shaking, the joined shaker is placed on the bar with the tin on the bottom. The glass is released by sharply smacking the tin near its top while bracing the tin against the lip of the glass on the opposing side.

"Metamorphosis", refers to and was inspired by the 1915 short story The Metamorphosis by Franz Kafka. While all pieces were written in 1988, some were written for a staging of Metamorphosis, while others were for a documentary film called The Thin Blue Line directed by Errol Morris.
"Metamorphosis One" is played in an episode of Battlestar Galactica by Kara "Starbuck" Thrace. Within the narrative, her father composed and performed the piece. It is also played in the series finale of Person of Interest, Return 0. "Metamorphosis Two" formed the basis of one of the main musical themes in the film The Hours. It is also the song that the American rock band Pearl Jam uses as their introduction music to concerts.
*I prepared this release to celebrate 4 million streams of this composition in my interpretation on Youtube (a bit late though, because the number of views has grown since then). After several unlucky attempts to make this recording on different instruments and in different studios I returned to the same living room and the same piano - Steinway & Sons model O made in 1926. I can not possibly explain this, but despite all the obvious technical obstacles that stand before you while recording in a regular room, with all the uncontrolled reflections, with the old piano in poor condition which makes you suffer a lot, with all the additional vibrations, rattling strings, hammers that require voicing, with a creaking chair - it turns out to be exactly how I perceive this music. So, one piano, 2 microphones, beloved Philip Glass, and my personal story with the place where this record session took place.

Accepted onto the early admissions programme of the University of Chicago, Philip Glass graduated aged just nineteen with a degree in Mathematics and Philosophy, practising the piano in his spare time. Subsequently studying at the Juilliard School, Glass’s name has since become synonymous with the minimalist style. His film compositions have earned him a Golden Globe as well as three Academy Award nominations.
This selection of pieces showcases Glass’s music for solo piano, with each of the works baring the hallmarks of minimalism. Among the pieces featured in the collection is Metamorphosis, a set of five variations that evolve over the course of the entire work to create a stirring final movement. Also present are extracts from the soundtrack of Stephen Daldry’s film The Hours, as well as ‘Truman Sleeps’ from The Truman Show (which earned Glass a Golden Globe award for ‘Best Original Score’). The collection ends with the ‘Trilogy’ Sonata, containing piano transcriptions of Glass’s three ‘portrait’ operas: Einstein on the Beach, Satyagraha and Akhnaten.
Dutch pianist and composer Jeroen Van Veen studied at the Utrecht Conservatory and has played with many orchestras throughout Europe and the USA, under renowned conductors such as Howard Williams, Peter Eötvös and Robert Craft. An accomplished recitalist, van Veen has also appeared at festivals including the Reder Piano Festival and the Festival der Kunsten (Bad Gleichenberg). His compositional style is closely related to minimalism, and contains elements of jazz, blues and pop music.

Koyaanisqatsi: Life out of balance é um documentário lançado em 1983 dirigido por Godfrey Reggio com música do compositor Philip Glass.
É o filme mais conhecido da trilogia Qatsi, que é composta com as seqüências Powaqqatsi (1988) e Naqoyqatsi(2002).
A trilha sonora deste documentário possui grande importância pois o desenrolar tem a velocidade e o tom ditados por ela. Não existem diálogos e também não são feitas narrações durante todo o documentário.
São apresentadas cenas em paisagens naturais e urbanas, muitas delas com a velocidade de exibição alterada. Algumas cenas são passadas mais rapidamente e outras mais lentamente que o normal, criando, com a trilha sonora, uma idéia diferente da passagem do tempo. Vários dos efeitos apresentados se tornaram clichês usados em outros filmes e programas de televisão.
A palavra koyaanisqatsi tem origem na língua Hopi e quer dizer "vida desequilibrada", ou "vida louca". O significado é revelado ao final do documentário antes da apresentação dos créditos. No final do documentário são cantadas três profecias do povo Hopi em sua própria língua, as quais também têm aqui suas traduções.

