Brown rice (or "hulled" or "unmilled" rice) is whole grain rice. It has a mild, nutty flavor, and is chewier and more nutritious than white rice. Brown rice has the bran and germ, which are removed to make white rice. Any rice, including long-grain, short-grain, or glutinous rice, may be eaten as brown rice. Although widely believed to be superior nutritionally to white rice, the nutritive value of brown rice has recently been challenged due to concerns over arsenic levels.
Brown rice and white rice have similar amounts of calories and carbohydrates. The main differences between the two forms of rice lie in processing and nutritional content. It is a whole grain with a good source of magnesium, phosphorus, selenium, thiamine, niacin, vitamin B6, an excellent source of manganese and high in fiber.
When only the outermost layer of a grain of rice (the husk) is removed, brown rice is produced. To produce white rice, the next layers underneath the husk (the bran layer and the germ) are removed, leaving mostly the starchy endosperm.
Rice is the seed of the grass species Oryza sativa (Asian rice) or Oryza glaberrima (African rice). As a cereal grain, it is the most widely consumed staple food for a large part of the world's human population, especially in Asia. It is the agricultural commodity with the third-highest worldwide production, after sugarcane and maize, according to 2012 FAOSTAT data.
Since a large portion of maize crops are grown for purposes other than human consumption, rice is the most important grain with regard to human nutrition and caloric intake, providing more than one-fifth of the calories consumed worldwide by humans.
Wild rice, from which the crop was developed, may have its native range in Australia. Chinese legends attribute the domestication of rice to Shennong, the legendary emperor of China and inventor of Chinese agriculture. Genetic evidence has shown that rice originates from a single domestication 8,200–13,500 years ago in the Pearl River valley region of China. Previously, archaeological evidence had suggested that rice was domesticated in the Yangtze River valley region in China.
A whole grain is a cereal grain that contains the germ, endosperm, and bran, in contrast to refined grains, which retain only the endosperm.
Common whole grains include:
Common wholegrain products include:
Common refined non-wholegrain products include:
Wholegrain products can be identified by the ingredients list. "Wheat flour" (as opposed to "wholegrain wheat flour" or "whole-wheat flour") as the first ingredient is not a clear indicator of the product's wholegrain content. If two ingredients are listed as grain products but only the second is listed as wholegrain, the entire product may contain between 1% and 49% wholegrain. Many breads are colored brown (often with molasses or caramel color) and made to look like wholegrain when they are not. In addition, some food manufacturers make foods with wholegrain ingredients, but, because wholegrain ingredients are not the dominant ingredient, they are not wholegrain products. Contrary to popular belief, wholegrains are not indicative of fiber. The amount of fiber varies from grain to grain, and some products may have things like bran, peas, or other foods added to boost the fiber content.
Brown is the color of dark wood or rich soil. Brown is a composite color; in printing or painting, brown is made by combining red, black and yellow, or red, yellow and blue. In the RGB color model used to make colors on television screens and computer monitors, brown is made by combining red and green, in specific proportions. The brown color is seen widely in nature, in wood, soil, and human hair color, eye color and skin pigmentation. In Europe and the United States, brown is the color most often associated with plainness, humility, the rustic, and poverty. Brown is also, according to public opinion surveys in Europe and the United States, the least favorite color of the public.

Wild rice is actually a species of marsh grass found growing naturally in shallow aquatic wetlands, lakes and slow moving streams. Referred to as manoomin which means "the good berry", wild harvested rice is an indigenous sacred food of the Native American Anishnaabe (Ojibwa) people of Minnesota and the Great Lakes region. The texture and taste of wild rice is chewier with a distinctive roasted nutty flavor compared to other kinds of rice and can be a healthy gluten-free alternative to other grains. Unknown to most people, all wild rice is not necessary "wild", as the term might imply. True wild rice is harvested from naturally growing aquatic grass fields and the other is a cultivated paddy-grown variety, created from the same wild species Zizania palustris. This is an experimental all grain beer. The main difference between this and the normal method for making an all grain beer was I just did a 60 minute mash and skipped the boil step altogether. The hops were added to the mash in two stages (@60 mins and @ 15 mins). The mash was then drained/sieved into the fermenter and then sparged as per normal. The fermatition was done as I would do (2 weeks @ 18C) and then bottle conditioned. Basic Recipe (makes 6 litres in Fermenter) 1kg Pale Ale Malt 100gms Roasted Wheat 100gms Biscuit Malt 50gms Light Chocolate Malt 5gms Pacific Jade @ 60 min (start of mash) 15gms Pacific Jade @ 15 mins (45 mins into mash) US-05 yeast (1/2 packet) Method: - Add all grains and 60 min hops (5gms) to 4 litres of 75C water in large saucepan. - Cover with lid/towel an...
