Apple cider vinegar, otherwise known as cider vinegar or ACV, is a type of vinegar made from cider or apple must and has a pale to medium amber color. Unpasteurized or organic ACV contains mother of vinegar, which has a cobweb-like appearance and can make the vinegar look slightly congealed.
ACV is used in salad dressings, marinades, vinaigrettes, food preservatives, and chutneys, among other things. It is made by crushing apples and squeezing out the liquid. Bacteria and yeast are added to the liquid to start the alcoholic fermentation process, and the sugars are turned into alcohol. In a second fermentation process, the alcohol is converted into vinegar by acetic acid-forming bacteria (acetobacter). Acetic acid and malic acid give vinegar its sour taste.
Vinegar (and other acidic liquids) have long been proposed as agents to enable weight loss; a proposed mechanism is that it prolongs the sensation of satiety after eating.
Apple cider vinegar contains chromium which can alter insulin levels and it is therefore recommended that people who have diabetes should talk to their doctors before using ACV. ACV is highly acidic; in one recorded instance, a woman experienced esophageal burns after an ACV pill got caught in her throat.
Vinegar is a liquid consisting of about 5-20% acetic acid (CH3COOH), water and other trace chemicals, which may include flavorings. The acetic acid is produced by the fermentation of ethanol by acetic acid bacteria. Vinegar is now mainly used as a cooking ingredient. Historically, as the most easily available mild acid, it had a great variety of industrial, medical and domestic uses, some of which (such as its use as a general household cleanser) are still promoted today.
Commercial vinegar is produced either by fast or slow fermentation processes. In general, slow methods are used with traditional vinegars, and fermentation proceeds slowly over the course of months or a year. The longer fermentation period allows for the accumulation of a nontoxic slime composed of acetic acid bacteria. Fast methods add mother of vinegar (bacterial culture) to the source liquid before adding air to oxygenate and promote the fastest fermentation. In fast production processes, vinegar may be produced in 20 hours to three days.
Apple cider (also called sweet cider or soft cider) is the name used in the United States and parts of Canada for an unfiltered, unsweetened, non-alcoholic beverage made from apples. Though typically referred to simply as "cider" in those areas, it is not to be confused with the alcoholic beverage known as cider throughout most of the Europe, called hard cider (or just cider) in North America.
Once widely pressed at farmsteads and local mills, apple cider is easy and inexpensive to make. It is typically opaque due to fine apple particles in suspension and generally tangier than conventional filtered apple juice, depending on the apples used. Today, most cider is treated to kill bacteria and extend its shelf life, but untreated cider can still be found. In either form apple cider is a seasonally produced drink of limited shelf-life that is typically available only in autumn. It is traditionally served on the Halloween, Thanksgiving, Christmas and various New Year's Eve holidays, sometimes heated and mulled. It is the official state beverage of New Hampshire.