Philip Glass
Philip Morris Glass (born January 31, 1937) is a classical American composer. He is considered one of the most influential music makers of the late 20th century. His music is also often controversially described as minimal music, along with the work of the other "major minimalists" La Monte Young, Terry Riley and Steve Reich.
Glass has distanced himself from the "minimalist" label, describing himself instead as a composer of "music with repetitive structures". Though his early mature music shares much with what is normally called "minimalist", he has since evolved stylistically. Currently, he describes himself as a "classicist", pointing out that he is trained in harmony and counterpoint and studied such composers as Franz Schubert, Johann Sebastian Bach, and Wolfgang Amadeus Mozart with Nadia Boulanger.
Glass has founded his namesake musical group, the Philip Glass Ensemble, with which he still performs on keyboards, and has written operas, musical theatre works, ten symphonies, eleven concertos, solo works, chamber music including seven string quartets and instrumental sonatas, and film scores. Three of his film scores have been nominated for Academy Awards.

Let's talk about how to shake a cocktail.
You probably have an idea of how, you know, just going back and forth and you're just chilling the ice. There actually is some techniques that are a good idea to master.
I've already built my cocktail in here. Now, this is a two piece tin. You can use the three piece ones, which are sort of self-explanatory.
I like these better because the ice really can travel and can chill the drink properly, chill it faster and then give it that really great, frothy texture that you want. Which is ideal for optimal deliciousness.
So, I've already built my drink in the small part of the tin. If I build it in the big part it might overflow when I combine them. So, small tin.
And now, we want to form that seal. Okay? So when you lift it up like that it stays together.
You'll notice that I have one part flush and then, so then there's the maximum distance here. Remember that.
So, I have two cocktails built here. And just to show off I'm going to shake them both.
Alright. So, if you're shaking two you want to hold them with two fingers on each side so that if you feel them separating you'll notice and you can, sort of, stop.
You should never be afraid of them separating on you if you form a tight enough seal. And if you're holding them properly, if it starts to break, you'll know before you make a mess.
If you're shaking one cocktail you can hold it together with both hands. But that's not what we're doing. We're going to go big today.
So, I'm going to be alone with my shakers while I rock this out.
Do you need to have a catchy rhythm when you're shaking? No. Should you? Yes.
Okay. You hear that? That's the seal already starting to break. Okay.
So, now we're going to break the seal. I'm not going to hit it on the part that's flush and I'm not going to try to break it on the largest distance. I'm going to go right in between. That sort of half way point.
With the palm of your hand. When you hear it start to hiss like that you know you already broke the seal. And then, just sort of jimmy it off.
It takes some practice to really get a feel for it. I've done this probably a thousand times. So, I really know how to do it.
But, don't feel bad if you're just like doing it a million times and can't get it. You'll figure it out. Just don't get frustrated. Don't get mad at the shaker. The shaker is your friend.
Okay. Now we're going to strain this cocktail. Pretty much any time you're shaking something you're going to strain it.
Even if it's going to be on the rocks, you don't really want to pour it out from the shaker because all that ice is going to be broken. It's going to melt really fast. You want to pour that over fresh ice.
In this case we have an up glass. So, we're going to take our Hawthorne Strainer. It's called that for over 100 years. People aren't exactly sure why. They think it was because this guy Hawthorne invented it in the late 19th century. I'm pretty sure they're right but we'll probably never know.
And I'm going to fine strain this. As you'll see, this is a daiquiri here, there aren't any ice chips on top. It just gives it a silkier texture.
And, there you have it. That is how you shake and how you strain a cocktail.

You don't have to use a professional Boston Shaker like we do, any Boston Shaker will work for this tutorial. However, you will find a Boston Shaker creates a great seal and is easier to pull apart than a standard 3 piece cobbler shaker.

While we prefer the user of a boston shaker for ease of cleaning, taking apart and general "cool factor" the most popular cocktail shaker that people buy is no doubt the cobbler shaker, or 3-piece cocktail shaker.
The cobbler shaker comes with all three pieces and is generally a cost effective solution to making cocktails and drinks that require shaking. However, our preference is the Boston shaker because it cleans easy and comes apart easy without being too much more expensive.
The Boston shaker can be harder to buy on some websites because they don't tell you which parts you get and which you need to buy separately. There is also a slight educational curve when it comes to cocktail shaking with a boston shaker which is easy to get over but intimidating tools are always a barrier to entry.
Pick the shaker that makes you feel best and upgrade as you see fit to whatever you find more advanced and fun.

