Cognac (/ˈkɒnjæk/ KON-yak ; French pronunciation: [kɔ.ɲak]), named after the town of Cognac in France, is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charente-Maritime.
For a brandy to bear the name Cognac, an Appellation d'origine contrôlée, its production methods must meet certain legal requirements. In particular, it must be made from specified grapes (see below), of which Ugni blanc, known locally as Saint-Emilion, is the one most widely used. The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. Cognac matures in the same way as whiskies and wine when aged in barrels, and most cognacs are aged considerably longer than the minimum legal requirement.
The region authorised to produce cognac is divided into six zones, including five crus broadly covering the department of Charente-Maritime, a large part of the department of Charente and a few areas in Deux-Sèvres and the Dordogne. The six zones are: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bon Bois and finally Bois Ordinaire. A blend of Grande and Petite Champagne Cognacs, with at least half coming from Grande Champagne, is known as Fine Champagne.
Rémy Martin (French pronunciation: [ʁemi maʁtɛ̃]) is a French firm that primarily produces and sells cognac (a brandy from the Cognac region of France). The brand specialises in Cognac Fine Champagne, which was originally produced by French winemaker, Rémy Martin.
Martin founded the business in 1724. As of 2011, it was owned by Rémy Cointreau, a company established in 1991.
As of May 2012, the company promotes its cognac product for its aging process of between 10 and 37 years (the standard for other brands is 6 years).
Jas Hennessy & Co., or more simply Hennessy, is a cognac house with headquarters in Cognac, France. Jas Hennessy & Co. sells about 50 million bottles a year worldwide, or more than 40 percent of the world’s cognac, making it the world's largest cognac producer. It is owned by Moët Hennessy, which is in turn owned by LVMH (66%) and Diageo (34%).
The Hennessy cognac distillery was founded by Irishman Richard Hennessy in 1765. During the 1970s, Kilian Hennessy, a fifth generation direct descendent of Hennessy, became the CEO of Hennessy, succeeding his first cousin Maurice-Richard. Kilian Hennessy spearheaded the company's 1971 merger with Moët et Chandon, which created Moët Hennessy.
Moët Hennessy merged with Louis Vuitton in 1987, creating one of the world's largest luxury brand conglomerates, Louis Vuitton • Moët-Hennessy or LVMH. In 1988, a management crisis led to the group's takeover by Bernard Arnault, owner of the haute couture house Christian Dior, with the support of Guinness. Kilian Hennessy remained on the company's advisory board until his death in 2010 at the age of 103.

Cognac has long held a reputation for being a drink consumed by old men sitting by the fireplace, perhaps with a cigar in hand. Working with the BNIC, Flow Films looked at this historic drink through a modern lens -- injecting renewed spirit into the iconic beverage. The film follows mixologists Marcos Tello and Kyle Branche who blend Cognac into cocktails, Michelin-starred chef David Féau who pairs Cognac with food, and passionate Cognac producers who are utilizing new techniques to produce the best possible product. By giving attention to some of the smallest (Cognac Paul Giraud) and largest (Martell, Hennessy, Remy Martin) craftsmen in the region, Flow Films was able to capture an accurate portrait of Cognac production. Equally entertaining and educational, the film also takes the v...

Cognac Review: Hennessy XO Nose Rum cake, raisins, cinnamon, spices and nutmeg. Palate Red licorice, cinnamon, cloves, milk chocolate and hazelnuts. Finish Long, black pepper accented red fruits like strawberries, currants adorn a backbone of Swiss milk chocolate. Conclusion Highly recommended cognac. PS. In this review I state the age of the eau de vie used in this cognac range from 10 to 70 years and the average age of eau de vie is 45 years. I am not sure that claim is legit anymore. Here is the website where I saw that claim: https://blog.cognac-expert.com/hennessy-xo-review-henny-tasting/comment-page-1/#comment-174558 I have left a comment asking them to advise. This is the downfall of my unscripted and unedited reviews. All the best, Jason https://jason-scotchreview...

After fermentation, the white wine is distilled into 'eau-de-vie.' To become Cognac, this involves a double distillation, for which only the heart, or middle portion of the second distillation is retained. The heads, too high in alcohol, and the tails, lacking harmony, are carefully removed and distilled over again to perfection. For its first distillation, the unfiltered wine is brought to boil in the copper pot. Since alcohol evaporates faster than water, alcoholic vapors can be collected in the onion dome shaped cowl and in the swan neck, which slows the rectification process of the flavors, before passing into the long serpentine condenser coil. Vapors condense to the contact of the cooler and turn into a liquid known as 'brouilli,' with an alcoholic content of 27 to 30% vol. This is ...

I happened upon this wonderful preparation of fine cognac while adventuring in Entebbe, Uganda several years ago. Many people wonder why cognac is so expensive and sought after and I frequently describe this ritual to interested parties, so please enjoy! In this preparation, I used a tea kettle and tea cup, a brandy snifter, a small pitcher of local honey and a bottle of Remy Martin XO, because it is a nice and accessible cognac.
I lie half awake
Late at night
I reach out to touch you
To feel you by my side
And I reach
And I reach
But I never get to feel you
Will I ever get to feel you again?
Again...
Just one more time
One more moment
To take you in my arms
One more chance
One more kiss
Before I wake to find you gone
One more time
Before I have to face another day
And my heart breaks...again
It's only a dream
But it's also real
I don't want it to end
But I know it will
So I pray and I pray
Every night I'm on my knees
Begging for the chance to see you again
Again…
