Amman (English pronunciation: /ɑːˈmɑːn/; Arabic: عمّان) is the capital and most populous city of Jordan, and the country's economic, political and cultural centre. Situated in north-central Jordan, Amman is the administrative centre of the Amman Governorate. It has a population of 4,007,526 and a land area of 1,680 square kilometres (648.7 sq mi). Today, Amman is considered to be among the most liberal and westernized Arab cities. It is a major tourist destination in the region, particularly among Arab and European tourists.
The earliest evidence of settlement in the area is a Neolithic site known as 'Ain Ghazal. Its successor was known as "Rabbath Ammon", which was the capital of the Ammonites, then as "Philadelphia", and finally as Amman. It was initially built on seven hills but now spans over 19 hills combining 27 districts, which are administered by the Greater Amman Municipality headed by its mayor Aqel Biltaji. Areas of Amman have either gained their names from the hills (Jabal) or valleys (Wadi) they lie on, such as Jabal Lweibdeh and Wadi Abdoun. East Amman is predominantly filled with historic sites that frequently host cultural activities, while West Amman is more modern and serves as the economic center of the city.
Jordan (/ˈdʒɔːrdən/; Arabic: الأردن Al-Urdun), officially the Hashemite Kingdom of Jordan (Arabic: المملكة الأردنية الهاشمية Al-Mamlakah Al-Urduniyah Al-Hashimiyah), is an Arab kingdom in Western Asia, on the East Bank of the Jordan River. Jordan is bordered by Saudi Arabia to the east and south, Iraq to the north-east, Syria to the north, and Israel and Palestine to the west. Since the dawn of civilization, the country's location at the crossroads of the Middle East has served as a strategic nexus connecting Asia, Africa and Europe.
Archaeologists found evidence on inhabitance dating as far back as the Paleolithic period. Three kingdoms emerged on the territory of modern Jordan at the very end of the Bronze Age: Ammon, Moab and Edom. The lands were later part of several kingdoms and empires, most notably the Nabatean Kingdom, the Roman Empire and finally the Ottoman Empire from the 16th until the early 20th century. After the Partitioning of the Ottoman Empire after World war I by Britain and France, the Emirate of Transjordan was officially recognized by the Council of the League of Nations in 1922. In 1946, Jordan became an independent sovereign state officially known as The Hashemite Kingdom of Transjordan. The capture of the West Bank by Jordan during the 1948 Arab–Israeli War has showed that the Arab Legion forces known today as the Jordanian Armed Forces were the most effective among the Arab troops involved in the war. The same year, Abdullah I took the title King of Jordan. The name of the state was changed to The Hashemite Kingdom of Jordan on 1 December 1948.
Street food is ready-to-eat food or drink sold by a hawker, or vendor, in a street or other public place, such as at a market or fair. It is often sold from a portable food booth,food cart, or food truck and meant for immediate consumption. Some street foods are regional, but many have spread beyond their region of origin. Most street foods are classed as both finger food and fast food, and are cheaper on average than restaurant meals. According to a 2007 study from the Food and Agriculture Organization, 2.5 billion people eat street food every day.
Today, people may purchase street food for a number of reasons, such as to get flavorful food for a reasonable price in a sociable setting, to experience ethnic cuisines, or for nostalgia.
Small fried fish were a street food in ancient Greece, however, Theophrastus held the custom of street food in low regard. Evidence of a large number of street food vendors were discovered during the excavation of Pompeii. Street food was widely consumed by poor urban residents of ancient Rome whose tenement homes did not have ovens or hearths. Here, chickpea soup with bread and grain paste were common meals. In ancient China, street food generally catered to the poor, however, wealthy residents would send servants to buy street food and bring it back for them to eat in their homes.
Jordanian cuisine is a traditional style of food preparation originating from, or commonly used in Jordan that has developed from centuries of social and political change.
There is wide variety of techniques used in Jordanian cuisine ranging from baking, sautéeing and grilling to stuffing of vegetables (carrots, leaves, eggplants, etc.), meat, and poultry. Also common in Jordanian cuisine is roasting or preparing foods with special sauces.
As one of the largest producers of olives in the world,olive oil is the main cooking oil in Jordan. Herbs, garlic, onion, tomato sauce and lemon are typical flavours found in Jordan. The herbs Za'atar and Sumac grow wild in Jordan and are closely identified with Jordanian cuisine. Yogurt is commonly served alongside food and is a common ingredient itself, in particular, Jameed, a form of dried yogurt is unique to Jordanian cuisine and a main ingredient in Mansaf the national dish of Jordan, and a symbol in Jordanian culture for generosity.

Known in Arabic as Jabal al-Qal'a, (جبل القلعة), the L-shaped hill is one of the seven jabals that originally made up Amman. Evidence of occupation since the pottery Neolithic period has been found. It was inhabited by different peoples and cultures until the time of the Umayyads, after which came a period of decline and for much of the time until 1878 the former city became an abandoned pile of ruins only sporadically used by Bedouin and seasonal farmers. Despite this gap, the Citadel of Amman is considered to be among the world's oldest continuously inhabited places.
The Citadel is considered an important site because it has had a long history of occupation by many great civilizations. Most of the buildings still visible at the site are from the Roman, Byzantine, and Umayyad periods. The major buildings at the site are the Temple of Hercules, a Byzantine church, and the Umayyad Palace.

STORY-LINE: In a survey conducted this year by the Economist Intelligence Unit, Amman was ranked as the most expensive city in the region, and the 29th most expensive in the world. In the capital of what some visitors have termed 'The Hashemite Kingdom of Boredom', buildings stack up against each other like white Lego pieces as taxis race through the streets at alarmingly high speeds, leaving the stone city a blur from the backseat window. Hashem Restaurant is probably one of the most famous and one of the oldest restaurants in downtown Amman. And not only are they located in a great location, but they serve very good food.
