Chilean cuisine stems mainly from the combination of traditional Spanish cuisine, Chilean Indigenous Mapuche culture and local ingredients, with later important influences from other European cuisines, particularly from Germany, Italy and France. The food tradition and recipes in Chile are notable for the variety of flavours and ingredients, with the country’s diverse geography and climate hosting a wide range of agricultural produce, fruits and vegetables. The long coastline and the peoples' relationship with the Pacific Ocean add an immense array of seafood products to Chilean cuisine, with the country's waters home to unique species of fish, molluscs, crustaceans and algae, thanks to the oxygen-rich water carried in by the Humboldt Current. Chile is also one of the world’s largest producers of wine and many Chilean recipes are enhanced and accompanied by local wines.
With the arrival of the Spanish conquerors led by Pedro de Valdivia in 1540 came some of the products that would become staples of Chilean cuisine - wheat, pigs, sheep, cattle, chickens and wine - while the native peoples contributed potatoes, maize, beans, and seafood. Various combinations of these basic ingredients form the basis of most characteristic Chilean dishes. After the establishment of the colony, products and dishes like chuchoca (coarsely ground dry corn), Humitas, Locro and seaweeds like Cochayuyo and Luche served with boiled eggs became popular. Meals in colonial times tended to be heavy and rich. Lunch was always bigger than dinner, starting with a dish called “De Residencia” of fish, meat, or poultry, followed by a “Guiso” stew with Choclo (fresh sweet corn) and potatoes. There were 3 kinds of bread accompanying the meals: Tortilla de rescoldo, Spanish bread (made of fatty dough), and Chilean bread (flat and crunchy). Lunch and dinner ended with herbal infusions, generally Paico to help digestion, and finally fruit for dessert, mainly strawberries and Lucumas.
Food is any substance consumed to provide nutritional support for the body. It is usually of plant or animal origin, and contains essential nutrients, such as fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or stimulate growth.
Historically, people secured food through two methods: hunting and gathering and agriculture. Today, the majority of the food energy required by the ever increasing population of the world is supplied by the food industry.
Food safety and food security are monitored by agencies like the International Association for Food Protection, World Resources Institute, World Food Programme, Food and Agriculture Organization, and International Food Information Council. They address issues such as sustainability, biological diversity, climate change, nutritional economics, population growth, water supply, and access to food.
The right to food is a human right derived from the International Covenant on Economic, Social and Cultural Rights (ICESCR), recognizing the "right to an adequate standard of living, including adequate food," as well as the "fundamental right to be free from hunger."

Santiago (/ˌsæntiˈɑːɡoʊ/; Spanish pronunciation: [sanˈtjaɣo]), also known as Santiago de Chile [sanˈtjaɣo ðe ˈtʃile], is the capital and largest city of Chile. It is also the center of its largest conurbation. Santiago is located in the country's central valley, at an elevation of 520 m (1,706 ft) above mean sea level.
Founded in 1541, Santiago has been the capital city of Chile since colonial times. The city has a downtown core of 19th century neoclassical architecture and winding side-streets, dotted by art deco, neo-gothic, and other styles. Santiago's cityscape is shaped by several stand-alone hills and the fast-flowing Mapocho River, lined by parks such as Parque Forestal. The Andes Mountains can be seen from most points in the city. Santiago's steady economic growth over the past few decades has transformed it into a modern metropolis. The city is now home to a growing theater and restaurant scene, extensive suburban development, dozens of shopping centers, and a rising skyline, including the tallest building in Latin America, the Gran Torre Santiago. It includes several major universities, and has developed a modern transportation infrastructure, including a free flow toll-based, partly underground urban freeway system and the Metro de Santiago, South America's most extensive subway system. Santiago is the cultural, political and financial center of Chile and is home to the regional headquarters of many multinational corporations. The Chilean executive and judicial powers are located in Santiago, but Congress meets in nearby Valparaíso.

One of the classic Chilean snack food dishes worth trying when visiting Santiago is something called Chorrillana. This dish, which is worth sharing with a friend of two, is basically a mountain of french fries with sliced beef, fried egg and fried onion on top. We've now had it enough times to realize no two restaurants make it the same. We've seen fried egg versus scrambled egg, tenderloin versus sliced sausage and several different ways of preparing the onion. At the restaurant we filmed this video (Galindo) they prepared it with tenderloin, scrambled egg and caramelized onions. We've also heard of chorizo, tomatoes and even bananas being thrown on top of the fries! It's the kind of dish, much like poutine in Canada, where you can play around with it to suit any kind of taste. Regardless...

Once we arrived in Singapore from our Silkair flight, we decided to go to the Private Room to enjoy some dinner and champagne. Once we got there, we realized we were the only ones there so we had lots of attention, and got to really try out the menu. The food in the Private Room is okay but not particularly memorable. I actually think Cathay Pacific The Pier has a better restaurant. Nevertheless, free dinner and champagne is always good. We returned the next morning for breakfast which was tasted much better compared to the dinner menu. Either way, we were excited to be onboard this 5 hour journey to Beijing. Since it was a day time flight and less than 9 hours, we did not receive an amenity kit as part of new cost cutting procedures at Singapore. The crew I would say were average at bes...
