Togo

Togo (ⁱ/ˈtoʊɡoʊ/), officially the Togolese Republic (French: République Togolaise), is a country in West Africa bordered by Ghana to the west, Benin to the east and Burkina Faso to the north. It extends south to the Gulf of Guinea, where its capital Lomé is located. Togo covers 57,000 square kilometres (22,000 sq mi), making it one of the smallest countries in Africa, with a population of approximately 7.5 million.

Togo is a tropical, sub-Saharan nation, highly dependent on agriculture, with a climate that provides good growing seasons. The official language is French, with many other languages spoken in Togo, particularly those of the Gbe family. The largest religious group in Togo consists of those with indigenous beliefs, and there are significant Christian and Muslim minorities. Togo is a member of the United Nations, African Union, Organisation of Islamic Cooperation, South Atlantic Peace and Cooperation Zone, La Francophonie and Economic Community of West African States.

From the 11th to the 16th century, various tribes entered the region from all directions. From the 16th century to the 18th century, the coastal region was a major trading center for Europeans in search of slaves, earning Togo and the surrounding region the name "The Slave Coast". In 1884, Germany declared Togoland a protectorate. After World War I, rule over Togo was transferred to France. Togo gained its independence from France in 1960.

homemade Ghanaian - Senegalese : Waakye (Rice & beans) , stew & Dibi
Togo: Ayimolou Benin : Atassi Nigeria: Rice and beans Waakey 2 cups rice 1 cup red beans or black-eyed peas, or any kind of beans or peas 4 dry sorghum leaves (or 1 teaspoon of baking soda) 1 small onion Salt to taste water Wash and soak the beans in water for 3–4 hours. Drain the beans and place them in a large pot of water. Bring the mixture to a boil and let it cook for about 45 minutes. Wash the sorghum leaves. Cut the leaves 3 to 4 inches, toss them in with the boiling beans, and allow them to cook together. If sorghum leaves are not available, add a teaspoon of baking soda to give the Waakye its characteristic color. Remove the sorghum leaves from the beans after 5 minutes. Wash the rice and add to the beans in the pot, along with more water. Allow the mixture to cook for 15–20 minutes (or until the beans are tender and the rice is cooked and all liquid has been totally absorbed). Be sure that the mixture does not burn and keep stirring while it cooks. Season with salt. Stew 3 onions (Sliced) 3 tomatoes puree 2 scotch bonnet pepper (depending on how spicy you want it) 1 small can of tomato paste 2 cup of oil 1 teaspoon of ginger 2 teaspoon of garlic 1 teaspoon of cube 1 teaspoon of black pepper 1 cup of african small smoked fish Spices (Lawry's seasoning salt,black pepper,parsley flakes,etc...any of your choice) Add the oil to sauce pan, after 1 minute sliced onion, on medium heat; stir for 35 min. Add in your tomato paste, let it simmer for 20mins. Add all the dry ingredients and add the wet ingredients little by little To avoid a mess: oil and water don't mix Let simmer for 20 mins, you can't stop stirring Dibi 1-2lb loin chops 1 medium onion, finely chopped 1⁄4 cup grainy French mustard 1 teaspoon of ginger 2 teaspoon of garlic 1 teaspoon of cube 1 teaspoon of black pepper 1 teaspoon of bouillon cube salt 3*50 mm Aluminium foil Pose 1 foil on top of the other (kinder perpendicular) Add and Mix all the ingredients and close put the 3rd foil on top Put it in the oven for 1 hour at 450F. after that time open and stir put it back in the oven and stir every 15 min for another hour.
