Bak kut teh

Bak-kut-teh (also spelt bah-kut-teh; Chinese: 肉骨茶; Pe̍h-ōe-jī: bah-kut-tê) is a meat dish cooked in broth popularly served in Malaysia and Singapore, where there is a predominant Hoklo and Teochew community, and also in neighbouring areas like the Sumatra, Indonesia and Southern Thailand.

The name literally translates as "meat bone tea", and at its simplest, consists of meaty pork ribs simmered in a complex broth of herbs and spices (including star anise, cinnamon, cloves, dang gui, fennel seeds and garlic) for hours. Despite its name, there is in fact no tea in the dish itself; the name refers to a strong oolong Chinese tea which is usually served alongside the soup in the belief that it dilutes or dissolves the copious amount of fat consumed in this pork-laden dish.

However, additional ingredients may include offal, varieties of mushroom, choy sum, and pieces of dried tofu or fried tofu puffs. Additional Chinese herbs may include yu zhu (玉竹, rhizome of Solomon's Seal) and ju zhi (buckthorn fruit), which give the soup a sweeter, slightly stronger flavor. Light and dark soy sauce are also added to the soup during cooking, with varying amounts depending on the variant - the Teochews version is lighter than the Hokkiens'. The dish can be garnished with chopped coriander or green onions and a sprinkling of fried shallots.

Kuala Lumpur

Kuala Lumpur (/ˈkwɑːləˈlʊmpʊər/ or /-pər/; Malaysian pronunciation: [ˈkwalə ˈlumpʊr]) is the national capital and most populous global city in Malaysia. The city covers an area of 243 km² (94 sq mi) and has an estimated population of 1.6 million as of 2010.Greater Kuala Lumpur, covering similar area as the Klang Valley, is an urban agglomeration of 7.5 million people as of 2012. It is among the fastest growing metropolitan regions in South-East Asia, in terms of population and economy.

Kuala Lumpur is the seat of the Parliament of Malaysia. The city was once home to the executive and judicial branches of the federal government, but they were moved to Putrajaya in early 1999. Some sections of the judiciary still remain in the capital city of Kuala Lumpur. The official residence of the Malaysian King, the Istana Negara, is also situated in Kuala Lumpur. Rated as an alpha world city, Kuala Lumpur is the cultural, financial and economic centre of Malaysia due to its position as the capital as well as being a key city. Kuala Lumpur is defined within the borders of the Federal Territory of Kuala Lumpur and is one of three Malaysian Federal Territories. It is an enclave within the state of Selangor, on the central west coast of Peninsular Malaysia. Since the 1990s, the city has played host to many international sporting, political and cultural events including the 1998 Commonwealth Games and the Formula One Grand Prix. In addition, Kuala Lumpur is home to the tallest twin buildings in the world, the Petronas Twin Towers, which have become an iconic symbol of Malaysia's futuristic development.

Holland Drive

Holland Drive (Chinese: 荷兰路) is a subzone and road located in Queenstown, Singapore.

The most interesting place along Holland Road is arguably Holland Village, a neighborhood located along the Bukit Timah–Queenstown boundary, that has become famous for restaurants, cafes and nightspots and is frequented by expatriates.

Etymology

Holland Drive and Holland Village were named after an early resident in Singapore, Hugh Holland, who was an architect. Holland Drive was named after its main road, Holland Road, in 1972.

Street food

Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth,food cart, or food truck and meant for immediate consumption. Some street foods are regional, but many have spread beyond their region of origin. Most street foods are classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.

Today, people may purchase street food for a number of reasons, such as to get flavorful food for a reasonable price in a sociable setting, to experience ethnic cuisines, or for nostalgia.

History

Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.

Singapore

Singapore (ⁱ/ˈsɪŋɡəpɔːr/), officially the Republic of Singapore, and often referred to as the Lion City, the Garden City, and the Red Dot, is a global city in Southeast Asia and the world's only island city-state. It lies one degree (137 km) north of the equator, at the southernmost tip of continental Asia and peninsular Malaysia, with Indonesia's Riau Islands to the south. Singapore's territory consists of the diamond-shaped main island and 62 islets. Since independence, extensive land reclamation has increased its total size by 23% (130 km²), and its greening policy has covered the densely populated island with tropical flora, parks and gardens.

The islands were settled from the second century AD by a series of local empires. In 1819, Sir Stamford Raffles founded modern Singapore as a trading post of the East India Company; after the company collapsed, the islands were ceded to Britain and became part of its Straits Settlements in 1826. During World War II, Singapore was occupied by Japan. It gained independence from Britain in 1963, by uniting with other former British territories to form Malaysia, but was expelled two years later over ideological differences. After early years of turbulence, and despite lacking natural resources and a hinterland, the nation developed rapidly as an Asian tiger economy, based on external trade and its human capital.