A long time before the Boston tin cocktail shaker as we know it today was even invented, the original cocktail shaker had already been invented in South America. It is believed that this early cocktail shaker could be from 7000 BC. However, it wasn’t until the mid-19th century that the cocktail shaker we think of today, became a main stay behind many a bar. Up until this point, the favoured method of making mixed drinks or cocktails was by tossing the liquid back and forth between two glasses – supposedly the shaker was developed when some smart cookie came up with the idea of putting the two glasses together!
The New York Times credits George Foster with the first description of the modern shaker, written in 1848: “With his shirt sleeves rolled up, and his face in a fiery glow [he] seems to be pulling long ribbons of julep out of a tin cup.”
As with all things, many different people got hold of this new cocktail shaker – applying their own tweaks and changes – the result was 3 cocktail shakers that would stand the test of time, evolving from the original concept: the French, the Boston and the cobbler shaker.
The concept of the modern shaker was developed in the United states, this would later be called the Boston and would dominate American bars and cocktail establishments, whereas in Britain we were using the French shaker, later coined the Parisian. The earlier forms of the Boston shaker were simply a tin cup used in combination with a glass or another tin to mix drinks. Even as other forms of shaker such as the French and the Cobbler were noticed, the Boston held its own and maintained its popularity. It wasn’t until the late 20th century that we actually hear this tin and glass combination being referred to as the Boston cocktail shaker.
The evolution of the shaker continued with smaller tweaks and improvements. While early versions were made of tin, sometimes nickel-plated, or sterling silver (for high society), the final significant change came about with the invention of stainless steel. Our own Boston tin cocktail shaker’s are all stainless steel, and with the invention of this new compound came strong and stylish cocktail tins – but also meant they were durable and almost entirely rust proof.
Thanks to the ingenuity behind the Boston tin cocktail shaker, the French, and the Cobbler we can be thankful for the quality of mixed drinks we have today. Without the smart minds behind these inventions, who knows, we may still be trying to mix our drinks by pouring them from one glass to another – over and over again – or even mixing in the mouth like this bloke clearly trying, and failing, to make a lager cocktail

We love the Boston shaker. We reach for it when our recipe calls for muddling an ingredient, or when we want a quick no-nonsense chilling device. You'll need to become adept at "cracking" the shaker (opening it just enough in the horizontal position to allow the cocktail to flow out around the ice) or use a julep or Hawthorne strainer to hold back the ice and other non-liquid ingredients as you fill your cocktail glass. The Boston shaker consists of a thick-walled "pint" glass and a slightly larger diametered stainless steel "tin" which tops the glass. Your ingredients (and ice) are placed into the glass; the glass gets snugly topped with the tin; and the joined pieces are inverted and shaken. After shaking, the joined shaker is placed on the bar with the tin on the bottom. The glass is released by sharply smacking the tin near its top while bracing the tin against the lip of the glass on the opposing side.

Trial 1: All Men Are Equal
"In this court, all men are equal." You have heard
those words many times before. "All men are equal." But
what about all women ? Are women the equal of men ?
There are those who tell us that they are.
Last week, an auspicious meeting of women was held in
Kalamazoo. The meeting was addressed by a very
prominent lady who is noted for her modesty. She is so
modest that she blindfolds herself when taking a bath.
Modesty runs in her family. She has a nephew who is
just ten years of age. Sometimes, the nephew says "I'm
going to the forbidden name store." The little fellow
is too modest to say "I'm going to the A & P." Well,
here is what that modest lady said to the gathering of
women in Kalamazoo :
"My sisters : Thetime has come when we must stand up
and declare ourselves. For too long have we been
trodden under the feet of men. For too long have we
been treated as second-class citizens by men who say
that we are only good for cooking their meals, mending
their socks, and raising their babies.
"You have a boyfriend, and he calls you his queen.
Then, when he marries you, he crowns you. These are the
kind of men who, when they become romantic or, I should
say, when they are in a certain mood, they want to kiss
you and kiss you and kiss you again.
"My sisters, I say to you : Put your faces against it,
and, if the man takes from you without your permission,
look him squarely in the face, roll your eyes at him,
and say to him ‘How dare you, you male chauvinist pig !
You put that kiss right back where you got it from.’
"My sisters, we are in bondage, and we need to be
liberated. Liberation is our cry. Just yesterday, I
talked with a woman who is the mother of fifteen
children. She said ‘Yes, I want to be liberated from
the bedroom.’
"And so, my sisters, the time has come when we must let
this male chauvinist understand that the hand that
changes the diapers is the hand that shall rule the
world.
"And now, my sisters, let us stand and sing our
national song. For the benefit of you who have not yet
memorized the words, here they are :
