We are equally at home executing an intimate gathering as we are a 300-person wedding or corporate meeting. Chef Pierre Schaedelin’s renowned artistry was formed by years of working in some of the best kitchens of London, France and New York. Taking his inspiration from seasonal, locally-sourced food, Pierre believes that quality cuisine will speak for itself. His approach is original, executed with a classically-trained hand. Beyond his sumptuous dishes, PS Tailored Events proudly offers full-service event production with meticulous attention to elegance and detail. Our experienced team is here to help with every aspect of planning and creating the event of your dreams. As the preferred provider of Martha Stewart, we have successfully catered and staffed events for clients that include President Francois Hollande of France, United Nations Secretary-General Ban Ki-moon, designer Vera Wang, the Microsoft Corporation, Mount Sinai Hospital, and Paulson & Co. We happily serve clients within New York City as well as in the greater New York area, including Westchester County, Upstate New York, Connecticut and the Hamptons.

Our Story

Jamie Unwin

Jamie Unwin is co-founder and director of operations at PS Tailored Events. He is a food, beverage and hospitality specialist with over twenty years of experience working in restaurants and hotels in New York and London with very prominent chefs. After moving from his native London to New York, Jamie continued to work in his chosen field, assisting famed chef Jean-Georges Vongerichten for eight years. He has held director and management positions at some of New York City’s best culinary institutions, including JoJo Restaurant, the Mercer Kitchen, and the Mark Restaurant at the Mark Hotel.

Pierre Schaedelin

Pierre Schaedelin, chef and founder, demonstrated an interest in cooking at an early age; helping his mother and grandmother in their home kitchens of Alsace, France. After working in the Michelin 3-star restaurants Auberge du l`ill and Alain Ducasse`s Louis XV, Pierre accepted an exciting opportunity and moved to the United States to become executive chef at Le Cirque. After six years at Le Cirque, Pierre desired to spread his culinary wings and accepted the position of Private Chef to Martha Stewart. Pierre’s work with Stewart allowed him to hone his catering and entertaining skills. Pierre proudly co-authored Martha's Entertaining: A Year of Celebrations (2011, Clarkson Potter). Pierre is grateful for the confidence and inspiration Stewart gave him to create PS Tailored Events.
