Having spread milk bars and democracy in Australia, the Greeks continue to shape Sydney food trends in 2018.

A Greek patisserie, the Good Filo, has just launched at Ramsgate, a number of new Greek restaurants are in the works after a rash of openings in recent years, and Opa Greek Meze Bar has opened in Rozelle.

Opa covers the standard Greek path with moussaka, while also knocking out dishes such as fig and walnut salad.

"I'm Greek and I've been married to David [the chef] for 18 years, so he's an honorary Greek," says owner Annette Fyfe.

"He's learned a lot from my mother and is using some of her recipes. A Greek chef came in and tried his kritharaki [a one-pot chicken and risoni pasta dish] and could tell where my mum is from in Greece after tasting it," Fyfe says.

The interior, which mixes stripped walls and tile finishes, is crafted by designer Matt Woods (Bloodwood).

Fyfe believes the time is right for Greek food. "[It's] actually quite healthy," she says. And they want to extend its reach. "In a couple of weeks we'll start doing a Greek brunch at weekends."
