Hat Yai (Thai: หาดใหญ่, pronounced [hàːt jàj], also Haad Yai or Had Yai) is a city in southern Thailand near the Malaysian border. Located at 7°1′N 100°28′E / 7.017°N 100.467°E / 7.017; 100.467, it is 946 km (588 mi) south of Bangkok, and has a population of 158,218 (2012) in the city itself and about 800,000 in the greater Hat Yai area. Hat Yai is the largest city of Songkhla Province, the largest metropolitan area in the south, and the third largest metropolitan area of the country. It is often mistaken for being the provincial capital. In fact, Songkhla is the capital and the center of administration and culture while Hat Yai is the business center.
Originally named Khok Sa-Met Choon, Hat Yai was a small village until the southern railway was built there, making it one of the major rail hubs of the line. The junction which connected the town of Songkhla with the main route was formerly in the Utapao area, but was later moved to Khok Su-Met Choon in 1922 when the Utapao area turned out to be flood-prone. At that time, Khok Su-Met Choon had only four residents, but thanks to the investments of Khun Niphat Chinnakorn (謝枢泗, Jia Gi Si, 1886–1972, Hakka Chinese), the railway contractor for the railway line from Nakhon Si Thammarat to Pattani, it quickly grew into a small town.

Thailand is governed by the National Council for Peace and Order that took power in the May 2014 coup d'état.Its monarchy is headed by King Bhumibol Adulyadej, who has reigned since 1946 as Rama IX, as he is the ninth monarch of the Chakri Dynasty. He is currently the world's longest-serving head of state and the country's longest-reigning monarch; he has reigned for 7009219907440000000♠69 years, 250 days.

Thai cuisine is the national cuisine of Thailand. Balance, detail, and variety are of paramount significance to Thai chefs. In his book The Principles of Thai Cookery, celebrity chef, writer, and authority on Thai cuisine McDang wrote:
"What is Thai food? Every country in the world has its own food profile. It reflects its culture, environment, ingenuity and values. In the case of Thailand, these words come to mind: intricacy; attention to detail; texture; color; taste; and the use of ingredients with medicinal benefits, as well as good flavor.

Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.

Klonghae Floating Market is the jewel of Songkhla province. Around four kilometers from Hat Yai, on the weekends this canal is covered in permanently moored boats selling some of the finest goods the region has to offer. Vendors here sell everything from home- cooked food to tropical fruits and and other snacks, all for unbelievably reasonable prices.
