MEXICAN RECIPE BEEF BARBECUE

 

Had a good time without barbecue. A couple of days ago they gave me an electric pressure cooker. An Instant Pot and I was dying to release it so neither late nor lazy did I prepare this traditional Mexican barbecue recipe. An easy very Mexican barbecue recipe. At my parents' house on Sundays we used to have barbecue tacos or menudo for breakfast. I am fascinated by lamb barbecue, but here lamb is difficult to find and quite expensive, so beef barbecue is a cheaper option and just as rich as lamb barbecue.

WHAT DO I NEED TO PREPARE BARBECUE AT HOME

The ingredients to prepare homemade barbecue are very accessible and most likely you have them at home. The barbecue recipe varies from home to home and needless to say which region of Mexico you are from. The Chihuahua style barbecue or northern barbecue Recipe is the one that I teach you to prepare today. I am going to omit the maguey leaves because here in Chicago it is difficult to find them but the truth is that with these barbecue seasonings you will not miss it. Keep in consideration that a barbeque has to follow some rules.

HOW TO MARINATE MEAT FOR MEXICAN BARBECUE

Place on a grill:

5 garlic cloves

1/2 onion

1 tree chili

2 guajillo chilies

Toast these ingredients well, taking care that the chilies do not burn. They toast quickly so remove them before the onion and garlic. In case you are on a diet but you want to party, a barbeque with your friends is a great idea.

Put all the toasted ingredients in the blender along with 1 tsp oregano, 1/2 tsp cumin, 1 tbsp salt and 3 bay leaves. Add 1 cup of water and blend everything very well.

HOW TO MAKE BEEF BARBECUE STEP BY STEP

With the sauce that you created, marinate the meat for one night in the refrigerator. If you don't have time, don't worry, I prepared it without marinating and it was delicious, so if you marinate it, this will be gourmet.

Place the meat together with the marinade in the Instant pot and activate the Meat / Steaw button and let it cook.

Once it is finished and you can open the pot, let the meat cool a little and shred it.

Now, the barbecue is here and it is delicious but if you want to take it to another level. Place olive oil in a pan and fry the shredded meat.

What I did was leave the broth in the pot, add another 5 cups of water, half a spoon of salt, half an onion, a bunch of coriander and I put it in the soup cooking option. There is still a consommé to lick your fingers, you can add cooked chickpeas and there you have the food for the next day.

WHAT KIND OF MEAT SHOULD I USE TO MAKE FOR MEXICAN BEEF BARBECUE.

The type of barbecue meat that I use depends on how I want to prepare it. If you are looking for a low fat and healthy barbecue recipe I have the perfect recipe made with shank meat. I have the low fat or light barbecue recipe here

Chambarete: if you are looking for a low-fat and healthier fit barbecue.

Beef brisket: It is very delicious and soft, I try to cut the extra pieces of fat.

Any type of meat to shred. The side dishes for a great barbeque are the Texas ones.

If you live in the United States, the cuts in English to prepare Mexican barbecue that you can use are: chuck  roast or Pot  roast  chuck roast. for this recipe I used chuck roast and it worked perfectly and was delicious.

You can prepare this traditional Mexican barbecue recipe in different ways, here I give you options in case you don't have an express pot, Instant Pot, oven ... you can also perfectly steam barbecue on the stove without any problem.

HOW TO PREPARE BEEF BARBECUE IN EXPRES OR INSTANT POT.

The first thing is to season the meat very well with the recipe that I share with you and preferably leave it marinating the night before. If you don't have time, don't worry, just put everything in the amounts mentioned in the pot and it is delicious anyway.

Once the pot reaches the indicated pressure, it takes about 30 minutes for the meat to cook for the barbecue. If you are using Instant Pot put it in the Meat / Steaw function. 

HOW TO PREPARE MEXICAN BEEF BARBECUE WITHOUT OVEN

Place the marinated meat on a large piece of aluminum foil. Wrap in the aluminum and close the edges very well so that the steam cannot escape and, much more importantly, the juice. Let steam for about 45 minutes. 

HOW TO PREPARE BARBECUE IN THE OVEN

Season the meat and leave it to marinate overnight. To cook beef barbecue in the oven, place the meat in a suitable baking dish and cover very well with aluminum foil so that the steam does not escape. Bake at 360 degrees for 40 minutes. A chap smoker can be more efficient than an expensive smoker. Check and if it takes a little more, put it again for another 20 minutes. Try to cut the meat into medium pieces so that it cooks faster.

In an instant pot and pressure cooker it takes around 30 minutes, in steamed aluminum around 45 min.

Once it is finished and you can open the pot, let the meat cool a little and shred it. That's why you need to pat your steak after cooking it on a smoker.

You can serve it like this or pass it through a pan with a little olive oil to fry the meat.

Serve in corn tortillas and accompany with its good sauce, onion and coriander
